** 3 RECIPES FOR YOU **
New England Style Beef Stew
Prep Time: 15 Minutes
Cook Time: 2 Hours and 30 Minutes
Ready in: 2 Hours and 45 Minutes
Makes 8 servings
Ingredients:
4 pounds of extra lean stew beef
1 tablespoon salt
1 teaspoon pepper
1 teaspoon rosemary
1 teaspoon oregano
1 teaspoon thyme
1 bay leaf
6 cups water
6 small potatoes
2 yellow onions
6 medium-size carrots
Directions:
1. Scrub the potato. (peel is optional). Set aside.
2. Peel and quarter the onions. Set aside.
3. Par and quarter the carrots. Set aside.
4. Place the extra lean stew beef in large pot or Dutch oven;
then add the salt, pepper, rosemary, oregano, thyme, bay leaf
and water.
5. Cover the pot/Dutch oven and heat on stove top on medium-high
to high until boiling; reduce heat and simmer 1 hours and 30
minutes.
6. Remove meat from broth with a slotted spoon (set aside); then
skim any fat from the top of the broth.
7. Return the meat to the pot/Dutch oven and place the potatoes,
onions and carrots around meat; simmer 1 hour longer or until
meat is fork tender.

Hearty Top Round Steak
Prep Time: 15 Minutes
Cook Time: about 2 Hours
Ready in: 2 Hours and 15 Minutes
Makes 4 servings
Ingredients
2 pounds top round steak
1 tablespoon oil
2 medium onions
1 medium red bell pepper
1 medium yellow bell pepper
2 cans stewed tomatoes
1 teaspoon rosemary
1 teaspoon ground basil
1 can beef broth
1 cup water
Directions:
1. Pre-heat the oven to 350 degrees F.
2. Cut the onions in half, then slice them 1/4 inch thick. Set
aside.
3. De-seed the bell peppers, then slice into 1/4 inch strips.
Set aside.
3. On the stove-top, and in a Dutch oven, heat the olive oil
over medium-high heat; then sauté the onions and bell
pepper until onion is translucent. Remove and set aside.
4. In the Dutch oven, sauté the top round steak until
browned, then add the stewed tomatoes, beef broth, rosemary,
basil, water, onions and bell peppers.
5. Cover (tightly) the Dutch oven and place the into the pre-heated
oven and cook for about 2 hours.
6. Remove from oven, slice meat and serve with cooked rice or
over cooked egg noodles.

Seasoned Pork Tenderloin
Prep Time: 5 Minutes
Cook Time: about 20 Minutes
Ready in: 25 Minutes
Makes 4 servings
Ingredients:
1 pound boneless pork tenderloin
1/2 teaspoon ground basil
1/2 teaspoon oregano
1/2 teaspoon rosemary
1/2 teaspoon cracked black pepper
1/2 teaspoon thyme
Directions:
1. Pre-heat the oven to 425 degree F.
2. In small bowl, combine the basil, oregano, rosemary, cracked
black and thyme until blended to make a seasoning mixture.
3. Rub the tenderloin with the seasoning mixture, covering the
entire surface.
4. Place in the seasoned pork tenderloin in a shallow roasting
pan and roast in the preheated oven for about 20 minutes, until
internal temperature (measured with a meat thermometer) reads
155-160 degrees F.
5. Remove from oven and let the cooked pork tenderloin rest for
5 minutes before slicing to serve.

** COOKING TIPS FROM HAVERHILL BEEF **
QUESTION: How long should I cook my pork roast?
ANSWER: The rule of thumb for estimating cooking time for pork
roasts is 25 minutes per pound of meat at 350 degrees F (175
degrees C). The safest and most effective method to do this is
to use a thermometer to read the internal temperature of the
roast. Roasts should be cooked until meat is no longer pink inside
and the meat thermometer reads 160 to 170 degrees F (71 to 77
degrees C).
Thermometer Reminders:
- Make sure the thermometer is oven-proof.
- Make sure the thermometer you buy is designed for meat. There
are other types of thermometers, for example, candy thermometers.
- Is inserted into the center of the thickest part, away from
bone, fat and gristle.
- Do not let the thermometer touch the cooking pan.
NOTE: NEVER, NEVER LET YOUR CHILDREN COOK OR GRILL UNSUPERVISED!
