** 3 RECIPES FOR YOU **

Maple-Honey Glazed Grilled Club Sirloin Steaks

Prep Time: 10 Minutes
Cook Time: 20 Minutes
Ready in: 30 Minutes
Makes 4 servings

Ingredients:
4 beef club sirloin steaks cut about 1 inch thick
1 tsp. salt
1/2 tsp. cracked black pepper
Glaze:
1/4 cup maple syrup
1/4 cup honey
2 tsp. cider vinegar
1/4 tsp. pepper

Directions:
1. In a small bowl, mix salt and cracked black pepper; then press mixture into both sides of club sirloin steaks.

2. Preheat grill to medium heat.

3. Place club sirloin steaks on grill grid. Cook covered 5 to 7 minutes per side. Turn with tongs to retain juiciness.

4. While club sirloin steaks are grilling, combine maple syrup, honey, vinegar and pepper in a 1 cup glass measure.

5. Microwave on high for about 1 minute.

6. During last 5 minutes of grilling the club sirloin steaks, brush glaze over top and sides of steak.

7. Remove club sirloin steaks from grill when an internal temperature has reached 140ºF for medium-rare or 145ºF for medium doneness.

Smokey Breaded Boneless Pork Chops

Prep Time: 15 Minutes
Cook Time: 8 Minutes
Ready in: 23 Minutes
Makes 4 servings

Ingredients:
4 boneless center cut pork chops about 3/4 inch thick
2 tablespoons flour
1 egg, slightly beaten
1/2 teaspoon salt
1/2 teaspoon basil
1/2 teaspoon thyme
1/8 teaspoon pepper
1 teaspoon smoke flavored BBQ sauce
1/2 cup dry bread crumbs
1 tablespoon olive oil

Directions:
1. In small bowl, combine flour, salt, paprika, pepper, basil and thyme.

2. In another small bowl, combine the egg and smoke flavored BBQ sauce.

3. Coat center cut pork chops with seasoned flour; dip in egg mixture, and coat with crumbs.

4. In large skillet, heat oil over medium-high heat. Brown chops on one side until golden brown (about 4 minutes); turn and continue cooking for another 4 minutes.

Orange Boneless Chicken Breasts Skillet

Prep Time: 10 Minutes
Cook Time: 22 to 26 Minutes
Ready in: 36 Minutes
Makes 3 to 4 servings

Ingredients:
1 1/2 lbs. boneless skinless chicken breasts
salt to taste
cracked black pepper to taste
1 tablespoon rosemary
1 tablespoon thyme
2 tablespoons butter
1 orange, thinly sliced
2 cans mandarin oranges

Directions:
1. Season chicken breasts with salt, cracked black pepper, rosemary and thyme.

2. In large, nonstick skillet over medium heat, heat the butter.

3. Add the chicken breasts and sauté 6 to 8 minutes per side or until golden brown.

4. Top chicken breasts with orange slices. Add the mandarin oranges (with their liquid).

5. Cover and simmer over medium heat 10 minutes or until chicken is glazed with juices and cooked through, basting the chicken breasts frequently with juices during cooking.

** GRILLING TIP **

QUESTION: Do you have any grilling tips to prepare ribs on the grill?

ANSWER: Whether you'll be preparing beef or pork ribs, we suggest you follow the few steps below to make a "great rib" that everyone will enjoy:

1. Always keep in mind that "low and slow" is definitely the way to grill ribs. The best method to prevent burning and to maximize flavor of the grilled ribs, is to grill the ribs using the Indirect Heat method.

~~ FOR GAS GRILLS: Use the lowest heat setting possible.

~~ FOR CHARCOAL GRILLS (kettle style or regular: Use somewhat less charcoal than specified for your size grill.

2. To have the ribs achieve their maximum tenderness, before you even season the meat, prepare the ribs as follows:

~~ Remove the thin, paper-like membrane on the back of the ribs.

~~ Pull back a corner with the tip of a knife and then slowly peel the membrane off with your fingers.

3. Before you grill, try a dry rub of salt, pepper, paprika, and a pinch of cayenne or other spices. Rub it on both sides of the ribs, put them in a resealable plastic bag, and let them rest in the refrigerator for a couple hours. Grill as described above in #1 or by following your rib recipe.

4. BIGGEST MISTAKE MADE: Pre-cooking the ribs. . . . . Do not pre-cook ribs! Pre-cooking ribs by par-boiling or baking robs the ribs of flavor.

5. Because most barbecue sauces and glazes contain sugar - which will burns easily, the ribs should be brushed with the barbeque sauce or glaze only during the last 10 to 20 minutes of cooking time.

NOTE: NEVER, NEVER LET YOUR CHILDREN COOK OR GRILL UNSUPERVISED!
