** 3 RECIPES FOR YOU **
Broiled Boneless Chicken Breasts With Rosemary-Garlic Sauce
Prep Time: 5 Minutes
Cook Time: 35 Minutes
Ready In: 40 Minutes
Makes 4 to 5 servings
Ingredients
2-1/4 lbs. boneless skinless chicken breasts
8 large cloves garlic, with skin on
1/4 cup white wine vinegar
3 tablespoons olive oil
1 tablespoon chopped fresh rosemary
1/2 teaspoon salt
1/2 teaspoon sugar
1/4 teaspoon ground pepper
Directions:
1. Preheat the oven broiler.
2. In small non-stick skillet, over medium heat, cook garlic
cloves whole in their skin, turning frequently, 15 minutes or
until mostly browned on all sides; remove and let cool.
3. Remove the cooked garlic cloves from skin by cutting open
and squeezing out roasted garlic. Using fork, mash roasted garlic
until smooth.
4. In mixing small bowl, whisk together roasted garlic, vinegar,
oil, rosemary, salt, sugar and pepper until blended. Set aside.
5. Place the chicken breast on a broiling pan and place in
the oven broiler. Broil the chicken breast 6 to 9 inches from
the heat source, turning occasionally and basting with garlic
sauce, for 20 minutes or until meat thermometer inserted in center
registers 170°F. Note: Do not baste during the last 5 minutes
of broiling.

Broiled Lemon Thyme Boneless Chicken Breasts
Prep Time: 5 Minutes
Cook Time: 20 Minutes
Ready In: 55 Minutes With Marinating Time
Makes 4 to 5 servings
Ingredients:
2-1/4 lbs. boneless skinless chicken breasts
2 tablespoons olive oil
2 tablespoons lemon juice
1 tablespoon grated fresh lemon peel
1 tablespoon minced shallot or scallion
1 tablespoon minced fresh thyme or 1 teaspoon dried thyme leaves
Salt and ground pepper to taste
Directions:
1. Preheat the oven broiler.
2. In wide, shallow bowl, combine oil, lemon juice, lemon
peel, shallot and seasonings. Add chicken and turn to coat well.
Cover and marinate in refrigerator at least 30 minutes.
3. Drain marinade into a small saucepan and bring to a boil
over high heat. Set aside.
4. Place the chicken breast on a broiling pan and place in
the oven broiler. Broil the chicken breasts 6 to 8 inches from
heat source for 15 to 20 minutes or until cooked through and
a meat thermometer inserted in center registers 170°F., turning
2 to 3 times during cooking and brushing occasionally with reserved
marinade. Note: Do not baste during the last 5 minutes of broiling.

Honey Glazed Broiled Boneless Chicken Breasts
Prep Time: 5 Minutes
Cook Time: about 20 Minutes
Ready in: 25 Minutes
Makes 3 servings
Ingredients:
1 1/2 lbs boneless skinless chicken breasts
1/2 cup of honey
1/2 teaspoon ground cinnamon
1/2 teaspoon rosemary
1/2 teaspoon ground red pepper
Directions:
1. Pre-heat oven broiler.
2. In small bowl, combine honey, cinnamon, rosemary and red
pepper until blended.
3. Place the chicken breasts on a broiler pan and broil, turning
occasionally and basting with the honey glaze, 20 minutes or
until meat thermometer inserted in center registers 170°F.
Note: Do not baste during the last 5 minutes of broiling.
