** 3 CLUB SIRLOIN STEAK RECIPES FOR YOU FROM HAVERHILL BEEF **
Grilled Rosemary-Pepper Rubbed Club Sirloin Steaks
Prep Time: 10 Minutes
Cook Time: 15 minutes
Ready in: 25 Minutes
Makes 4 servings
Ingredients:
4 Club Sirloin Steaks, cut about 1 inch thick
Rosemary-Pepper Rub:
1 tsp. finely chopped fresh rosemary
2 cloves garlic, minced
1 tsp. freshly grated lemon peel
1 tsp. olive oil
1/2 tsp. coarse grind black pepper
1/2 tsp. salt
Directions:
1. Preheat the grill to medium heat.
2. In a mixing bowl, combine the Rosemary-Pepper Rub mixture
ingredients.
3. With the mixture above, rub each Club Sirloin Steak on both
sides
4. Place each Club Sirloin Steak on grill grid and grill uncovered
for approximately 11 to 14 minutes for medium-rare (150°F).

1-1/2 tsp. chili powder
1 tsp. garlic powder
1/2 tsp. dried oregano leaves, crushed
1/4 tsp. ground cumin
Directions:
1. Preheat the grill to medium heat.
2. In a mixing bowl, combine the Southwestern Rub mixture ingredients.
3. With the mixture above, rub each Club Sirloin Steak on both
sides
4. Place each Club Sirloin Steak on grill grid and grill uncovered
for approximately 11 to 14 minutes for medium-rare (150°F).

Grilled Peppery Dijon Parsley Rubbed Club Sirloin Steaks
Prep Time: 10 Minutes

Ingredients:
4 Club Sirloin Steaks, cut about 1 inch thick
Peppery Dijon Parsley Rub:
1/4 cup chopped fresh parsley
2 Tbsp. Dijon-style mustard
1 Tbsp. cracked mixed peppercorns or cracked black pepper
2 large cloves garlic, minced
1 tsp. salt
Directions:
1. Preheat the grill to medium heat.
2. In a mixing bowl, combine the Peppery Dijon Parsley Rub mixture
ingredients.
3. With the mixture above, rub each Club Sirloin Steak on both
sides
4. Place each Club Sirloin Steak on grill grid and grill uncovered
for approximately 11 to 14 minutes for medium-rare (150°F).

** GRILLING TIPS **
Beef Or Pork Ribs Grilling Tips:
Whether you'll be preparing beef or pork ribs, we suggest you
follow the few steps below to make a "great rib" that
everyone will enjoy:
1. Always keep in mind that "low and slow" is definitely
the way to grill ribs. The best method to prevent burning and
to maximize flavor of the grilled ribs, is to grill the ribs
using the Indirect Heat method:
~~ FOR GAS GRILLS: Use the lowest heat setting possible.
~~ FOR CHARCOAL GRILLS (kettle style or regular: Use somewhat
less charcoal than specified for your size grill.
2. To have the ribs achieve their maximum tenderness, before
you even season the meat, prepare the ribs as follows:
~~ Remove the thin, paper-like membrane on the back of the ribs.
~~ Pull back a corner with the tip of a knife and then slowly
peel the membrane off with your fingers.
3. Before you grill, try a dry rub of salt, pepper, paprika,
and a pinch of cayenne or other spices. Rub it on both sides
of the ribs, put them in a resealable plastic bag, and let them
rest in the refrigerator for a couple hours. Grill as described
above in #1 or by following your rib recipe.
4. BIGGEST MISTAKE MADE: Pre-cooking the ribs. . . . . Do not
pre-cook ribs! Pre-cooking ribs by par-boiling or baking robs
the ribs of flavor.
5. Because most barbecue sauces and glazes contain sugar - which
will burns easily, the ribs should be brushed with the barbeque
sauce or glaze only during the last 10 to 20 minutes of cooking
time.

Beef Grilling Tips:
- Grilling beef at medium to medium-low temperatures ensures
even cooking. If the temperature is too high, beef can char and
become overcooked on the outside before the interior reaches
the desired doneness. Charring beef is not recommended.
- Trim excess fat from meats to avoid flare-ups while grilling.
- Use long-handled tongs for turning steaks; spatulas for beef
burgers. A fork will pierce the beef causing loss of flavorful
juices.
- For best results, use an instant-read thermometer to determine
doneness. For steaks and burgers, insert the thermometer horizontally
into the side (not the top) to check the internal temperature.
- Cook beef burgers to at least 160°F (medium doneness)
.
- Cook steaks to at least 145°F (medium rare doneness).

Vegetable Grilling Tips:
- If your vegetables are being charred on the outside but raw
on the inside, try this: Microwave them from 1 to 3 minutes,
brush with olive oil and grill until tender, turning once.
