** 3 RECIPES FOR YOU **
Old Fashion Vegetables and Pot Roast
Prep Time: 15 Minutes
Cook Time: about 1 Hour and 45 Minutes
Ready In: about 2 Hours
Makes 6 servings
Ingredients:
3 lb. shoulder pot roast
2 tsp. olive oil
1-1/2 cups water, divided
1 can of condensed vegetable soup
Pepper to taste
6 carrots
2 cups potato pieces
1 large tomato, chopped
1 onion, sliced
2 Tbsp. flour
Directions:
1. Heat the olive oil in a nonstick Dutch oven; then brown the
pot roast meat on all sides.
2. Pour 1 cup of the water and and the vegetable soup over the
pot roast; season with the pepper; then bring to boil; cover.
Reduce heat to low; simmer 1 hour.
3. After the 1 hour of simmering, add the carrots, potatoes,
tomatoes and onion to Dutch oven; cover. Simmer for an additional
45 minutes or until meat is cooked through and vegetables are
tender. Place meat and vegetables on platter, reserving liquid
in pan. Keep meat warm.
To make gravy:
4. Mix the remaining 1/2 cup water and flour until well blended
in a large mixing cup. Gradually add the mixture to hot liquid
in pan; cook until mixture boils and thickens, stirring constantly.
Simmer 3 minutes, stirring constantly.
5. To serve, slice the cooked pot roast across grain into thin
slices. Serve with vegetables and gravy.

Hearty Beef Stew
Prep Time: 15 Minutes
Cook Time: about 34 Minutes
Ready In: about 1 Hour
Makes 5 to 6 servings
Ingredients:
2 lbs, extra lean stew beef
1 Tbsp. flour
3 Tbsp. butter
2 cups onion wedges, 1/4 inch thick
1 cups coarsely chopped red peppers
2 cups potato pieces
2 cups of baby carrots
1 cup your favorite steak sauce
1/2 cup beef broth
1/4 cup dry red wine
Directions:
1. Toss the extra lean stew beef with the flour until evenly
coated. Set aside.
2. In a large sized saucepan, melt 1 Tbsp. of the butter in large
saucepan on medium-high heat.
3. Add the onions and peppers; cook and stir until crisp-tender.
Remove onion-pepper mixture from pan; set aside.
4. Add the remaining 2 Tbsp. of butter to pan; the added the
flour coated stew beef in batches; cook and stir until evenly
browned. Set aside brown stew beef.
5. Place all the browned stew beef into the pan with the onion-pepper
mixture; stir. Add the potato pieces and baby carrots. Add the
steak sauce, beef broth and wine; mix well. Bring to boil; reduce
heat to low. Simmer 45 minutes or until stew beef is tender.

Marinated London Broil Steak
Prep Time: 5 Minutes
Cook Time: about 7 to 8 Minutes
Ready In: about 45 Minutes WITH marinating time
Makes 4 servings
Ingredients:
2 lbs. London Broil Steak
1 package of dry Italian salad dressing mix
2 Tbsp. dry white wine
2 Tbsp. olive oil
Directions:
1. In a mixing bowl, mix the dry salad dressing mix, white wine
and olive oil. Set aside.
2. With a knife, score the London Broil steak on both sides,
being careful not to cut more than 1/8 inch into each side of
steak. Place the London Broil steak in rectangular glass dish.
Set aside.
3. Evenly brush both sides of the London Broil steak with
the salad dressing mixture; cover glass dish; and refrigerate
for 30 minutes to marinate. Remove steak from marinade; discard
marinade.
4. Preheat the oven broiler.
5. Place the marinated London Broil on a broiling pan. Broil
for 3 to 4 minutes on each side or until cooked through (160°F).
6. To serve, with a clean knife slanted, carve the steak across
grain into thin slices.

5, 2004, at the AMVETS, Post 147, 575 Primrose Street, Haverhill,
MA 01830 from 7:00 pm to 12:00 midnight. All proceeds to purchase
a Braille Reader for 9 year old Nicholas.

Nicholas is a 9 year old who as an infant was diagnosed with
Lebers Congenital Amurosis, a degenerative eye disease that has
caused him to lose most of his sight. Nicholas is a resilient
young boy who has shown a great deal of courage during this hard
transition and has faced these challenges with triumph. Last
year Nicholas was one of the finalists selected to compete in
the National Braille Challenge in California and he did very
well. Unfortunately he is finding it hard to continue this progress
due to the lack of resources and technology available to him.
