** 3 RECIPES FOR YOU **
Crock Pot Beef Pot Roast
Prep Time: 5 Minutes
Cook Time: about 10 Hours
Ready In: about 10 Hours
Makes 4 servings
Ingredients:
3 pound beef chuck shoulder pot roast
2 large onions
3 large bell peppers
1 package beef mushroom DRY soup mix
1 pound baby carrots
1 pound green beans
Directions:
1. Peel and cut the onions into quarters and separate. Set aside.
2. Seed the bell peppers and cut into 8 pieces each. Set aside.
3. In a crock pot, layer half of the onions and peppers in
the bottom then place the pot roast on top of the vegetables.
4. Sprinkle the dry soup mix on the pot roast then place the
remaining onions and peppers on top of that.
5. Add the carrots and green beans on the very top. NOTE:
Do not add any liquid to the crock pot.
6. Cover the crock pot and cook on low for about 10 hours.

Old-Fashion Tenderloin Beef Roast
Prep Time: 5 Minutes
Cook Time: about 55 Minutes
Ready In: about 75 to 80 Minutes WITH resting time
Makes 8 to 12 servings
Ingredients:
5 lb. whole beef tenderloin roast
Seasoning ingredients:
1 teaspoon coarsely ground black pepper
2 teaspoons dry mustard
1 tablespoon dried oregano leaves
1 tablespoon dried thyme
2 teaspoons dried rosemary, crushed
Directions:
1. Pre-heat oven to 425 degrees F.
2. In a small mixing bowl, combine thoroughly the seasoning
ingredients. Set aside.
3. Place the beef tenderloin roast on a rack in shallow roasting
pan; then rub the mixed seasoning ingredients onto surface of
beef tenderloin roast.
4. Place the roast in the roasting pan into the oven and bake
at 425° F for 10 minutes.
5. Then reduce heat to 325 degrees F and bake for an additional
40 to 45 minutes or until meat thermometer reaches 140° F
for rare, 150° F for medium-rare or 160 degrees F for medium.
6. Remove from the oven and cover with aluminum foil and let
roast rest for 15 to 20 minutes before carving.

Hawaiian Chicken
Prep Time: 15 Minutes
Cook Time: about 56 Minutes
Ready In: about 70 Minutes
Makes about 4 servings
Ingredients:
2 boneless, skinless chicken breasts
3 1/2 cups pineapple juice
1 cup uncooked rice
1 cup crushed pineapple
1/2 cup breadcrumbs
1/2 cup finely chopped macadamia nuts
2 tablespoons shredded coconut
1/4 cup honey
1/4 cup butter
vegetable cooking spray
Directions:
1. Pre-heat the oven to 350 degrees F.
2. Cut the chicken breasts half. Set aside.
3. Add the pineapple juice into a large saucepan and bring
then to a boil.
4. Reduce the heat and add rice, stirring; cover and cook
for about 20 minutes. Turn off heat and then add the crushed
pineapple. Set aside.
5. In large mixing bowl, combine together the breadcrumbs,
nuts and coconut. Set aside.
6. Brush both sides of chicken breasts halves with honey then
roll chicken each piece one at a time in breadcrumb mixture making
sure each piece is coated thoroughly. Set aside.
7. In large skillet, melt the butter over medium heat.
8. Add coated chicken breast halves and brown for about 3
minutes on each side. Set aside.
9. Spray a casserole dish with vegetable cooking spray then
add rice mixture and arrange chicken breast halves on top of
the rice.
10. Cover the casserole dish and bake a for about 30 minutes
or until fork can be inserted in chicken with ease.

** COOKING TIP **
Pork is best and safe when cooked to medium doneness reaching
160 degrees F. on a meat thermometer. Correctly cooked pork will
always be juicy and tender, with a slight blush of pink in the
center.
Pork Sautéing/Stir Frying Basics . . . .
This method of cooking pork is usually for small cuts of pork
such as chops, cutlets and strips.
1) Heat a small amount of oil in a large heavy skillet over
a medium-high heat.
2) Place pork in skillet; do not cover.
3) Cook pork uncovered, turning occasionally. For stir-frying,
cook over high heat, stirring constantly.
Pork Panbroiling Basics . . . .
This method of cooking pork is usually for cuts of pork such
chops, tenderloin medallions, ham slices, bacon and ground pork
patties.
1) Preheat heavy skillet over medium-high heat.
2) Place meat in hot skillet (if pork is extremely lean, brush
pan with a little oil to prevent sticking). Do not cover.
3) Cook over medium-high heat, turning occasionally, until evenly
browned on both sides. Remove any fat and drippings as they accumulate.
