Tips For Roasting Beef From Haverhill Beef ** |
All of our beef roasts are USDA
choice Chairman's Reserve Certified Premium Beef. Cut fresh the
way you want it; then trimmed to perfection. Because that's the

Here are a few beef roasting
tips: |
|
|
Be sure to check your roast with
a meat thermometer. Insert the meat thermometer into the center
of the thickest part, away from bone, fat and gristle. |
|
|
|
|
|
If your roasting pan is too deep,
your roast may not brown properly. |
|
|
|
|
|
Attempting to carve your roast
without allowing it to rest will cause significant loss of juices.
Prior to carving, wait 10 to 15 minutes, keep covered.
a) Always use a sharp knife.
You can use a butcher's steel to ensure sharpness.
b) Place roast on a cutting board to prevent slipping.
c) For best results, carve meat into slices by cutting across
the grain. |

|
|
A pan gravy can be made with
the drippings after removing your roast from the pan.
Pan Gravy For Beef Oven Roasts:
THICKENER: flour.
1. Remove roast from oven. Put
roast on a platter and take rack out of roasting pan. Place roasting
pan on stovetop burner, over medium heat.
2. Add 1 cup water to pan drippings, scraping any brown bits
from bottom of pan.
3. In a jar with a tight fitting lid, mix 2 tablespoons flour
with 1 cup of water. Shake until smooth.
4. Pour slowly into the bubbling drippings until desired thickness
is reached. You may not need all the flour and water mixture.
5. If gravy becomes too thick, add more water; if gravy is too
thin add more flour/water mixture. |

ROASTS:
TENDERLOIN ROAST:
1. Heat oven to 425 degrees F.
Place roast, fat side up, on rack in shallow roasting pan. Insert
oven proof meat thermometer in thickest part of roast. Do not
add water or cover.
2. Roast according to chart below.
Remove when meat thermometer registers 135 degrees F for medium
rare, 150 degrees F for medium. Let the roast stand 15 minutes.
(Temperature will continue to rise 10 degrees F to reach desired
doneness and roast will be easier to carve.)

Hello from Colby Corner Travel
at Haverhill Beef!
On June 1-8, 2008, I have group
space on the Norwegian Dream that will be sailing from Boston
to Bermuda. The cabin prices are exceptional (prices include
all taxes) and there will be a $50.00 onboard credit per cabin
as well as two cocktail parties. The prices below represent 5
of the most popular categories. Colby Corner Travel is sending
a group from Kiwanis at this time. You will be able to have the
same amenities as this group. June usually has better weather
and smoother seas. Best of all, we will be sailing on a newer
and larger ship called the DREAM (approximately 50,000 tons).
Another good reason to sail with
your friends and family is that this cruise would be a wonderful
gift to someone for Christmas, Anniversary, Birthday, Mother's
Day or Father's Day. What better gift then a cruise to BERMUDA.
If you have friends or family that wish to sail with you to Bermuda,

that you save the cost of airfare.
There are a limited number of
cabins,THEREFORE, if you feel that there is a possibility that
you might be available to cruise with us on the JUNE sailing,

LATER and make the $250 pp deposit (There will be a FULL REFUND
if you decide not to cruise as long as I am notified BEFORE January

SAVORY
BEEF CASSEROLE
Prep Time: 10 Minutes
Cook Time: 3 Hours
Ready In: about 3 Hour
and 10 Minutes
Makes 6 servings
Ingredients:
2 lbs. stew beef
1/2 cup red wine
Vegetable oil spray
1 1/4 cup beef broth
3 tablespoons tomato paste
1/4 teaspoon garlic powder
1/4 teaspoon rosemary
1/4 cup flour
1 cup of sliced mushrooms
1 cup chopped onion
Directions:
1. Preheat broiler.
2. Lightly spray a broiler pan
with vegetable oil spray.
3. Place he stew beef on the
broiler pan and place in broiler; brown stew meat on all sides,
turning frequently. Remove from broiler and set aside.
4. Set oven 300 degrees F.
5. In 1 1/2-quart oven-proof
casserole dish, combine wine, broth, tomato paste, spices and
flour. Stir to mix well.
6. Place the stew meat in casserole
dish and add mushrooms and onion.
7. Cover and bake about 3 hours,
or until meat is tender.

CHICKEN
BREAST WITH CHAMPAGNE AND MUSHROOM
Prep Time: 5 Minutes
Cook Time: 25 Minutes
Ready in: 30 Minutes
Makes 3 to 4 Servings
Ingredients:
1 Tablespoon butter
1 Tablespoon olive oil
2 boneless chicken breasts
2 cloves garlic, mashed
1 small onion, julienned
1 cup fresh mushrooms, sliced
1/4 cup Champagne - Brut
1/2 cup chicken broth
1 teaspoon dry mustard
1 teaspoon fresh thyme, chopped 1 teaspoon fresh Italian parsley,
chopped
Salt and pepper to taste
Directions:
1. In a large sauté
pan, heat butter and olive oil over medium high heat. Brown chicken
breasts on both sides, about 5 minutes per side. Remove and keep
warm.
2. In the same pan, sauté
garlic and onions until brown. Add the mushrooms and sauté
for 5 minutes or until brown.
3. Add remaining ingredients
and simmer for 10 minutes or until liquid reduces by half. Pour
over chicken breasts. Serve with lightly buttered fettuccine
noodles.

CRACKED
BLACK PEPPER PRIME RIB ROAST
Prep Time: 5 Minutes
Cook Time: 2 1/2 to 3
Hours
Ready In: 3 Hours
Makes 6 to 8 servings
Ingredients:
1 boneless rib roast
(6 to 8 pounds)
1 tsp. cracked black pepper
6 large cloves garlic, crushed
1 1/2 tsp. dried thyme leaves
Directions:
1. Preheat oven to 350°F.
2. Combine garlic, thyme leaves
and black pepper. Press evenly into surface of prime rib beef
roast.
3. Place prime rib beef roast,
fat side up, on rack in shallow roasting pan. Do not add water
or cover roast.
4. Roast approximately 2 1/4
to 2 1/2 hours. Use instant read thermometer and remove when
internal temperature reaches 135°F for medium rare or 150°F
for medium.
5. Tent loosely with foil and
let stand 15 minutes prior to carving.

CORDON BLEU
Prep Time: 15 Minutes
Cook Time: 10 to 12 Minutes
Ready In: about 25 Minutes
Makes 4 servings
Ingredients:
4 boneless center cut
pork chops
2 ounces proscuitto
2 ounces Swiss cheese, cut into 2x1/4" rectangles
1/2 cup fine dry bread crumbs
2 teaspoons butter
1 teaspoon dried thyme leaves
1/2 cup flour
1 egg, beaten with 1 teaspoon water
Directions:
1. Slice each boneless
center cut chop lengthwise almost in half to butterfly.
2. Between two pieces of plastic
wrap, pound each butterflied pork chop to 1/8 inch thickness.
3. On half of each pork chop,
place 1/2 ounce proscuitto and 1 piece of cheese. Sprinkle with
1/4 teaspoon thyme. Roll pork chops to enclose filling. Coat
with flour, dip in egg wash and roll in bread crumbs.
4. In large frying pan, melt
butter.
5. Add pork chops to frying pan
and cook 10 to 12 minutes, turning frequently to brown all sides.
6. Garnish with lemon wedges
and parsley sprigs.
