** 3 RECIPES FOR YOU **
Grilled Texas-Style Rib Eye Steaks
Prep Time: 10 Minutes
Cook Time: 20 minutes
Ready in: 30 Minutes
Makes 6 servings
Ingredients:
6 Rib Eye Steaks
1 Tbsp. fresh sage
1 Tbsp. fresh basil
1/2 Tbsp. fresh thyme
1 Tbsp. garlic powder
1 Tbsp. onion powder
1/4 cup cracked black pepper
1/4 cup olive oil
salt (optional)
Directions:
1. On a large sheet tray, rub each Delmonico steaks with olive
oil, pepper, garlic, onion, sage, basil, oregano and thyme. If
desired, salt each Rib Eye steak to taste.
2. Preheat grill to medium heat.
3. Place each Rib Eye steak on grill grid and grill to desired
doneness, approximately 20 minutes for medium-rare (150°F).

El Grande Pork Tenderloin
Prep Time: 10 Minutes
Marinating Time: 2 to 24 Hours
Cook Time: 15 to 20 Minutes
Ready in: 25 to 30 Minutes (excluding marinating time)
Makes 4 to 6 servings
Ingredients:
2 pork tenderloins, about 1 pound each
5 teaspoons chili powder
1 1/2 teaspoons basil
1 teaspoon thyme
1 tablespoon olive oil
3/4 teaspoon ground cumin
2 garlic cloves, crushed
Directions:
1. In small bowl, mix all ingredients except the pork tenderloins.
2. Rub mixture over all surfaces of the pork tenderloins.
3. Cover and refrigerate 2 to 24 hours.
4. Preheat grill to medium heat.
5. Place each pork tenderloin on grill grid and grill for
15 to 20 minutes turning occasionally until meat thermometer
inserted reads 155 to 160 degrees F.
6. To Serve: Slice thinly on the diagonal.

Boneless Grilled Lemon Chicken Breasts
Prep Time: 10 Minutes
Marinating Time: At least 1 Hour Or Overnight
Cook Time: 15 to 20 Minutes
Ready in: 1 Hour and 30 Minutes
Makes 4 servings
Ingredients:
1 1/2 pounds boneless skinless chicken breast
1/4 cup olive oil
1 tablespoon lemon juice
1 teaspoon rosemary
1 teaspoon thyme
1 teaspoon lemon pepper seasoning
1 1/2 tablespoons chopped fresh marjoram
1 small shallot, minced
Directions:
1. In large bowl, combine oil, marjoram, shallot, rosemary, thyme,
lemon juice and lemon pepper.
2. Add the chicken breasts and turn to coat with marinade, rubbing
seasonings into slashes.
3. Cover and refrigerate at least 1 hour or overnight.
4. Preheat grill to medium heat.
5. Remove the chicken breasts from marinade (NOTE: Discard unused
marinade) and grill for 15 to 20 minutes until cooked through,
turning occasionally.

** COOKING TIP **
Pork is best and safe when cooked to medium doneness reaching
160 degrees F. on a meat thermometer. Correctly cooked pork will
always be juicy and tender, with a slight blush of pink in the
center.
Pork Sautéing/Stir Frying Basics . . . .
This method of cooking pork is usually for small cuts of pork
such as chops, cutlets and strips.
1) Heat a small amount of oil in a large heavy skillet over a
medium-high heat.
2) Place pork in skillet; do not cover.
3) Cook pork uncovered, turning occasionally. For stir-frying,
cook over high heat, stirring constantly.
Pork Panbroiling Basics . . . .
This method of cooking pork is usually for cuts of pork such
chops, tenderloin medallions, ham slices, bacon and ground pork
patties.
1) Preheat heavy skillet over medium-high heat.
2) Place meat in hot skillet (if pork is extremely lean, brush
pan with a little oil to prevent sticking). Do not cover.
3) Cook over medium-high heat, turning occasionally, until evenly
browned on both sides. Remove any fat and drippings as they accumulate.
NOTE: NEVER, NEVER LET YOUR CHILDREN COOK OR GRILL UNSUPERVISED!
