ORANGE POUND CAKE AND STRAWBERRIES
Prep Time: 20 Minutes
Cook Time: 45 To 50 Minutes
Makes 6 to 8 servings
1 2/3 cups granulated
1 cup butter, softened
2 cups all-purpose flour
1/2 teaspoon salt
1/4 cup orange-flavored liqueur
1/4 cup milk
24 large strawberries, stems removed
1. Grease and flour two
8 X 3-3/4 X 2-1/2 foil loaf pans. In a large bowl with mixer
at low speed, beat sugar and butter until blended. Increase speed
and add eggs one at a time until light and fluffy. Add flour
and salt; beat until well blended, scraping bowl occasionally.
Add liqueur and milk and beat until batter is smooth and well
blended. Pour batter evenly into two pans.
2. Place pans in center of cooking
grate. Cook 45 to 50 minutes or until wooden pick inserted near
the center comes out clean. Cool 10 minutes; remove from pans.
Cool completely before serving; cut each loaf into 8 equal slices.
3. Thread 3 strawberries on 6-
to 8-inch skewers. Dredge in powdered sugar. Lightly coat cooking
grate with oil. Place skewers on center of cooking grate. Grill
4 minutes or until thoroughly heated, turning once halfway through
5. Slice 3 strawberries in half
and serve on each two slices of pound cake.
Note: If using wooden skewers,
soak in water thirty minutes before using so ends won't burn
during grilling time.
