** 3 RECIPES FOR YOU **
Alphabet Soup Meatloaf
Prep Time: 10 Minutes
Cook Time: 1 Hour
Ready In: 1 Hour and 15 Minutes with standing time
Makes 6 servings
Ingredients:
1 1/2 pounds lean ground beef
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1 can Alphabet Vegetable Soup
3/4 cup oatmeal
1/8 teaspoon rosemary
1/8 teaspoon thyme
1/8 teaspoon pepper
1 egg
1/4 cup chopped onion
Directions:
1. Preheat oven to 350° F.
2. Meanwhile, in a large mixing bowl, mix lightly together the
ground beef with the Alphabet Soup, oatmeal, egg, chopped onion,
salt, rosemary, thyme and pepper.
3. When thoroughly mixed, place the beef meat mixture into a
8 inch by 4 inch loaf pan.
4. Place filled loaf pan in oven and bake for 1 hour, or until
meat is no longer pink and juices run clear.
5. Let the cooked meatloaf stand for 5 minutes before serving.

Pork Fajitas
Prep Time: 10 Minutes
Cook Time: 20 Minutes
Ready In: 30 Minutes
Makes about 4 servings
Ingredients:
1 lb. boneless pork cutlets (1/8 to 1/4 inch thick)
1 Tbsp olive oil
2 medium red or yellow peppers (or 1 of each)
1 medium onion
salt to taste
ground pepper to taste
8 small flour tortillas
chopped fresh cilantro
prepared salsa
Marinade:
3 Tbsp fresh lime juice
1 Tbsp olive oil
2 cloves garlic, minced
Directions:
1. Cut the peppers into 3/4 inch strips. Slice the onion. Set
aside.
2. Stack pork cutlets; cut into 3 x 1 inch strips. Combine marinade
ingredients in medium bowl. Add pork strips and marinate 10 minutes
in the refrigerator.
3. Meanwhile, heat 1/2 of olive oil in large nonstick skillet
over medium-high heat until hot. Add peppers and onion; stir-fry
4 to 5 minutes or until crisp-tender. Remove from skillet; keep
warm.
4. Drain the pork discarding the marinade. Add 1/2 of pork to
skillet; stir-fry 1 to 2 minutes or until outside of surface
of pork is no longer pink. Do not overcook. Repeat with remaining
oil and veal. Season with salt and pepper as desired.
5. Combine the pork and bell pepper mixture. Sprinkle with cilantro
as desired. Serve with tortillas and salsa.

Seasoned Oven Roasted Pork
Prep Time: 5 Minutes
Cook Time: about 60 Minutes
Ready In: 70 Minutes including standing time.
Makes 6 servings
Ingredients:
2 lb. boneless pork loin roast
1 teaspoon prepared horseradish
1 teaspoon dried thyme, crushed
1/2 teaspoon dried basil, crushed
1 teaspoon dried rosemary, crushed
Directions:
1. Preheat oven to 350ºF.
2. Place pork roast in a shallow baking pan. Rub horseradish
over the surface of meat. Set aside.
3. In a small bowl, combine the rosemary, basil and thyme. Sprinkle
over roast
.
4. Place pork roast in a uncovered oven-proof cooking dish.
5. Place in oven and cook for about 1 hour, or until a meat thermometer
registers 160ºF.
6. Let stand 5 minutes before serving.

** COOKING TIP **
Pork is best and safe when cooked to medium doneness reaching
160 degrees F. on a meat thermometer. Correctly cooked pork will
always be juicy and tender, with a slight blush of pink in the
center.
Pork Grilling Basics. . . .
This method of cooking pork is usually for both small cuts or
pork cooked over direct heat and large cut of pork cooked with
indirect heat.
There are two ways to grill pork based on the size of the cut:
Direct heat, where food is placed directly over the heat source,
is ideal for small cuts like kabobs, tenderloin, burgers and
chops.
Indirect heat, where food is placed on the grill rack away from
the coals or gas burners, is good for large cuts like loin roasts,
ribs, shoulder and fresh ham.
Direct Heat
- Arrange hot coals evenly on the fire grate of the grill or
use all gas burners.
- Place pork directly above the heat source.
- Follow suggested cooking times, turning once during cooking.
Indirect Heat
- Bank hot coals on both sides of the fire grate, on one side
of the grill or in a ring around the perimeter. For gas grills,
pre-heat and then turn off any burners directly below where the
food will go.
- Place pork on the grill so it is not directly over any coals
or gas burners and close grill hood.
- Follow suggested cooking times until pork is done. The heat
circulates inside the grill, so turning the pork is not necessary.

** WINERY REVIEW FROM HAVERHILL BEEF **
Deakin Estate Vineyard* . . . .
Deakin Estate vineyard is located at Red Cliffs, near Mildura
in the North-West of Victoria, Australia. The region has become
one of the most productive agricultural areas in Australia.
The Mildura region was established as an agricultural settlement
in the 1880s after Alfred Deakin, a former Prime Minister of
Australia, encouraged California's Chaffey Brothers to bring
their irrigation expertise to Mildura. The region subsequently
became one of the most productive agricultural areas in Australia
specializing in citrus, olives, almonds and grapes.
The Deakin Estate range and the premium Alfred range were named
in honor of this visionary, Alfred Deakin.
The Deakin Estate property was purchased in 1967 when vineyards
were planted. Initially, the grapes grown were picked and sold
as fruit. Wine production on the property did not begin until
1980 when a winery facility was built. Fruit quality and wine
production improved and in 1994 Deakin Estate the brand was launched
in the United Kingdom. A domestic launch followed with the release
of the next vintage.
Deakin Estate has grown from initially domestic distribution
only to a network that spans throughout Australia, Europe (Denmark,
Finland, Holland, Ireland, Switzerland, United Kingdom), Asia
(Hong Kong, Japan, Malaysia and Philippines), Canada, United
States and New Zealand.
A Few Of The Deakin Estate Wines At Haverhill Beef:
Deakin Estate Cabernet Sauvignon
Enticing aromas of blackcurrant and berries with a little toasty
oak. A full flavored wine with a palate that is rich with fruit
and some toasty oak. The wine has excellent length with soft
tannins.
Deakin Estate Shiraz
Aromas of ripe plum fruit flavors of plum and raspberry with
a touch of spice. A full flavored rich wine with good length
and soft tannins. This Shiraz would go well with steak, pizza
and anything spicy.
Deakin Estate Merlot
Typical of the variety, the Merlot shows soft, round flavors.
Appealing aromas of dark cherry with chocolate and vanillin/toasty
oak. Good depth of flavors of cherry and plum with soft lingering
tannins and subtle oak characters allowing the fruit to show
through. Enjoy with quail, risottos, pasta and pizza.
Deakin Estate Chardonnay
Fresh peach and melon aromas with a slightly nutty oak influence.
Full flavored palate with a fresh yet lingering finish. Great
accompaniment to chicken, seafood, risotto and salads.
