ROTISSERIE BEEF ROAST

35 Minutes (excluding marinating time)
Makes 6 servings
Ingredients:
3 lbs beef roast (holiday
roast, eye of round, rump roast etc.)
Marinade:
2 tbsp honey
2 tbsp soy sauce
1/2 tsp Tabasco sauce
1/4 cup lime juice
1 tsp ground cumin
2 tbsp oyster sauce (optional)
Directions:
1. Pierce beef roast
numerous times with a fork. Combine marinade ingredients in shallow
container or resealable freezer bag, reserving 2 tbsp of the
marinade for basting roast while barbecuing.
2. Marinate roast 12-24 hours
in refrigerator. Discard used marinade.
3. Preheat grill to medium heat.
4. Insert meat thermometer into
center of beef roast.
5. Cook on rotisserie over drip
pan in closed grill over INDIRECT HEAT for about 1 1/2 hours
(rare = internal temperature of 140ºF or medium = internal
temperature of 160ºF).
6. Baste beef roast with the
reserved marinade while barbecuing.

GRILLED BLUE CHEESE TOPPED TENDERLOIN STEAKS
Prep Time: 5

Cook Time: 1 Hour and

35 Minutes (excluding marinating time)
Makes 6 servings
Ingredients:
4 beef tenderloin steaks,
cut 1 inch thick
1 large clove garlic, cut in half
1/2 teaspoon salt
2 teaspoons chopped fresh parsley
Topping:
2 tablespoons cream cheese, softened
4 teaspoons crumbled blue cheese
4 teaspoons plain yogurt
2 teaspoons minced onion
Dash ground white pepper
Directions:
1. Preheat grill to medium
heat.
2. Combine topping ingredients
in small bowl.
3. Rub both sides of beef tenderloin
steaks with cut sides of garlic clove.
4. Place beef tenderloin steaks
on grid
5. Grill, uncovered, 13 to 15
minutes for medium rare to medium doneness, turning occasionally.
6. One minute before steaks are
done, top evenly with topping.
7. Season with salt; sprinkle
with parsley.

GRILLED TEXAS-STYLE CHICKEN WINGS

Marinating Time: 4 to
6 Hours
Cook Time: 30 Minutes
Ready in: 4 hours and
45 Minutes
Makes 4 servings
Ingredients:
2 lbs. chicken wings
- split no tip.
1 teaspoon chili powder
1/2 teaspoon dried oregano
1/2 teaspoon ground cumin
3 tablespoons olive oil
2 cloves garlic, crushed in garlic press
1/4 teaspoon salt
Directions:
1. Preheat grill to medium
heat.
NOTE: If chicken wings are not split not tip, cut tips
off wings and discard; cut wings in half at joint.
2. In a small bowl combine oil,
garlic, chili powder, oregano, cumin and salt until blended to
make seasoning mixture.
3. Grill chicken wings turning occasionally for 15 minutes.
4. After 15 minutes, baste chicken
wings with seasoning mixture for an additional 10 minutes or
until cooked through. Note: Do not baste during the last 5 minutes
of grilling.

GRILLED COUNTRY STYLE MOLASSES PORK SPAREIBS

Ingredients:
4 pounds country style
pork ribs
1/3 cup lemon juice
1 tablespoon flour
1/2 cup molasses
1/2 cup soy sauce
1/2 cup ground mustard
3 tablespoons Worcestershire sauce
4 drops hot pepper sauce
Directions:
1. Place pork spareribs
in a large shallow baking dish. In medium bowl stir lemon juice
into flour until smooth, stir in molasses, soy sauce, mustard,
Worcestershire and hot pepper sauce; pour over ribs, turning
to coat.
2. Preheat grill to medium heat.
3. Grill pork spareribs over
INDIRECT HEAT for about 1 to 1 1/2 hours or until tender.
