** 3 RECIPES FOR YOU **
Grilled Club Sirloin Steaks With Garlic and Rosemary Rub
Prep Time: 10 Minutes
Cook Time: about 11 to 14 Minutes
Ready in: about 30 Minutes WITH refrigerating time
Makes 4 servings
Ingredients:
4 Boneless Club Sirloin Steaks about 1 inch thick
4 teaspoons minced garlic
4 teaspoons of rosemary
4 tablespoons olive oil
cracked black pepper
salt
Directions:
1. Preheat grill to medium heat.
2. Rub both sides of the Club Sirloin Steaks with olive oil
then season with the salt and pepper to taste.
3. Next rub the garlic and rosemary into both sides of the Club
Sirloin Steaks and place the steaks in a glass dish. Cover and
put in the refrigerator for about 15 minutes.
4. Place the Club Sirloin Steaks the grill grids and grill uncovered
for 11 to 14 minutes for medium rare to medium doneness, turning
occasionally with tongs to retain juiciness.
5. Remove the Club Sirloin Steaks from grill and serve.

Grilled Red Wine Marinated Boneless Pork Chops
Prep Time: 10 Minutes
Cook Time: about 16 Minutes
Ready in: about 26 Minutes WITHOUT marinating time
Makes 4 servings
Ingredients:
4 pork boneless chops cut about 1 1/2 inches thick
2 cups dry red wine
4 bay leaves
2 tablespoons fresh minced rosemary
2 teaspoons sugar
1 1/2 teaspoons thyme
1 1/2 teaspoons ground coriander
1/2 teaspoon nutmeg
1/2 teaspoon ground cloves
salt to taste
pepper to taste
olive oil
Directions:
1. In a resealable plastic bag, make the marinade mixture by
combining the red wine, bay leaves, rosemary, thyme, coriander,
nutmeg, and cloves.
2. Place in the plastic bag each pork and marinate about 8 hours
in the refrigerator, turning occasionally.
3. Pre-heat grill to medium heat.
4. Remove each pork chop from the plastic bag; drain and pat
dry. NOTE: Discard marinade.
5. Season each pork chop with with salt and pepper and lightly
brush with the olive oil.
6. Grill the each pork chop for 6 to 8 minutes on each side.
7. Remove from grill and serve.

Grilled Boneless Chicken Breasts With Apricot-Orange Glaze
Prep Time: 5 Minutes
Cook Time: about 13 to 18 Minutes
Ready In: about 23 Minutes
Makes about 4 servings
Ingredients:
2 lbs. boneless skinless chicken breast
Apricot-Orange Glaze:
1/4 cup apricot preserves
1/4 cup orange marmalade
2 teaspoons fresh rosemary, minced
1 small shallot, finely chopped
2 cloves garlic, finely chopped
3 tablespoons balsamic vinegar
1 teaspoon thyme
Directions:
1. Pre-heat grill to medium heat.
2. In a mixing bowl, combine the apricot preserves, rosemary,
shallot, garlic, and balsamic vinegar until well blended.
3. Grill the chicken breast, turning occasionally and brushing
with the apricot-orange glaze, 15 minutes or until meat thermometer
inserted in center registers 170°F. Note: Do not brush during
the last 5 minutes of grilling.

** WINERY REVIEW **
Veramonte Vineyards . . . .
The vineyard at the Veramonte is the largest contiguous vineyard
in Chile. It stretches over 350 hectares in the prime growing
area of Chile's Casablanca Valley. In 1990, Agustin Huneeus chose
this site for Veramonte recognizing that the microclimates and
soils of this beautiful valley are similar to California's prestigious
Napa Valley and Carneros winegrowing regions. The Veramonte Vineyard
Manager utilizes the most recent advances in viticultural technology
to produce the highest quality fruit possible. He carefully manages
yields by dropping crop, controlling irrigation and experimenting
with different pruning techniques to maximize maturity and ripeness
in the grapes. He limits yields to 5-7 tons per hectare to reap
high quality grapes with intense flavor, definition and concentration.
Veramonte was first introduced in 1996, and has since earned
international critical acclaim for Chardonnay, Merlot, Cabernet
Sauvignon, Sauvignon Blanc and Primus, a rich, spicy proprietary
red, blended from Carmenère, (a fine Bordeaux varietal
now virtually unique to Chile), and Cabernet Sauvignon.
When the Huneeus family pioneered Chile's Casablanca Valley in
1990, there were less than 40 hectares planted to vines. Today
the Veramonte Alto de Casablanca Estate has earned worldwide
acclaim for the quality of its wines.

expressing the ground and environment from which it was born.
Being a vineyard-based winery is the essence of their philosophy.
Veramonte believes a great wine is a reflection of the care and
