** 3 RECIPES FOR YOU **
Grilled Blade Steak with Salsa Sauce
Prep Time: 10 Minutes
Cook Time: 20 Minutes
Ready in: 30 Minutes
Makes 4 servings
Ingredients:
4 blade steaks cut 1 inch thick
Brushing Sauce:
1/2 cup prepared chunky salsa
1/4 cup ketchup
1 teaspoon rosemary
1 teaspoon thyme
3 tablespoons packed brown sugar
1 tablespoon Dijon-style mustard
Directions:
1. Pre-heat grill to medium heat.
2. In a small bowl, combine the salsa, ketchup, rosemary,
thyme, brown sugar and Dijon-style mustard. Reserve 1/2 cup.
3. Place each blade steak on the pre-heated grill grids and
grill, uncovered, 18 to 22 minutes for medium rare to medium
doneness, turning occasionally. Brush both sides with remaining
sauce during last 5 minutes. Serve with reserved sauce.

Grilled Santa Fe Style Pork Tenderloin
Prep Time: 10 Minutes
Cook Time: about 20 Minutes
Ready In: about 30 Minutes EXCLUDING marinating time
Makes 6 servings
Ingredients:
1 1/2 lbs. pork tenderloin
5 teaspoons chili powder
1 1/2 teaspoons oregano
1 teaspoon rosemary
3/4 teaspoon ground cumin
1 teaspoon thyme
2 cloves garlic, crushed
1 tablespoon olive oil
Directions:
1. In a mixing bowl, mix well together the chili power, oregano,
rosemary, ground cumin, thyme, garlic and olive oil to make marinade.
2. Add the marinade mixture above into a resealable plastic
bag along with the pork tenderloin. Be sure that the entire pork
tenderloin is covered with the marinade.
3. Seal the bag after removing all excess air and place in
the refrigerator for at least 2 hours. (or up to 24 hours.)
4. Pre-heat grill to medium heat.
5. Remove the pork tenderloins from the bag and place on the
pre-heated grill grids. NOTE: Discard unused marinade.
6. Grill for 15 to 20 minutes, until thermometer inserted
reads 155 to 160 degrees F. Pork is done when there is still
a hint of pink in the center. Slice to serve.

Grilled Seasoned Boneless Chicken Breasts II
Prep Time: 5 Minutes
Cook Time: 20 Minutes
Ready in: 25 Minutes
Makes 4 servings
Ingredients:
2 lbs. boneless skinless chicken breasts
Basting Mixture:
1/3 cup lemon juice
3 tablespoons olive oil
2 tablespoons chopped fresh parsley
1 teaspoon rosemary
1 teaspoon thyme
2 cloves garlic, finely chopped
1/4 teaspoon salt
1/4 teaspoon ground pepper
Directions:
1. Pre-heat grill to medium heat.
2. In medium bowl, mix together lemon juice, oil, parsley, rosemary,
thyme, garlic, salt and pepper until blended well.
3. Grill the chicken breasts, turning occasionally and basting
with basting mixture, 20 minutes or until meat thermometer inserted
in center registers 170°F. Note: Do not baste during the
last 5 minutes of grilling.

** BASIC GRILLING QUESTIONS AND ANSWERS **
QUESTION: Do you have a list of useful tools and equipment
for cooking on our grill?
ANSWER: Here is our list:
Timer - Useful for following those minute by minute instructions.
Skewers - Wooden or metal skewers are essential for kabobs. Some
prefer flattened skewers, which tend to inhibit the partially
cooked food rolling as you turn and make it possible to cook
all sides of the food.
Disposable Drip Pans - These are placed under food cooked using
the indirect method. A drip pan catches drippings from fatty
foods, preventing flare ups. It can also be filled with water,
wine, or marinade to flavor the food and provide wet heat.
Long Handled Tongs and Spatulas - Used for turning foods on the
grill, the long handles allow you to work from a distance.
Oven Mitts - Heat resistant mitts prevent burns from working
with a hot grill.
Basting Brushes - Frequent basting is key to all forms of barbeque.
Brushes are also useful for oiling the grate prior to placing
the food on the grill.
Meat Thermometer - A good thermometer is essential for determining
the doneness of thick roasts, steaks and burgers.
Grill Baskets - These are wire baskets with long handles. A basket
shaped like a fish makes turning whole fish quick and easy. Grill
baskets are also used to hold small items, preventing them from
falling into fire.
Wire Brush - Look for one with a metal grill scraper on the front
edge. This will make cleaning the grate a matter of minutes.
IMPORTANT: Please be sure to follow your manufacturer's instructions
before using a wire brush.
Whisk Broom - Handy for cleaning away ash from charcoal grills.

Woodbridge Select Vineyard Series Wines by Robert Mondavi

In celebration of these exceptional vineyards, David Akiyoshi,
their winemaker, has created the Woodbridge Select Vineyard Series
- unique wines with big, bold flavors.
The series includes:
RED DIRT RIDGE CABERNET SAUVIGNON
Here's the secret behind this wine's rich blackberry and vanilla
taste. Woodbridge Vineyard chose grapes from select Lodi vineyards
where grapevines struggle through lean red dirt for nutrients
and water, developing more complex, flavorful grapes. For greater
depth, Woodbridge Vineyard aged the wine in oak barrels for 15
months.
CLAY HOLLOW MERLOT
Select vineyards in the hollows of the Lodi delta region, with
rich clay soils, cooling breezes and bright sunshine, gives Woodbridge
Vineyard Merlot grapes with ripe cherry flavors and silky tannins.
Barrel aging for 14 months makes this big wine even bigger.
FISH NET CREEK OLD VINE ZINFANDEL
Beauty really does come with age. Just try Woodbridge Vineyard's
Old Vine Zinfandel. Small, intense grapes from old vines just
south of Lodi's Fish Net Creek, otherwise known as the Mokelumne
River, gives Woodbridge Vineyard's wine intense spicy black pepper

out the essence and complex character of each grape. Woodbridge
