BEEF
BURGUNDY FILET
Prep Time: 40 Minutes
Cook Time: 20 Minutes
Ready In: 6 Hours and
40 Minutes
Makes 8 servings
Ingredients:
4 cups Burgundy wine
1 1/2 cups canola oil
1 1/2 cups soy sauce
2 cups oyster sauce
1 tablespoon garlic, minced
1 1/2 teaspoons dried oregano
8 (6 ounce) filets filet mignon
1/2 cup butter, softened
1 teaspoon Burgundy wine
1 tablespoon minced shallots
1 tablespoon minced green onions
1 teaspoon ground white pepper
Directions:
1. In a medium saucepan,
mix together Burgundy wine, canola oil, soy sauce, oyster sauce,
garlic and oregano. Bring to a boil, and then remove from heat.
Place in the refrigerator 1 hour, or until chilled.
2. Place filet mignon filets in a 9x13 inch baking dish, and
pour the chilled marinade over them. Cover tightly with foil,
and refrigerate for a minimum of 5 hours.
3. In a medium bowl, cream butter and 1 teaspoon of Burgundy
wine with a hand mixer. Mix in shallots, green onions and white
pepper by hand; cover tightly, and refrigerate.
4. Preheat an outdoor grill for high heat, and lightly oil grate.
Preheat oven to 200 degrees F (95 degrees C).
5. Grill marinated filets to desired doneness, turning once.
Place filets in a clean 9x13 inch baking dish. Dollop with the
Burgundy butter mixture, and place in the preheated oven for
a minute, or until butter is melted.

PASO PORK TENDERLOIN
Prep Time: 5 Minutes
Cook Time: about 15 to
20 Minutes
Ready in: about 2 Hours
and 25 Minutes WITH refrigeration time
Makes 4 servings
Ingredients:
1 1/2 lbs. pork tenderloins
5 teaspoons chili powder
1 teaspoon Tabasco sauce
1 teaspoon oregano
1 teaspoon rosemary
1 teaspoon thyme
3/4 teaspoon ground cumin
2 cloves garlic, crushed
1 tablespoon olive
Directions:
1. In large mixing bowl,
mix together the chili powder, Tabasco sauce, oregano, rosemary,
thyme, cumin, garlic and olive oil.
2. Rub the mixture over all surfaces of the pork tenderloin.
Cover the mixing bowl and refrigerate for about 2 hours.
3. Pre-heat grill to medium heat.
4. Remove the pork tenderloin and place on the preheated grill
grid and grill, turning occasionally, for 15 to 20 minutes, until
thermometer inserted reads 155 to 160 degrees F. Pork is done
when there is still a hint of pink in the center.
5. Remove from grill and slice to serve.

GRILLED
GARLIC-LEMON RUBBED DELMONICO
(RIB EYE) STEAKS
Prep Time: 5 Minutes
Cook Time: 11 to 14 Minutes
Ready In: 16 to 19 Minutes
Makes 4 servings
Ingredients:
4 Delmonico (rib eye)
Steaks cut about 1 inch thick
2 tsp. minced cloves garlic
pulp of 2 fresh limes
1/4 cup of fresh lime juice
2 tsp. rosemary
2 tsp. fresh chopped thyme
1 tsp. crack black pepper
1/2 tsp. olive oil
Directions:
1. Pre-heat grill to
medium heat.
2. In a mixing bowl, combine thoroughly the thyme, garlic, cracked
black pepper, lime juice, lime pulp and olive oil until well
blended.
3. Rub the seasoning mixture onto both sides of each steak, pressing
evenly. (Discard rub mixture after rubbing onto the raw steaks.)
4. Place each steaks on the heated grill grid and grill, covered,
11 to 14 minutes for medium rare to medium doneness, turning
once.

LIME
& GARLIC
CHICKEN SKILLET
Prep Time: 5 Minutes
Cook Time: 12 Minutes
Ready In: about 1 Hour
and 17 Minutes WITH marinating time
Makes about 4 servings
Ingredients:
1 1/2 pounds boneless
and skinless chicken breasts
1/2 cup soy sauce
1/4 cup fresh lime juice
1 tablespoon Worcestershire sauce
1 teaspoon finely chopped parsley
2 cloves garlic, minced
1/2 teaspoon dry mustard
1/2 teaspoon cracked black pepper
olive oil
Directions:
1. SAUCE: In a mixing
bowl, mix together thoroughly the soy sauce, lime juice, parsley,
Worcestershire sauce, minced garlic and mustard. Set aside.
2. Put the chicken breast halves
in a medium size bowl and pour the sauce above over them.
3. Cover the bowl and marinate
in refrigerator for about 1 hour.
4. Remove chicken from marinade
and sprinkle with the cracked black pepper. Set aside. NOTE:
Discard unused marinade.
5. In a non-stick skillet, heat
the olive oil over medium temperature.
6. Add the marinated chicken
breast halves and cook about 6 minutes on each side or until
meat thermometer inserted in center registers 170°F.
