GRILLED RUBBED BEEF RIB EYE STEAKS
(Delmonico Steaks)

Ingredients:
4 Rib Eye (Delmonico)
steaks
2 tablespoons crushed black pepper
1 teaspoons oregano
1 teaspoon rosemary
1 teaspoon thyme
1 tablespoon minced garlic
Directions:
1. Preheat grill to medium
heat.
2. In a mixing bowl, mixed together
the black pepper, oregano, rosemary, thyme and garlic.
3. Rub the mixture above onto
both side of steaks.
4. Place steaks on grill grid and grill, uncovered, 6 to 8 minutes
for medium rare to medium doneness, turning occasionally.

RIB EYE STEAKS WITH A SOY AND GINGER MARINADE
(Delmonico Steaks)

Makes 4 servings
Ingredients:
4 (10 ounce) beef rib
eye (Delmonico) steaks
1/2 cup soy sauce
1/4 cup real maple syrup
6 cloves garlic, minced
1 tablespoon grated fresh ginger (ginger root)
1 teaspoon mustard powder
1/2 teaspoon sesame oil
1/4 teaspoon hot pepper sauce (Tabasco sauce)
1/2 cup beer
Directions:
1. In a medium size mixing
bowl, combine soy sauce, maple syrup, chopped garlic, grated
ginger root, sesame oil, Tabasco sauce, and mix well to blend.
Now add beer and stir lightly to mix.
2. Prepare steaks by scoring
any fatty outside areas on steak with a knife, (this prevents
the steaks from curling when barbecuing). Place steaks in a casserole
dish and pour marinade over. Using a fork, punch holes in steaks
so that the marinade penetrates into the steaks. Turn steaks
over and repeat punching holes.
3. Cover with clear wrap or foil
and let marinate in the refrigerator for at least 1 hour or longer.
You can also refrigerate and marinate overnight.
4. Prepare and preheat barbecue
to high heat. Place steaks directly on grill and sear one side
for about 15 seconds. Turn steaks over and cook for about 5 minutes,
then turn over and cook for another 5 minutes for medium-rare,
depending on thickness. Test for doneness by cutting into the
middle of the steak.

GRILLED RIB EYE STEAK WITH MAPLE MUSTARD GLAZE
(Delmonico Steak)

Cook Time: 20 Minutes
Ready In: 30 Minutes
Makes 4 servings
Ingredients:
4 Rib Eye (Delmonico)
steaks, cut 1-inch thick
1 tsp. salt
1/2 tsp. cracked pepper
1/4 cup pure maple syrup
3 tbsp. coarse-grain Dijon mustard
2 tsp. cider vinegar
1/4 tsp. pepper
Directions:
1. Mix salt and pepper
and press into both sides of Rib Eye steaks.
2. Preheat grill to medium heat.
3. Place Rib Eye steaks on grid
over heat. Cook covered 5-7 minutes per side.
NOTE: It's best to turn steaks with tongs to retain juiciness.
4. While Rib Eye steaks are grilling,
combine maple syrup, mustard, vinegar and pepper in a 1-cup glass
measure. Microwave on high for 3-1/2 to 5 minutes until thickened,
stirring occasionally.
5. During last 5 minutes of grilling,
brush glaze over top and sides of Rib Eye steaks.
6. Remove Rib Eye steaks when
an internal temperature has reached 140ºF for medium-rare
or 145ºF for medium doneness.

MEXICAN STYLE BEEF RIB EYE STEAKS
(Delmonico Steaks)

Cook Time: 8 to 10 Minutes
Ready In: 20 to 15 Minutes
Makes 4 servings
Ingredients:
4 Rib Eye (Delmonico)
steaks
2 tablespoons fresh lime juice
8 medium flour tortillas
1/2 cup shredded Monterey Jack or Colby cheese
1 cup prepared refrigerated salsa, at room temperature
Directions:
1. Preheat grill to medium
heat.
2. Place Rib Eye steaks in shallow
glass dish; sprinkle with 1/2 of lime juice. Turn steaks over;
sprinkle with remaining lime juice. Wrap tortillas in heavy-duty
aluminum foil.
3. Place steaks on grid. Grill Rib Eye steaks, uncovered, 6 to
8 minutes for medium rare to medium doneness, turning occasionally.
4. Place tortilla packet on edge
of grid during last 5 minutes to heat, turning once.
5. Top Rib Eye steaks evenly
with cheese. Serve with salsa and tortillas.
