** 3 RECIPES FOR YOU **
Boneless Pork Chops With Broccoli
Prep Time: 10 Minutes
Cook Time: about 8 Minutes
Ready In: about 18 Minutes
Makes 4 servings
Ingredients:
4 boneless center cut pork chops, about 1 inch thick
1 teaspoon olive oil
2 tablespoons butter
2 tablespoons flour
1 1/2 cups milk
1/2 cup grated Parmesan cheese, divided
1/2 teaspoon ground nutmeg
1/2 teaspoon rosemary
1/4 teaspoon thyme
1 tablespoon dry sherry
1/2 teaspoon Worcestershire sauce
1 large bunch broccoli
Directions:
1. In a heavy saucepan melt butter, add the flour and stir to
blend. Add milk, cook and stir until sauce is thickened and smooth.
Stir in 6 tablespoons Parmesan cheese, the nutmeg, rosemary,
thyme, sherry, and Worcestershire sauce. Set aside and keep warm.
2. Chop the broccoli and cook in salted water until tender; drain.
Set aside and keep warm.
3. Heat the olive oil in nonstick pan over medium-high heat.
Brown chops on one side, about 4 minutes; turn to brown other
side for about 4 minutes.
4. Arrange cooked chopped broccoli on serving platter. Pour 1
cup sauce over, top with chops and garnish with additional sauce.
5. Sprinkle with reserved Parmesan cheese and serve immediately.

Boneless Cajun-Style Pork Chops
Prep Time: 5 Minutes
Cook Time: about 8 Minutes
Ready In: about 13 Minutes
Makes 2 to 4 servings
Ingredients:
4 boneless pork chops, about 1/2-inch thick
1 tablespoon paprika
1 teaspoon seasoned salt
1 teaspoon rubbed sage
1/2 teaspoon cayenne pepper
1/2 teaspoon black pepper
1/4 teaspoon thyme
1/2 teaspoon garlic powder
2 teaspoons butter
Directions:
1. In a mixing bowl, combine the paprika, seasoned salt, sage,
cayenne pepper, black pepper, thyme and garlic powder; the coat
the chops with the mixture on both sides.
2. In a nonstick skillet, heat butter over high heat just until
it starts to brown; the putt chops in pan, reduce heat to medium.
Fry on both sides until dark brown, a total of about 8 minutes.
3. Serve immediately.

Apple Skillet Boneless Pork Chops
Prep Time: 5 Minutes
Cook Time: about 30 Minutes
Ready In: about 35 Minutes
Makes 6 servings
Ingredients:
6 boneless center cut pork chops, about 3/4-inch thick
2 teaspoons olive oil
2 cups apple cider
1/2 teaspoon rosemary
1/3 cup coarse-grain mustard
3 medium apples, cored, sliced 1/2-inch thick
1/2 cup raisins
1/2 cup sliced green onions
2 tablespoons cornstarch
1/4 cup water
salt to taste
pepper to taste
Directions:
1. Heat the olive oil in a large skillet over medium-high heat.
2. Brown the pork chops and season with salt and pepper.
3. Combine apple cider, rosemary and mustard; pour over pork
chops.
4. Cover and simmer for about 20 minutes.
5. Add the apples slices, raisins and green onions.
6. Cover and cook for about 8 minutes longer.
7. Remove the pork chops and apples from the skillet place on
a serving platter; set aside and keep warm.
8. In a mixing cup, combine and stir thoroughly the cornstarch
and water.
9. To the skillet, add the mixed cornstarch and water to the
pan juices; cook and stir until thickened.
10. Serve the sauce over the cooked pork chops and apples; serve
immediately.

5, 2004, at the AMVETS, Post 147, 575 Primrose Street, Haverhill,
MA 01830 from 7:00 pm to 12:00 midnight. All proceeds to purchase
a Braille Reader for 9 year old Nicholas.
Suggested Donation: $25.00 per person

Nicholas is a 9 year old who as an infant was diagnosed with
Lebers Congenital Amurosis, a degenerative eye disease that has
caused him to lose most of his sight. Nicholas is a resilient
young boy who has shown a great deal of courage during this hard
transition and has faced these challenges with triumph. Last
year Nicholas was one of the finalists selected to compete in
the National Braille Challenge in California and he did very
well. Unfortunately he is finding it hard to continue this progress
due to the lack of resources and technology available to him.
