** 3 RECIPES FOR YOU **
Classic Thanksgiving Turkey and Giblet Gravy
Prep Time: 45 Minutes
Cook Time: 4 Hours
Ready In: about 5 hours
Makes about 14 servings
Ingredients:
12 to 16 pound turkey
4 garlic cloves
3 celery ribs
2 medium onions
1 cup fresh parsley leaves
vegetable oil cooking spray
Giblet Gravy:
turkey neck
turkey giblets
4 black peppercorns
1/2 teaspoon salt
1/3 cup all purpose flour
Directions:
1. Pre-heat oven to 325 degrees F.
2. Cut the onions into eighths; cut the celery ribs into thirds;
and cut the garlic cloves in half. Set aside.
3. Remove neck and giblets from body and neck cavities; set
aside.
4. Drain juices and dry turkey with paper towels.
5. Place half of the onion, celery, garlic and parsley in
body cavity of turkey.
6. Place the turkey, breast side up, on flat rack in shallow
roasting pan. Cover skin with cooking spray.
7. Roast the turkey 3 1/2 hours to 3 3/4 hours or until thigh
temperature is 180 degrees F.
8. Cover breast and top of drumsticks with foil after 1 and
a half hours to prevent overcooking of breast.
9. Let turkey stand for about 25 minutes before carving.
To Make Giblet Stock:
1. Place the turkey neck, heart, gizzard and remaining onion,
celery, garlic and parsley in large saucepan or Dutch oven. (For
best flavor, it is recommended not including the liver.)
2. Add 5 cups of water, salt and peppercorns.
3. Bring to a boil; cover, reduce heat and simmer 1 1/2 hours.
4. Strain the giblet stock, cover and refrigerate.
5. Pull meat from neck and discard bones. Finely chop neck
meat, heart and gizzard; cover and refrigerate.
To Make Giblet Gravy:
1. Strain the pan drippings into 4 cup measuring measure.
2. Remove the fat from drippings, placing and a quarter cup
fat into a medium saucepan and discarding the rest.
3. Stir in the all purpose flour until smooth.
4. Add reserved giblet stock to pan drippings to make 4 cups.
5. Slowly add the drippings to the flour mixture and stir
until smooth.
6. Cook and stir until the gravy boils and thickens slightly.
7. Stir in neck meat and giblets and heat until hot.
8. Season with salt and pepper to taste.
9. Pour the gravy into a heated sauceboat to serve.

Chicken Breast Skillet Served With Ginger Sauce
Prep Time: 5 Minutes
Cook Time: about 20 Minutes
Ready In: 25 Minutes
Makes 4 servings
Ingredients:
1 and 1/2 pounds skinless and boneless chicken breasts
ground black pepper to taste
salt to taste
3 tablespoons butter
2 tablespoons brown sugar
1/8 teaspoon ground ginger
14 oz. frozen baby carrots partially thawed
1/2 cup chicken broth
Directions:
1. Season chicken breasts with salt and pepper.
2. In large non-stick skillet, melt 1 tablespoon butter over
medium-high heat and cook chicken breasts, turning once, 10 to
12 minutes or until golden brown and cooked through.
3. Remove the cooked chicken breasts to a serving platter
and keep warm.
To Make Ginger Sauce:
4. Over medium heat, melt the 2 tablespoons remaining butter,
brown sugar and ginger, stirring frequently, until sugar is dissolved.
5. Add baby carrots and chicken broth then bring to a boil.
6. Reduce heat and simmer, stirring frequently, 5 minutes,
until sauce thickens slightly and carrots are heated through.
7. To serve: Spoon the ginger sauce and carrots over chicken
breasts; serve with rice.

Broiled Italian-Style T-Bone Steaks
Prep Time: 10 Minutes
Cook Time: 10 to 15 Minutes
Ready In: about 25 Minutes
Makes 4 servings
Ingredients:
4 T-Bone Steaks
2 garlic cloves chopped finely
1/3 cup fresh basil
1/3 cup freshly grated Parmesan cheese
1 tbsp tomato paste
1 tbsp olive oil
Directions:
1. Preheat broiler.
2. In a medium bowl, grind the chopped garlic cloves and basil
into a paste.
3. Mix in the Parmesan cheese and tomato paste; beat in olive
oil.
4. Place the T-Bone Steaks on a broiling pan.
5. Broil the T-Bone steaks on one side for 4 to 5 minutes
for rare, or 5 to 7 minutes for medium; turn steak and broil
for an additional 2 to 3 minutes for rare or 3 to 4 minutes for
medium.
6. Remove the T-Bone Steaks and spread each steak with Parmesan
cheese mixture, return to broiler for an additional 1 1/2 minutes;
then serve.

** HOLIDAY COOKING TIP FROM HAVERHILL BEEF **
5 Easy Steps To Carve Your Thanksgiving Turkey . . . .
Once your turkey has been fully cooked and removed from the
oven, let the turkey rest for 20 to 35 minutes, depending on
its size. This will give the turkey juices a chance to soak into
the flesh, allowing for very moist slices of turkey. HINT: Before
you begin to carve your turkey, have a warm serving platter ready
and waiting for all the juicy turkey meat you'll soon be slicing
and serving.
1. With your turkey on cutting board breast side up, cut band
of skin holding drumsticks. Grasp end of drumstick. Place knife
between drumstick/thigh and body of the turkey and cut through
skin to joint. Remove entire leg by pulling out and back, using
the point of the knife to disjoin it. Separate the thigh and
drumstick at the joint.
2. Insert fork in upper wing to steady turkey. Make a long horizontal
cut above wing joint through to body frame. Wing may be disjointed
from body, if desired.
3. Slice straight down with an even stroke, beginning halfway
up the breast. When knife reaches the cut above the wing joint,
slice will fall free.
4. Continue to slice breast meat, starting the cut at a higher
point each time.
5. Enjoy!
