** 3 RECIPES FOR YOU FROM HAVERHILL BEEF **
Grilled Rosemary-Garlic Rubbed T-Bone Steak
Prep Time: 5 Minutes
Cook Time: about 15 Minutes
Ready in: about 20 Minutes
Makes 2 to 3 servings
Ingredients:
2 lbs. T-Bone Steak, cut about 1 inch thick
salt to taste
pepper to taste
Rosemary-Garlic Rub:
2 cloves garlic, minced
2 teaspoons rosemary
1 teaspoon crack black pepper
Directions:
1. Preheat grill to medium heat.
2. In a small bowl, combine the garlic, rosemary and crack
black pepper to make the rub mixture.
3. Rub both sides of steak with the rub mixture.
4. Place the steak on the preheated grill grid and grill, uncovered,
for 14 to 16 minutes or until the internal temperature has reached
140ºF for medium-rare or 145ºF for medium doneness,
turning once.
5. To serve, if desired, season cooked steak with salt and
pepper

Honey-Mustard Glazed Grilled Club Sirloin Steaks
Prep Time: 10 Minutes
Cook Time: 20 Minutes
Ready in: 30 Minutes
Makes 4 servings
Ingredients:
4 beef club sirloin steaks cut about 1 inch thick
1 tsp. salt
1/2 tsp. cracked black pepper
Glaze:
1 teaspoon thyme
1 teaspoon olive oil
1/3 cup honey
3 tablespoon Dijon mustard
1 teaspoon balsamic vinegar
1/4 teaspoon pepper
Directions:
1. In a small bowl, mix salt and cracked black pepper; then press
mixture into both sides of club sirloin steaks.
2. Preheat grill to medium heat.
3. Place club sirloin steaks on grill grid. Cook covered 5 to
7 minutes per side. Turn with tongs to retain juiciness.
4. While club sirloin steaks are grilling, combine the honey,
olive oil, mustard, balsamic vinegar and pepper in a 1 cup microwave-safe
glass measure; then microwave on medium for about 3 minutes until
thickened, stirring occasionally.
5. During last 5 minutes of grilling the club sirloin steaks,
brush glaze over top and sides of steak.
6. Remove club sirloin steaks from grill when an internal temperature
has reached 140ºF for medium-rare or 145ºF for medium
doneness.

Summer Grilled Beef Tenderloin Steaks
Prep Time: 5 Minutes
Cook Time: about 6 Minutes
Ready in: about 1 Hour and 10 Minutes WITH chilling time
Makes 4 servings
Ingredients:
4 beef tenderloin steaks cut about 3/4 inch thick
2 teaspoon fresh parsley flakes
2 teaspoon fresh rosemary
2 teaspoon thyme
3 tablespoons olive oil
Directions:
1. In a bowl, combine the parsley, rosemary, thyme and olive
oil; then brush the mixture onto all sides of the beef tenderloin
steaks.
2. Place the steaks on a glass plate, cover and chill in the
refrigerator for about 1 hour.
3. Preheat grill to medium heat.
4. Place the steaks on the preheated grill grid and grill,
uncovered, for 4 to 6 minutes or until the internal temperature
has reached 140ºF for medium-rare or 145ºF for medium
doneness, turning once.

** GRILLING TIP **
Preventing Meat From Sticking To The Grill . . .
To prevent food from sticking to the grid, preheat the cooking
surface with the hood down for 15 minutes. Place the meat product
on the grid and allow it to remain there for at least half of
the suggested grilling time.
It is unnecessary to keep flipping meat products allow them
to sear and seal in their juices, then halfway through the cooking
period, with a spatula, flip the meat product onto its other
side. When grilling chicken, always place the meat side on the
grill first.
A light coating of oil applied to any of the meat products
prior to grilling will also help. The use of a commercial spray
cooking product is also helpful.
CAUTION: This spray should ONLY be used prior to lighting
your grill but never during the cooking period.
NOTE: Use of spray cooking product can leave a black stain
on areas of your grill grid. This is should not harmful and does
not affect cooking.
NOTE: NEVER, NEVER LET YOUR CHILDREN COOK OR GRILL UNSUPERVISED!
