** 3 RECIPES FOR YOU **

Grilled Cajun-Style Boneless Chicken Breasts

Prep Time: 5 Minutes
Cook Time: 15 Minutes
Ready In: about 20 minutes
Makes 3 to 4 servings

Ingredients:
2 Whole Boneless Skinless Chicken Breasts
3 tablespoons olive oil
2 cloves garlic, finely chopped
1 tablespoon chili powder
1 teaspoon dried thyme
1/2 teaspoon rosemary
1 teaspoon onion powder
1/4 teaspoon salt

Directions:
1) Preheat grill to medium heat.

2) In small bowl, combine the olive oil, garlic, chili powder, thyme, rosemary, onion powder and salt until blended. Set aside.

3) Place the chicken on the preheated grill grids and grill, turning occasionally and brushing with seasoning mixture, 15 minutes or until meat thermometer inserted in center registers 170°F. Do not brush with seasoning during the last 5 minutes of grilling.

Grilled Apricot-Glazed Boneless Chicken Breasts

Prep Time: 10 Minutes
Cook Time: 15 Minutes
Ready In: about 25 minutes
Makes 3 to 4 servings

Ingredients:
2 Whole Boneless Skinless Chicken Breasts
5 ripe apricot finely chopped
1/2 cup water
Medium shallot, minced
1 tablespoon sugar
1 tablespoon white wine Worcestershire sauce
1 1/2 tablespoons lemon juice
1 teaspoon minced jalapeno

Directions:
1) For Apricot Glaze, put all ingredients except chicken breast in a large, nonstick saucepan. Simmer over medium heat until mixture is slightly thickened, stirring frequently. When thickened, pour into food processor and blend until smooth.

2) Preheat grill to medium heat.

3) Place the chicken on the preheated grill grids and grill, turning occasionally and brushing with Apricot Glaze, 15 minutes or until meat thermometer inserted in center registers 170°F. Do not brush with Apricot Glaze during the last 5 minutes of grilling.

Grilled Rosemary-Orange Boneless Chicken Breasts

Prep Time: 5 Minutes
Cook Time: 15 Minutes
Ready In: about 20 minutes
Makes 3 to 4 servings

Ingredients:
2 Whole Boneless Skinless Chicken Breasts
1/2 cup orange marmalade
2 tablespoons red wine vinegar
2 teaspoons rosemary
1/2 teaspoon ground red pepper

Directions:
1) Preheat grill to medium heat.

2. In small bowl, combine marmalade, vinegar, rosemary and red pepper until well blended. Set aside.

3) Place the chicken on the preheated grill grids and grill, turning occasionally and brushing with Rosemary-Orange Glaze, 15 minutes or until meat thermometer inserted in center registers 170°F. Do not brush with Rosemary-Orange Glaze during the last 5 minutes of grilling.

** CHICKEN GRILLING TIPS FROM HAVERHILL BEEF **

When grilling chicken, most importantly, don't forget about food safety. Ensure a safe and satisfying chicken meal by using a meat thermometer to ensure doneness. Place the thermometer in the thickest part of the cut you're grilling.

TEMPERATURE GUIDE:

180° F bone-in dark meat cooked through
170° F bone-in white meat cooked through
165° F ground poultry and boneless items cooked through

BONELESS CHICKEN BREASTS:

- DIRECT HEAT method: grill for about 6-8 minutes per side.

- INDIRECT HEAT method: grill for about 10-12 minutes per side.

BONELESS CHICKEN THIGHS:

- DIRECT HEAT method: grill for about 10-12 minutes per side.

- INDIRECT HEAT method: grill for about 15-18 minutes per side.

BONE IN CHICKEN BREASTS:

- DIRECT HEAT method: grill for about 10-15 minutes per side.

- INDIRECT HEAT method: grill for about 20-30 minutes.

BONE IN CHICKEN DRUMSTICKS:

- DIRECT HEAT method: grill for about 8-12 minutes per side.

- INDIRECT HEAT method: grill for about 20-30 minutes.

BONE IN CHICKEN LEGS:

- DIRECT HEAT method: grill for about 10-15 minutes per side.

- INDIRECT HEAT method: grill for about 25-35 minutes.

BONE IN CHICKEN THIGHS:

- DIRECT HEAT method: grill for about 10-15 minutes per side.

- INDIRECT HEAT method: grill for about 25-35 minutes.

BONE IN CHICKEN WINGS:

- DIRECT HEAT method: grill for about 8-12 minutes per side.

- INDIRECT HEAT method: grill for about 20-30 minutes.

DIRECT HEAT METHOD VS. INDIRECT HEAT METHOD:

1) Direct Heat Method grilling means placing the chicken directly over the heat source. Direct cooking is a quick and easy for smaller cuts such as drumsticks, thighs and burgers. These items should be grilled over medium-hot coals or a gas grill setting of medium-high.

2) Indirect Heat Method grilling means placing the chicken on a cooler part of the grill, covering it, and using the surrounding heat to cook it. Indirect cooking works well for larger cuts such as a whole breasts, split or whole birds.
