** 3 RECIPES FOR YOU FROM HAVERHILL BEEF **
Grilled Club Sirloin Steaks With Mustard-Honey Glaze
Prep Time: 10 Minutes
Cook Time: 20 Minutes
Ready in: 30 Minutes
Makes 4 servings
Ingredients:
4 beef club sirloin steaks cut about 1 inch thick
1 tsp. salt
1/2 tsp. cracked black pepper
Glaze:
1/4 cup maple syrup
3 Tbsp. coarse-grain Dijon mustard
2 tsp. cider vinegar
1/4 tsp. pepper
Directions:
1. In a small bowl, mix salt and cracked black pepper; then press
mixture into both sides of club sirloin steaks.
2. Preheat grill to medium heat.
3. Place club sirloin steaks on grill grid. Cook covered 5
to 7 minutes per side. Turn with tongs to retain juiciness.
4. While club sirloin steaks are grilling, combine maple syrup,
mustard, vinegar and pepper in a 1 cup glass measure.
5. Microwave on high for 3 1/2 to 5 minutes until thickened,
stirring occasionally.
6. During last 5 minutes of grilling the club sirloin steaks,
brush glaze over top and sides of steak.
7. Remove club sirloin steaks from grill when an internal
temperature has reached 140ºF for medium-rare or 145ºF
for medium doneness..

Grilled Southwest-Style Center Cut Ham Steaks
Prep Time: 10 Minutes
Cook Time: 6 Minutes
Ready in: 16 Minutes
Makes 4 servings
Ingredients:
2 center cut ham steaks about 3/4 inch thick
1 tablespoon butter
Rub Mixture:
2 tablespoons chili powder
2 teaspoons kosher salt
1 teaspoon dried oregano
1 teaspoon cayenne pepper
1 teaspoon brown sugar
1/2 teaspoon freshly ground pepper
Directions:
1. In small pan, melt butter.
2. In small bowl, rub mixture ingredients.
3. Brush melted butter on both sides of ham steaks.
4. Sprinkle rub on both sides of the steaks.
5. Preheat grill to medium heat.
6. Place ham steaks on grill grid and grill using the Direct
Medium heat for 6 minutes, turning once halfway through grilling
time.

Skillet Boneless Chicken Breasts
Prep Time: 10 Minutes
Cook Time: 22 to 26 Minutes
Ready in: 36 Minutes
Makes 3 to 4 servings
Ingredients:
1 1/2 lbs. boneless skinless chicken breasts
Salt and cracked black pepper to taste
2 tablespoons butter or margarine
1 lemon, thinly sliced
1 can (15 1/4 ounces) sliced cling peaches in heavy or light
syrup, undrained
2 tablespoons chopped crystallized ginger
Directions:
1. Season chicken breasts with salt and cracked black pepper.
2. In large, nonstick skillet over medium heat, heat the butter
or margarine.
3. Add chicken breasts and sauté 6 to 8 minutes per
side or until golden brown.
4. Top chicken breasts with lemon slices. Add peaches (with
their liquid) and ginger.
5. Cover and simmer over medium heat 10 minutes or until chicken
is glazed with juices and cooked through, basting the chicken
breasts frequently with juices during cooking.

** GRILLING TIP **
QUESTION: Do you have any grilling tips to prepare ribs on
the grill?
ANSWER: Whether you'll be preparing beef or pork ribs, we
suggest you follow the few steps below to make a "great
rib" that everyone will enjoy:
1. Always keep in mind that "low and slow" is definitely
the way to grill ribs. The best method to prevent burning and
to maximize flavor of the grilled ribs, is to grill the ribs
using the Indirect Heat method.
~~ FOR GAS GRILLS: Use the lowest heat setting possible.
~~ FOR CHARCOAL GRILLS (kettle style or regular: Use somewhat
less charcoal than specified for your size grill.
2. To have the ribs achieve their maximum tenderness, before
you even season the meat, prepare the ribs as follows:
~~ Remove the thin, paper-like membrane on the back of the
ribs.
~~ Pull back a corner with the tip of a knife and then slowly
peel the membrane off with your fingers.
3. Before you grill, try a dry rub of salt, pepper, paprika,
and a pinch of cayenne or other spices. Rub it on both sides
of the ribs, put them in a resealable plastic bag, and let them
rest in the refrigerator for a couple hours. Grill as described
above in #1 or by following your rib recipe.
4. BIGGEST MISTAKE MADE: Pre-cooking the ribs. . . . . Do
not pre-cook ribs! Pre-cooking ribs by par-boiling or baking
robs the ribs of flavor.
5. Because most barbecue sauces and glazes contain sugar -
which will burns easily, the ribs should be brushed with the
barbeque sauce or glaze only during the last 10 to 20 minutes
of cooking time.
NOTE: NEVER, NEVER LET YOUR CHILDREN COOK OR GRILL UNSUPERVISED!
