** 3 RECIPES FOR YOU FROM HAVERHILL BEEF **
Cracked Black Pepper Prime Rib Roast
Prep Time: 5 Minutes
Cook Time: 2 1/2 to 3 Hours
Ready In: 3 Hours
Makes 6 to 8 servings
Ingredients:
1 boneless rib roast (6 to 8 pounds)
1 tsp. cracked black pepper
6 large cloves garlic, crushed
1 1/2 tsp. dried thyme leaves
Directions:
1. Preheat oven to 350°F.
2. Combine garlic, thyme leaves and black pepper. Press evenly
into surface of prime rib beef roast.
3. Place prime rib beef roast, fat side up, on rack in shallow
roasting pan. Do not add water or cover roast.
4. Roast approximately 2 1/4 to 2 1/2 hours. Use instant read
thermometer and remove when internal temperature reaches 135°F
for medium rare or 150°F for medium.
5. Tent loosely with foil and let stand 15 minutes prior to
carving.

Grilled Honey-Mustard Pork Chops
Prep Time: 15 Minutes
Marinating Time: 2 Hours
Cook Time: 15 Minutes
Ready In: 2 Hours and 30 Minutes
Makes 4 to 8 servings
Ingredients:
8 thin cut pork chops
1/3 cup honey
1 teaspoon Worcestershire sauce
2 tablespoons onion powder
1/4 teaspoon dried tarragon
3 tablespoons orange juice
1 tablespoon cider vinegar
1 teaspoon white wine
3 tablespoons Dijon mustard
Directions:
1. Place honey, orange juice, apple cider vinegar, white wine,
Worcestershire sauce, onion powder, tarragon, and mustard in
a large resealable plastic bag.
2. Slash fatty edge of each chop in about three places without
cutting into the meat (This will prevent the meat from curling
during cooking.)
3. Add pork chops to the plastic bag, and marinate for at
least 2 hours in the refrigerator.
4. Preheat grill for high heat.
5. Oil grate, and place pork chops on the grill over high heat.
Cook for 6 to 8 minutes, turning once, or until done.

Grilled Boneless Chicken Breasts With Orange-Ginger Glaze
Prep Time: 5 Minutes
Cook Time: 15 Minutes
Ready in: 20 Minutes
Makes 4 servings
Ingredients:
4 boneless-skinless chicken breasts
3/4 teaspoon ground ginger
1/2 cup orange marmalade
3 tablespoons balsamic vinegar
1 small shallot, finely chopped
2 cloves garlic, finely chopped
Directions:
1. Preheat grill to medium heat.
2. In small bowl, combine marmalade, shallot, garlic, vinegar
and ginger until well blended.
3. Grill boneless-skinless chicken breasts, turning occasionally
and brushing with glaze, 15 minutes or until meat thermometer
inserted in center registers 170°F. Note: Do not brush during
the last 5 minutes of grilling.

** GRILL TIP FROM DUCANE GAS GRILLS **
Preventing Meats From Sticking on Grill . . . .
QUESTION: How Do I Prevent Meats From Sticking on my Ducane Gas
Grill?
ANSWER:
1. To prevent food from sticking to the grid, preheat the cooking
surface with the hood down for 15 minutes. Place the meat product
on the grid and allow it to remain there for at least half of
the suggested grilling time.
2. It is unnecessary to keep flipping meat products allow
them to sear and seal in their juices, then halfway through the
cooking period, with a spatula, flip the meat product onto its
other side. When grilling chicken, always place the meat side
on the grill first.
3. A light coating of oil applied to any of the meat products
prior to grilling will also help. The use of a commercial spray
cooking product is also helpful. THIS SPRAY SHOULD ONLY BE USED
PRIOR TO LIGHTING YOUR GRILL BUT NEVER DURING THE COOKING PERIOD.
Use of spray cooking product can leave a black stain on areas
of your SEAR GRID®. This is not harmful and does not affect
cooking; however, if this becomes an appearance problem, the
best way to remove the discoloration is by placing the SEAR GRID®
in a self-cleaning oven during the clean cycle.
NOTE: NEVER, NEVER LET YOUR CHILDREN COOK OR GRILL UNSUPERVISED!

Stone Cellars by Beringer . . . .
Stone Cellars by Beringer is located in Napa, California.
Their wines are named in honor of the original stone winery built
in 1876. The tedious task of hand-chiseling the stone cellars
took years to complete and have been aging fine Beringer wines
for 125 years. Stone Cellars by Beringer wines are no exception;
they have been made with the greatest of care and pride by their
distinguished winemaking team, including award-winning winemaker
Ed Sbragia.
1999 CALIFORNIA SAUVIGNON:
The deep ruby color of this wine is the first hint of layers
of currant, blueberry, clove and tobacco that unfold in the mouth.
Barrel aging enhances a supporting structure that makes this
wine a perfect dinner match with thyme-encrusted roasted pork
chops or hamburgers smothered in bleu-cheese and mushrooms.
1999 CALIFORNIA MERLOT:
Vanilla, black cherry and plum aromas and flavors open up as
a soft, silky structure that carry fruit flavors and touches
of sweet-spice to a lovely finish. This wine is a delicious accompaniment
to roasted chicken served with chutney or cheesy tomato lasagna.
2000 CALIFORNIA SAUVIGNON BLANC:
Rich aromas layered with ripe melon and subtle peach flavors
that enhance its soft smooth texture. Its crisp finish compliments
lightly seasoned as well as spicy dishes.
2000 CALIFORNIA CHARDONNAY:
Bright tropical fruit and citrus aromas lead to mouth-filling
flavors of apples and pears. Malolactic fermentation and barrel
aging contribute to a soft creaminess and long finish that complements
grilled fish and linguine with garlic-basil pesto.

** BEER REVIEW FROM HAVERHILL BEEF **
Samuel Adams Summer Ale . . . .
Brewed by Boston Brewery, Samuel Adams Summer Ale is a new
American white ale, a reinterpretation of the classic Belgian
white beers which were brewed with spices and fruit to stabilize
and preserve the beer before the use of hops became commonplace.
Background: White ales/beers originated near Brussels, a wheat
growing region, during the 14th century. These crisp wheat-based
ales were often brewed with coriander, juniper berries, and orange
peel. The style was called "white" because of its light
color and cloudiness -- the result of suspended wheat proteins
in the beer.
TASTING NOTES:
Samuel Adams Summer Ale is tangy and crisp, brewed with wheat
malt, lemon zest, Hallertau Tradition and Saaz hops, the Boston
Brewery's own ale yeast, and an historic, nearly forgotten brewing
spice called Grains of Paradise.
Grains of Paradise gives Summer Ale a peppery citrus note, which
enhances the tanginess of the lemon peel. This nearly forgotten
brewing ingredient -- used by brewers in the 13th and 14th centuries
-- brings a subtle, elegant aroma to the wheat ale base. The
ale yeast fermentation produces background notes of tropical
fruit: you'll detect hints of mangos and peaches. This is a well-balanced,
quenching beer -- perfect for summertime.
Summer Ale is delicious with all summer foods: salads, sandwiches,
grilled vegetables, and spicy foods.
