** 3 RECIPES FOR YOU **
Seasoned Top Round Roast
Prep Time: 5 Minutes
Cook Time: 2 Hours and 30 Minutes
Ready In: about 2 Hours and 35 Minutes
Makes 8 servings
Ingredients:
4 lb. top round roast
Seasoning ingredients:
2 tsp. cracked black pepper
2 tsp. dry mustard
1 large clove garlic, crushed
1 teaspoon rosemary
1 teaspoon thyme
1/2 tsp. ground allspice
1/2 tsp. ground red pepper
1 tsp. olive oil
Directions:
1. Preheat oven to 325°F.
2. in a small bowl, combine the the seasonings ingredients and
then rub the mixture evenly into surface of top round roast.
3. Place top round roast, fat side up, on rack in shallow roasting
pan. Do not add water or cover roast.
4. Cook in in the oven for about 2 1/2 hours or until the internal
temperature reaches 140°F for medium-rare or 155°F for
medium.
5. Remove top round roast from oven and tent loosely with aluminum
foil.
6. Let stand 15 minutes prior to carving into slices.

Broiled Boneless Garlic-Lemon Pork Chops
Prep Time: 5 Minutes
Cook Time: 12 Minutes
Ready in: about 12 Minutes WITHOUT marinating time
Makes 8 servings
Ingredients:
8 boneless pork chops cut about 1 inch thick
1/3 cup chopped garlic
2/3 cup real lemon juice
1/2 olive oil
1/2 teaspoon oregano
2 tablespoons crushed dried tarragon
1 tablespoon dried rosemary
Paprika
Directions:
1. Combine the garlic, lemon juice, olive oil, oregano, rosemary
and tarragon in a resealable plastic bag.
2. Add pork pork chops and liberally coat the meat on all sides
with the mixture and marinate them for at least 6 hours (or up
to overnight) in the refrigerator.
After marinating time:
3. Preheat the oven broilers
4. Remove the pork chops from the bag, drain chops, discarding
marinade.
5. Place chops on rack in broiler pan so the chops are 4 to 5
inches from heat. Sprinkle the chops with a little paprika. Broil
for 5 to 6 minutes or until brown. Turn chops and sprinkle with
paprika. Broil for 5 to 6 minutes more or until chops are just
done.

Broiled Thai Boneless Chicken Breasts
Prep Time: 5 Minutes
Cook Time: about 15 Minutes
Ready in: 20 Minutes
Makes 4 servings
Ingredients:
1 1/2 lbs. boneless skinless chicken breasts
Ginger sauce:
1 1/2 teaspoon ground ginger
1/3 cup sherry
3 tablespoons firmly packed brown sugar
1 teaspoon rosemary
3 tablespoons sesame oil
3 tablespoons soy sauce
1 teaspoon thyme
2 cloves garlic, finely chopped
Directions:
1. Preheat the oven broiler.
2. Combine and stir the sherry, brown sugar, rosemary, sesame
oil, soy sauce, thyme, garlic and ginger in a saucepan and heat
to a boil over medium high heat. Remove from heat and set aside.
3. Place the chicken breasts on a broiler pan and broil in oven,
turning occasionally and basting with ginger sauce, for 15 minutes
or until meat thermometer inserted in center registers 170°F.
Note: Do not baste during last 5 minutes of grilling.

** COOKING TIP FROM HAVERHILL BEEF **
Frying Breaded Pork Chops . . .
QUESTION: When I fry my pork chops, the breading always comes
off. How can I prevent this?
ANSWER: Be sure to prepare and cook the pork chops with care.
The standard process for breading pork chops is as follows: Take
the pork chop and dip into flour. Shake off any excess, dip it
into the egg mixture and turn it to coat evenly. Then, take the
pork chop and dredge it in breadcrumbs, press the breadcrumbs
evenly over the surface and set it aside. At every stage of this
process, all excess ingredients should be shaken off.
It is also important to make sure that the pan is properly heated
before sautéing any breaded item. You should first heat
the pan over medium-high heat, then add the oil to the pan. Carefully
tilt the pan to coat with oil, allow the oil to heat for 30 seconds
or so, and then carefully slide in the breaded chops. Shake the
pan slightly after adding the chops. After one side of a chop
has browned, turn the chop and cook the opposite side. At this
point, the heat may be reduced slightly. The chops are done when
they reach an internal temperature of 160 degrees F (70 degrees
C); if they become too brown before the inside is done, simply
reduce the heat a little more.
NOTE: NEVER, NEVER LET YOUR CHILDREN COOK OR GRILL UNSUPERVISED!

Barbera is grown throughout Italy and is appreciated for its
