Baked Ham With Brown
Sugar Glaze

Cook Time: 2 Hours 15 Minutes
Ready in: 2 Hours 40 Minutes
Makes 10 to 12 servings
Ingredients:
7 pounds whole ham
whole cloves (optional)
1 cup packed brown sugar
1 tablespoon balsamic vinegar
1/2 teaspoon ground mustard
5 maraschino cherries (optional)
5 slices orange (optional)
Directions:
1. Preheat oven to 325 degrees F (165 degrees C).
2. Place ham, fat side up, on
rack in shallow roasting pan. Insert meat thermometer so tip
is in thickest part of ham and does not touch bone or rest in
fat. Cover loosely and bake 1 1/4 to 2 1/4 hours or until thermometer
reads 135 degrees (13 to 17 minutes per pound).
3. About 20 minutes before ham
is done, remove from oven. Pour drippings from pan. Remove any
skin from ham. Cut uniform diamond shapes on fat surface of ham.
Insert clove into each diamond. Stir together brown sugar, vinegar
and mustard; pat or brush on ham. Bake uncovered 20 minutes longer.
4. Cover ham and let stand about
10 minutes or until thermometer reads 140 degrees. Garnish with
orange slices and cherries.

Honey Mustard Glazed
Ham
Prep Time: 20 Minutes
Cook Time: 1 Hour and 15 Minutes
Ready In: 1 Hour and 35 Minutes
Makes 10 servings
Ingredients:
5 lb. boneless ready-to-eat ham
1/4 cup whole cloves
1 teaspoon finely chopped parsley
1 tablespoon dried thyme
1 tablespoons fresh rosemary
1/4 cup dark corn syrup
3/4 cup Dijon mustard
2 cups honey
2/3 cup butter
Directions:
1. Pre-heat oven to 325 degrees F.
2. Score the ham, and stud with
the whole cloves. Place the ham in a foil lined pan.
3. Meanwhile, using a double
boiler, in the top half heat the Dijon mustard, parsley, thyme,
rosemary, corn syrup, honey and butter. Keep the honey-mustard
glaze warm while baking the ham.
4. Brush the glaze over ham,
and bake for 1 hour and 15 minutes in the preheated oven. Baste
ham every 10 to 15 minutes with the honey-mustard glaze. During
the last 4 to 5 minutes of baking, turn on broiler to caramelize
the glaze. Remove from oven, and let sit a few minutes before
serving.

Honey-Orange Baked
Ham
Prep Time: 10 Minutes
Cook Time: 1 Hour 30 Minutes to 2 Hours
Ready in: about 2 Hours and 20 Minutes WITH standing time
Makes about 14 servings
Ingredients:
8 lb. boneless ready-to-eat ham
1 cup fresh orange juice
1 cup honey
1/2 teaspoon ground cinnamon
1 teaspoon finely chopped parsley
1/2 teaspoon dried thyme
1 teaspoon fresh rosemary
dash of cracked black pepper
1/4 teaspoon ground cloves
Directions:
1. Preheat oven to 325 degrees F.
2. In a small bowl, combine and
mix the orange juice, honey, parsley, thyme, rosemary, black
pepper, cinnamon and cloves. Set aside.
3. Place the ham on rack in a
shallow roasting pan. Insert meat thermometer in thickest part
of ham. Bake, uncovered, for 1 1/2 to 2 hours or until meat thermometer
register 135 to 140 degrees F, basting with the honey-orange
glaze during the last 45 minutes of baking.
6. Remove from oven, then cover
and let stand the ham for about 10 minutes.
