** 3 RECIPES FOR YOU **
Honey Glazed Grey Corned Beef
Prep Time: 10 Minutes
Cook Time: 2 Hours and 45 Minutes
Ready In: 2 Hours and 55 Minutes
Makes 6 to 8 servings
Ingredients:
4 pounds grey corned beef brisket
2 cinnamon sticks (each about 3 inches long)
1 large onion, diced
1 tablespoon fresh garlic, minced
1 teaspoon rosemary
1 teaspoon thyme
1/4 cup chopped fresh parsley
1/2 cup cider vinegar
1/2 cup honey
Directions:
1. Place the grey corned beef brisket in an 8-quart Dutch oven
and put in enough water to cover the brisket.
2. Add the cinnamon sticks, onions, garlic, rosemary, thyme,
parsley and vinegar; then bring to a boil over high heat. Reduce
heat to low, cover and simmer 2 hours or until grey corned beef
brisket is fork tender.
3. CAUTION HOT: Transfer the grey corned beef brisket to a roasting
pan; then brush with the honey.
4. Pre-heat the oven to 350°F.
5. Bake the grey corned beef brisket in the oven until top is
browned and glazed (approximately 25-35 minutes). Baste several
times with the pan drippings while baking.
6. When cooked, slice the grey corned beef brisket thin against
the grain.

Traditional Grey Corned Beef And Cabbage VI
Prep Time: 10 Minutes
Cook Time: 2 Hours and 35 Minutes
Ready In: 2 hour and 45 Minutes
Makes 6 to 8 servings
Ingredients:
5 pounds grey corned beef brisket
8 red potatoes, quartered
4 medium carrots, cut into 2 inch pieces
2 medium turnips, peeled and cut into 8 wedges
2 medium onions, sliced
1 large head cabbage, cut into 8 wedges
Directions:
1. Place the grey corned beef brisket in an 8-quart Dutch oven
and put in enough water to cover meat.
2. Bring to a boil. Reduce heat to low, cover and simmer 2 hours
or until grey corned beef brisket is almost tender.
3. Add the red potatoes, carrots, turnips and onions and continue
to simmer for 20 minutes.
4. Add the cabbage, return to boil. Reduce heat, cover and simmer
for 10-15 minutes longer or until vegetables are fork tender.
5. Remove the cooked grey corned beef brisket and slice thin
and diagonally against the grain.
6. Serve with mustard or horseradish.

Traditional Grey Corned Beef And Cabbage VII
Prep Time: 10 minutes
Cook Time: 3 Hours and 45 Minutes
Ready in: 3 Hours and 55 Minutes
Makes 8 to 10 servings
Ingredients:
5 pounds grey corned beef brisket
1 small bay leaf
6 peppercorns
2 turnips, cut in chunks
10 carrots, trimmed, scraped, and left whole
4 small whole onions, peeled and sliced
10 medium potatoes, peeled
1 large head of cabbage, cut in wedges
Directions:
1. Place the grey corned beef brisket in a deep stock pot or
kettle; cover with water.
2. Add the bay leaf and peppercorns. Bring to a boil; skim off
foam.
3. Reduce the heat, cover, and simmer for 3 hours.
4. Add the vegetables; simmer for about 45 minutes longer, or
until vegetables and meat are tender.
5. Slice corned beef across grain and serve.
