"All American" Salisbury Steak

Prep Time: 10 Minutes
Cook Time: 20 Minutes
Ready in: 30 Minutes
Makes 4 servings

Ingredients:
1 lb. lean ground beef
1/3 cup finely chopped onion
1/4 cup saltine cracker crumbs
1 egg white, slightly beaten
2 Tbsp. milk
1 Tbsp. prepared horseradish
1/4 tsp. salt
1/8 tsp. pepper
1 jar (12 ounces) brown beef gravy
4 ounces mushrooms, sliced
2 Tbsp. water

Directions:
1. In medium bowl, combine ground beef, onion, cracker crumbs, egg white, milk, horseradish, salt and pepper. Mix lightly but thoroughly. Shape into 4 oval 1/2 inch thick patties.

2. Heat large nonstick skillet over medium heat until hot. Place beef patties in skillet. Cook 7 to 8 minutes, turning once or until centers are no longer pink and juices run clear. Center of beef patty should register 160ºF on an instant read meat thermometer. Remove from skillet and keep warm.

Mushroom Gravy:
3. In same skillet, combine gravy, mushrooms, and water. Cook over medium heat 3 to 5 minutes or until mushrooms are tender.

4. Serve gravy over Salisbury steak.

Ground Beef And Wild Brown Rice Skillet

Prep Time: 5 Minutes
Cook Time: 15 Minutes
Ready in: 20 Minutes
Makes 4 servings

Ingredients:
1 1/2 lbs. lean ground beef
1 medium red or green bell pepper
1 large clove garlic, crushed
1 Tbsp. chili powder
1/2 tsp. salt
3 cups cooked wild brown rice
1 cup frozen peas, defrosted
3/4 cup prepared salsa
grated cheddar cheese (optional)
tortilla chips (optional)

Directions:
1. Cook 3 cups of rice according to package and let cool.

2. Cut pepper into 1/2 inch pieces

3. In a large nonstick skillet, brown ground beef, bell pepper and garlic over medium heat 8 to 10 minutes or until beef is no longer pink, breaking up into 3/4-inch crumbles. Pour off drippings and add chili powder and salt.

4. Add rice to skillet and mix well. Continue cooking 2 minutes or until rice is hot, stirring occasionally.

5. Stir in peas and salsa and heat through.

6. Serve with grated cheddar cheese and tortilla chips.

Mandarin Orange Boneless Pork Roast

Prep Time: 5 Minutes
Cook Time: about 3 Hours
Ready In: about 3 Hours
Makes 6 to 8 servings

Ingredients:
4 to 5 lb. boneless pork roast
1/2 cup orange marmalade
2 cans (8-oz. each) mandarin oranges, drained

Directions:
1. Place boneless pork roast in shallow pan, coat with marmalade and place in preheated 325 degree F. oven.

2. Roast in oven 3 hours, or until an internal temperature of 160 degrees F (70 degrees C) is reached. Let pork roast rest 5-10 minutes before slicing.

3. Garnish servings with mandarin oranges.

** BEEF QUESTIONS AND ANSWERS **

QUESTION: What is Beef Marbling?

ANSWER*: Marbling is white flecks of fat within the meat muscle. The greater amount of marbling in beef, the higher the grade because marbling makes beef more tender, flavorful, and juicy.

QUESTION: Why is Beef Called a "Red" Meat?

ANSWER*: Oxygen is delivered to muscles by the red cells in the blood. One of the proteins in meat, myoglobin, holds the oxygen in the muscle. The amount of myoglobin in animal muscles determines the color of meat. Beef is called a "red" meat because it contains more myoglobin than chicken or fish. Other "red" meats are veal, lamb, and pork.

QUESTION: Any tips for Safe Beef Defrosting?

ANSWER*: There are three safe ways to defrost beef: in the refrigerator, in cold water, and in the microwave. Never defrost on the counter or in other locations.

Refrigerator:
It's best to plan ahead for slow, safe thawing in the refrigerator. Ground beef, stew meat, and steaks may defrost within a day. Bone-in parts and whole roasts may take 2 days or longer. Once the raw beef defrosts, it will be safe in the refrigerator for 3 to 5 days before cooking. During this time, if you decide not to use the beef, you can safely refreeze it without cooking it first.

Cold Water:
To defrost beef in cold water, do not remove packaging. Be sure the package is airtight or put it into a leakproof bag. Submerge the beef in cold water, changing the water every 30 minutes so that it continues to thaw. Small packages of beef may defrost in an hour or less; a 3- to 4-pound roast may take 2 to 3 hours.

Microwave:
When microwave defrosting beef, plan to cook it immediately after thawing because some areas of the food may become warm and begin to cook during microwaving. Holding partially-cooked food is not recommended because any bacteria present wouldn't have been destroyed.

Foods defrosted in the microwave or by the cold water method should be cooked before refreezing because they may have been held at temperatures above 40 °F.

It is safe to cook frozen beef in the oven, on the stove, or grill without defrosting it first; the cooking time may be about 50% longer. Do not cook frozen beef in a slow cooker.

** WINE REVIEW **

Blackstone 2000 California Merlot was harvested from vineyards located in the state’s finest grape growing regions. Each region is carefully selected to produce superior Merlot. At Blackstone, they believe that each appellation contributes distinct structure and flavors from the area’s soil and climatic conditions.

California’s 2000 vintage began early with bud break in March. The early start was followed by a long growing season and the coldest October in recent history. The extended ripening period provided the grapes with a long hang time, which is ideal for developing flavors without producing harsh tannins. Winemaker Dennis Hill believes 2000 was the perfect vintage for their Blackstone style—supple, fruity and easy to enjoy.

After harvest, the grapes were gently crushed and cold-soaked for three days, enhancing color and forward fruit flavors. Fermentation continued for another week, advancing the wines depth and structural development. French red yeast was used
to promote fermentation and color preservation. The fermented wine was then aged for fourteen months in 35% new and 65% neutral French and American Oak Barrels. Throughout the winemaking process, Winemaker Dennis Hill carefully supervises each vine-yard lot, encouraging natural flavor development before blending and bottling.

The 2000 Blackstone Merlot is deep garnet in color. Delightful aromas reflect ripe plums, fresh raspberries, summer berries and rose tea. The generous aromas are echoed in the palate, which is supple and well structured with great length of flavors. The signature style of Blackstone is an “integrated” Merlot with rich fruit; surrounded by elegant creaminess, supple oak flavors and firm tannins. Blackstone Merlot is friendly, flavorful and balanced, encouraging the marriage between food and wine.
