** 3 RECIPES FOR YOU FROM HAVERHILL BEEF **
BBQ Beef Ribs
Prep Time: 10 Minutes
Cook Time: 1 Hour and 30 Minutes
Ready In: 1 Hour and 40 Minutes
Makes 2-3 servings
Ingredients:
2 lbs. beef ribs
1/4 cup peach preserves
1/2 cup water
juice of 1 lemon
1-1/2 Tbsp. brown sugar
1 Tbsp. vinegar
1/2 tsp. paprika
freshly ground black pepper
2 Tbsp. Worcestershire sauce
2 Tbsp. cornstarch
Directions:
1. Preheat oven to 450°F.
2. Place the beef ribs on a rack in a shallow baking pan and
roast in oven for 30 minutes.
3. In a small saucepan, combine all other ingredients, except
cornstarch, and cook over medium heat, stirring constantly, until
it begins to boil.
4. Mix cornstarch with 2 Tbsp. water and gradually add to
mixture until thickened. Set sauce aside.
5. Remove the beef ribs and rack from pan and pour off the
fat.
6. Reduce oven heat to 350°F. Return beef ribs to the
pan, and pour the sauce over them.
7. Continue to roast uncovered, basting occasionally, until
beef ribs are tender, about 1 hour.

Grilled Pork Tenderloin With Lime-Honey Glaze
Prep Time: 10 Minutes
Marinating Time: 4 Hours (or overnight)
Cook Time: 1 Hour and 30 Minutes
Ready In: 1 Hour and 40 Minutes
Makes 2-3 servings
Ingredients:
2 pork tenderloins, about 1 pound each
1/4 cup fresh lime juice
2 cloves garlic, chopped finely
Salt to taste
1/4 cup honey
1/2 tablespoon paprika
1 teaspoon coarsely ground fresh black pepper
1/8 teaspoon cayenne pepper
1 tablespoon olive oil, divided
Directions:
1. Line Mixture: Combine lime juice, garlic, and 1/4 teaspoon
salt until salt dissolves; thoroughly stir in honey. Set aside.
2. Spice Mixture: Mix paprika, black pepper, and cayenne and
set aside.
3. Rub each pork tenderloin with 1/2 tablespoon olive oil,
then rub each with half the "set aside" spice mixture.
4. Marinate, in the refrigerator tightly wrapped, several
hours or overnight. Return to room temperature before cooking.
5. When ready to cook, fold the thin end of tenderloin back
over the tenderloin to form a piece of meat of uniform thickness;
secure with a toothpick or tie with string.
5. Salt the tenderloins (optional).
6. Grill or broil at medium-high heat, turning frequently,
until the internal temperature at the thickest part is 150 degrees
or a cut shows barely rosy meat, about 14 minutes.
7. Half way through brush pork tenderloin with "set aside"
lime mixture several times.
8. When pork tenderloin is done, remove from heat; brush with
remaining lime mixture. Let meat rest 5 to 10 minutes covered
with a tea towel.
9. To Serve: Slice thinly on the diagonal.
Wine suggestion for this recipe: Stone Cellars by Beringer
- 2000 California Sauvignon Blanc.

Chicken Zorba
Prep Time: 5 Minutes
Cook Time: 15 to 20 Minutes
Ready in: 25 Minutes
Makes 4 servings
Ingredients:
2 boneless-skinless chicken breasts
1 teaspoon dried oregano leaves
Salt and ground pepper to taste
1 tablespoon olive oil
3 garlic cloves, crushed
1 can (14 1/2 ounces) Italian-style tomatoes
1/2 teaspoon fennel seed
8 ounces pasta, cooked and drained
1/2 cup crumbled feta cheese
Freshly chopped parsley
1/3 cup oil-cured black olives (optional)
Directions:
1. Season boneless-skinless chicken breasts with oregano, salt
and pepper.
2. In large nonstick skillet, over medium-high heat, heat
oil.
3. Add garlic; sauté 2 minutes and remove.
4. Add boneless-skinless chicken breasts and brown 1 1/2 to
2 1/2 minutes per side.
5. Stir in tomatoes and fennel seed.
6. Reduce heat to medium-low and simmer, uncovered, 5 minutes
to blend flavors.
7. Serve chicken and sauce over pasta; sprinkle with feta
and parsley and garnish with olives.

** GRILLING TIP FROM HAVERHILL BEEF **
Grilling Vegetables . . . .
Vegetables are terrific tasting on the grill and are "oh-so"
easy to prepare. Your vegetables will get the same smoky flavor
meats, poultry, and seafood do and are easy accompaniments. Here
are some basic grilling tips to grill them to perfection:
- If you use skewers, don't crowd the vegetables; leave 1/4-inch
spaces between pieces to ensure even cooking.
- Use separate skewers for quick-cooking vegetables that require
lesser cooking times.
- Cut the vegetables into uniform sizes and shapes so they'll
cook evenly.
- Use a grill basket to avoid dropping half of the veggies
onto the lava rocks or briquettes. Or cover the grill rack with
foil. Cut slits in the foil so vegetables grill rather than stew.
NOTE: NEVER, NEVER LET YOUR CHILDREN COOK OR GRILL UNSUPERVISED!

Sebastiani Vineyards . . . .
Sebastiani Vineyards are located 40 miles north of San Francisco,
California.
The history of Sebastiani Vineyards dates back to 1825. In
that year, the Franciscan Fathers of nearby mission San Francisco
Solano, assisted by local native Americans, first cleared and
planted land for their vineyards. These vineyards are among the
oldest vineyard sites in northern California.
In 1904 they were acquired by Samuele Sebastiani, the founder
of the current Sebastiani Vineyards winery. Samuele Sebastiani
immigrated from the wine producing region of Tuscany in northern
Italy in 1895.
Sebastiani's Sonoma County wines are created in a classic
handcrafted winemaking style that showcases the soft, lush fruit
style which is so distinctive of Sonoma County. The winemaking
style strives toward a balance of flavor and intensity.
