To our valued customers,
Regarding the current news on the mad cow disease, please rest
assured that we do not purchase beef from the state of Washington.
The beef in this article is a dairy cow. Our beef is all Chairman's
Reserve Certified Premium Beef. This product comes from Tyson
Fresh Meats. This product is from cattle grown just for the purpose
of steaks and roasts. All of our product is under the strict
supervision of the U.S.D.A. and at no time do any of the at risk
items ever go into our product. Please feel free to ask us any
questions you may have concerning this.
The following is a news release from Tyson Foods:
Springdale, Ark. - December 24, 2003 - The report of a U.S. cow
with BSE in the state of Washington does not involve Tyson Foods
or any of its meat production facilities. We have confirmed no
product from any of the three Washington plants identified by
USDA has been purchased by Tyson Foods facilities or used
in any products manufactured by Tyson Foods.
As USDA Secretary Ann Veneman stated Tuesday, this case poses
no risk to consumers because the BSE infectious agent is not
found in beef muscle, such as steaks, roasts and ground beef.
This is an animal disease challenge -- not a food safety problem.
Tyson Foods U.S. plants do not normally slaughter older
cattle, such as the cow identified by the USDA. Instead they
handle younger beef animals that are typically less than 24 months
old, which are not in the BSE risk group.
Tyson Foods has stringent guidelines for the handling of BSE
risk materials from beef animals. For example, the companys
plants remove all spinal cords from beef carcasses. All brains
and similar tissues are segregated and not incorporated into
any muscle or ground beef products. This segregated material
is rendered for non-human consumption and is banned from ruminant
animal feed worldwide. All Tyson plants are federally inspected
and USDA inspectors are on hand every moment our slaughter facilities
are in operation. This includes USDA veterinarians who monitor
the health of the live animals brought to the companys
facilities.
Tyson encourages the USDA to work with our international trading
partners to minimize the impact of the current situation on U.S.
beef exports. Company officials will do all they can, both directly
and through industry trade organizations, to support the governments
effort.

** 3 CROCK POT (SLOW COOKER) RECIPES FOR YOU **
Easy Crock Pot Beef Stew
Prep Time: 10 Minutes
Cook Time: about 6 Hours
Ready in: about 6 Hours and 10 Minutes
Makes 6 to 8 servings
Ingredients:
3 pounds extra lean beef for stew
6 large potatoes, peeled and cubed
6 large carrots, peeled and sliced
1/3 cup soy sauce
1 tsp paprika
1/2 tsp. pepper
3 Tablespoons flour
1 tablespoon basil
1 tablespoon thyme
12 oz. frozen pearl onions
12 oz. frozen peas
8 oz. broccoli florets
1 cup condensed beef broth
8 oz. tomato sauce
1 tsp. salt
Directions:
1. In a crock pot, layer potatoes and carrots on bottom; then
top with the stew beef.
2. Add the onions and peas on top.
3. Sprinkle with the soy sauce, salt, pepper, basil and thyme
and flour.
4. In a mixing container, combine the beef broth and tomato sauce
and pour over all.
5. Cover; then cook for 6 hours on high.

Seasoned Crock Pot Roast Pork
Prep Time: 10 Minutes
Cook Time: about 8 Hours
Ready in: about 8 Hours and 10 Minutes
Makes 6 to 8 servings
Ingredients:
3 lb. boneless pork roast
1 1/2 cups beef broth
1/2 cup sliced green onions
1 tsp. dried basil
1 tsp. dried marjoram
1 tsp. rosemary
1 tsp thyme
1 tsp. basil
1/2 tsp. salt
1/2 tsp. pepper
1 bay leaf
6 medium red potatoes, cut in 2 inch chunks
7 to 8 fresh mushrooms, quartered
1/4 cup all-purpose flour
1/2 cup cold water
Browning sauce, optional
Directions:
1. Place boneless pork roast in a crock pot; add the beef broth,
onions, dried basil, dried marjoram, rosemary, thyme, salt, pepper
and bay leaf. Stir, cover and cook on high for 2 hours.
2. Add the potatoes, carrots and mushrooms. Cover and cook on
low for 6 hours or until vegetables are tender. Remove the meat
and vegetables; keep warm.
3. Discard the bay leaf.
4. In saucepan, combine flour and cold water until smooth; stir
in 1 1/2 cups cooking juices. Bring to a boil. Cook and stir
for 2 minutes or until thickened. Add browning sauce if desired.
5. Serve with the cooked pork roast and vegetables.

Crock Pot Rice and Chicken Breasts
Prep Time: 10 Minutes
Cook Time: about 9 Hours
Ready In: about 9 Hours and 10 Minutes
Makes about 6 to 8 servings
Ingredients:
4 whole boneless skinless chicken breast
1 can cream of celery soup
4 oz sliced mushrooms, undrained
2 carrots, sliced
1/2 cup uncooked long grain converted rice
1 tsp. dried basil
1 tsp. dried marjoram
1 tsp. rosemary
1 tablespoon dry onion soup mix
Directions:
1. Grease the bottom of the crock pot with the olive oil.
2. Add the cream of celery soup, mushrooms, carrots, and rice.
3. Place the boneless chicken breasts on top of the celery soup,
mushrooms, carrots, and rice.
4. In a small mixing bowl, combine the dry onion soup mix, basil.
marjoram and rosemary. Set aside.
5. Then sprinkle the boneless chicken with dry onion soup/seasoning
mixture above; then cover; cook on low for about 9 hours.
