** 3 RECIPES FOR YOU **
Grilled Rosemary-Pepper Chicken Breasts
Prep Time: 5 Minutes
Cook Time: 30 Minutes
Ready In: about 35 Minutes
Makes 3 to 4 servings
Ingredients:
2 lbs. boneless and skinless chicken breasts
Rosemary-Pepper Seasoning Rub:
2 tablespoons. rosemary
2 tablespoons cracked black pepper
2 tablespoons minced garlic
1 tablespoon olive oil
1 tsp. salt
Directions:
1. Pre-heat grill to medium heat.
2. In small mixing bowl, combine thoroughly all the Seasoning
Rub ingredients.
3. Rub the seasoning mixture on all sides of the chicken breasts.
4. Place the boneless chicken breasts on the grill grids and
grill, turning occasionally, 15 minutes or until meat thermometer
inserted in center registers 170°F.

Grilled Seasoned Boneless Pork Roast
Prep Time: 10 Minutes
Cook Time: 1 Hour and 15 Minutes
Ready In: about 1 Hour and 35 Minutes WITH Standing time
Makes 4 servings
Ingredients:
4 lb. boneless pork roast
Seasoning Mixture:
Zest of two lemons
5 garlic cloves, peeled
1/3 cup fresh rosemary leaves
1/4 cup fresh thyme
1 teaspoon oregano
1/4 cup coarsely ground black pepper
1 tablespoon salt
Directions:
1. Pre-heat grill to medium heat.
2. Pat pork roast dry.
3. Using a food processor, add the seasoning ingredients and
process until fairly fine.
4. Pat the seasoning mixture over all surfaces of roast and
place on grill grids over INDIRECT heat.
5. Close grill hood and grill for about 1 hour and 15 minutes
or until internal temperature measured with a meat thermometer
reads about 155 degrees F.
6. Remove cool boneless pork roast from grill; place on a
platter and let rest about 10 minutes before slicing to serve.

Grilled Apricot-Honey Pork Tenderloin
Prep Time: 5 Minutes
Cook Time: 15 Minutes
Ready In: about 20 Minutes
Makes 4 servings
Ingredients:
1 boneless pork tenderloin, about 1 lb.
1/3 cup apricot preserves
1/4 cup honey
cracked black pepper (to taste)
salt (to taste)
Directions:
1. Pre-heat grill to medium heat.
2. In small mixing bowl, combine thoroughly the honey and
mustard. Set aside.
3. Season the pork tenderloin with the pepper and salt.
4. Place the pork tenderloin on the grill grids and grill
uncovered for about 15 minutes or until internal temperature
reaches 160 degrees F., brushing with apricot-honey mixture in
the last few minutes.

** PORK GRILLING TIPS **
Pork is a GREAT summertime grilling food that can always satisfy
the most hungry eater to the most "picky" eater. Lean
pork is recognized as a healthy and nutritious choice. Pork is
best when cooked to medium doneness - 160 degrees F. on a meat
thermometer. Correctly cooked pork is juicy and tender, with
a slight blush of pink in the center.
There are two ways to grill pork based on the size of the
cut:
1) Direct heat, where food is placed directly over the heat
source, is ideal for small cuts like kabobs, tenderloin, burgers
and chops.
2) Indirect heat, where food is placed on the grill rack away
from the coals or gas burners, is good for large cuts like loin
roasts, ribs, shoulder and fresh ham.
Pork Cooking Basics:
Direct Heat
1) Arrange hot coals evenly on the fire grate of the grill or
use all gas burners.
2) Place pork directly above the heat source.
3) Follow recipe's suggested cooking times, turning once during
cooking.
Direct Heat Approximate Cooking Times: (may vary depending
on you heat source)
- Chops, Bone-in or Boneless 3/4 inch 8-10 Minutes
- Thick Chop 1 1/2 inches 12-16 Minutes
- Kabobs 1-inch cubes 10-15 Minutes
- Tenderloin 1 - 1 1/2 lbs. 15-25 Minutes
- Ground Pork Patties 1/2 inch 8-10 Minutes
Indirect Heat
1) Bank hot coals on both sides of the fire grate, on one side
of the grill or in a ring around the perimeter. For gas grills,
pre-heat and then turn off any burners directly below where the
food will go.
2) Place pork on the grill so it is not directly over any coals
or gas burners and close grill hood.
2) Follow recipe's suggested cooking times until pork is done.
The heat circulates inside the grill, so turning the pork is
not necessary.
Indirect Heat Approximate Cooking Times: (may vary depending
on you heat source)
- Chops, Bone-in or Boneless 3/4 inch 8-10 Minutes
- Loin Roast, Bone-in or Boneless* 2 pounds 45 Minutes-1 Hour
- Shoulder Roast (Butt)* 3-5 pounds 2 1/2 - 4 hours
- Ribs -- 1 1/2 - 2 hours
*NOTE: For larger cuts of pork, such as roasts, cook to 150°
F; remove from the oven or grill and allow to set for 10 minutes
before slicing. The temperature of the roast will continue to
rise to 160° and the pork juices will redistribute throughout
the roast before slicing.
