** 3 RECIPES FOR YOU FROM HAVERHILL BEEF **
Herb Rubbed Grilled New York Sirloin Steaks
Prep Time: 10 Minutes
Cook Time: 15 minutes
Ready in: 25 Minutes
Makes 4 servings
Ingredients:
2 New York Sirloin Steaks, cut about 1 inch thick
1 Tbsp. fresh parsley, chopped
1 Tbsp. fresh basil, chopped
1 Tbsp. fresh oregano, chopped
1/2 Tbsp. fresh rosemary, chopped
1 Tbsp. granulated garlic
1 Tbsp. granulated onion
1/4 cup cracked black pepper
1/4 cup olive oil
salt (optional)
Directions:
1. Preheat the grill to medium heat.
2. In a mixing bowl, combine the olive oil, pepper, garlic, onion,
parsley, basil, oregano and rosemary.
3. With the mixture above, rub each New York Sirloin Steak on
both sides. If desired, salt each New York Sirloin Steak to taste.
4. Place each New York Sirloin Steak on grill grid and grill
uncovered for approximately 15 minutes for medium-rare (150°F).

Santa Fe Style Grilled Pork Tenderloin
Prep Time: 10 Minutes
Marinating Time: 2 to 24 Hours
Cook Time: 15 to 20 Minutes
Ready in: 25 to 30 Minutes (excluding marinating time)
Makes 4 to 6 servings
Ingredients:
2 pork tenderloins, about 1 pound each
Seasoning:
5 teaspoons chili powder
1 1/2 teaspoons oregano
1 teaspoon sage
1 tablespoon olive oil
3/4 teaspoon ground cumin
2 garlic cloves, crushed
Directions:
1. In small bowl, mix all the seasoning ingredients.
2. Rub the seasoning mixture over all surfaces of the pork
tenderloins.
3. Cover and refrigerate 2 to 24 hours.
4. Preheat grill to medium heat.
5. Place each pork tenderloin on grill grid and grill for
15 to 20 minutes turning occasionally until meat thermometer
inserted reads 155 to 160 degrees F.
6. To Serve: Slice thinly on the diagonal.

Grilled Lemon-Pepper Boneless Chicken Breasts
Prep Time: 15 Minutes
Marinating Time: 1 Hour
Cook Time: 12 to 16 Minutes
Ready in: about 1 Hour and 30 Minutes WITH Marinating time
Makes 4 servings
Ingredients:
1 1/2 lbs. boneless and skinless chicken breasts
Marinade:
4 tablespoons lemon juice
1 tablespoon olive oil
2 teaspoon thymes
2 garlic cloves, minced
1 teaspoon cracked black pepper
3/4 teaspoon salt
Directions:
1. Place the chicken breasts in shallow dish. Set aside.
2. In small bowl, combine marinade ingredients.
3. Pour marinade over chicken breasts; turning to coat both sides.
4. Cover and refrigerate 1 hour.
5. Drain chicken; discard marinade.
6. Lightly greased grill grid for cooking.
7. Preheat grill to medium heat.
8. Grill chicken breasts, uncovered, 5 to 6 inches over heat
for 6 to 8 minutes on each side until cooked through.

** GRILLING QUESTIONS AND ANSWERS **
QUESTION: Do you have any "basic" tips that will make
my BBQ a great success?
ANSWER: The following 3 "basic" tips may help you:
1. Whenever barbecuing, use tongs to turn the meat. A fork
should never be used as it will punch holes in the meat and allow
the natural juices to escape, causing the meat to lose flavor
and become chewy.
2. When grilling meats, it is usually best to turn the meat
only once. When grilling meat to a medium or greater doneness,
use the lid to assist in cooking. This will decrease the cooking
time by applying heat to all sides of the meat at once.
3. Tomato and/or sugar based BBQ sauces should be added only
at the end of the grilling process, since these products will
burn easily and are seldom considered an internal meat flavoring.

QUESTION: What's the best way to grill a steak?
ANSWER: If grilling a steak such as a T-bone, Rib Eye, New
York Sirloin etc., heat the grill to its highest heat and grill
your meat 4-7 minutes per side (lid closed) or 10-15 minutes
per side (lid open) depending on the steak's thickness and on
the way you like your steak cooked. Add your barbecue sauce during
the last couple of minutes on the grill.
For a less expensive steak you should marinade it for 4-24
hours before grilling and cook at a lower heat to promote tenderness!!

QUESTION: Do you have any "tips" for direct cooking
on a charcoal grill?
ANSWER: For direct cooking on a charcoal grill, make sure
there is enough charcoal to extend in a single layer 1 to 2 inches
beyond the area of the food on the grill. Pour briquettes into
the grill to determine the quantity, then stack into a pyramid
for lighting. For indirect cooking, food is placed over a drip
pan and the briquettes are banked either to one or both sides
of the pan.
NOTE: Carbon monoxide and carbon dioxide are given off during
combustion, so never barbecue indoors as these odorless, toxic
fumes may accumulate and cause death.
NOTE: NEVER, NEVER LET YOUR CHILDREN COOK OR GRILL UNSUPERVISED!
