** 3 RECIPES FOR YOU FROM HAVERHILL BEEF **
Grilled Peach-Peppery Club Sirloin Steak
Prep Time: 15 to 20 Minutes
Cook Time: 15 to 18 Minutes
Ready In: 30 to 38 Minutes
Makes 4 servings
Ingredients:
4 boneless club sirloin steaks, cut 1 inch thick
1/4 teaspoon pepper
1 medium red bell pepper
1/4 teaspoon salt
Peach-Peppery Salsa:
1 tablespoon fresh lemon juice
1 teaspoon freshly grated lemon peel
1 large clove garlic, minced
teaspoon grated fresh ginger
1/8 teaspoon salt
1/2 cup peach preserves
1/4 cup sliced green onions
2 tablespoons finely chopped jalapeno peppers
Directions:
1. Sprinkle both sides of boneless club sirloin steaks with 1/4
teaspoon each salt and pepper; press firmly into beef.
2. Remove seeds from bell pepper, leaving pepper whole.
3. Preheat grill to medium heat.
4. Place steaks and bell pepper on grill grid. Grill steaks,
uncovered, 15 to 18 minutes for medium rare to medium doneness,
turning occasionally.
5. Meanwhile, grill pepper 2 to 3 minutes, turning occasionally.
6. While steaks continue to cook, cut four 1/2-inch thick
rings from bell pepper; set aside for garnish.
7. Coarsely chop enough remaining pepper to make 1/4 cup;
combine with salsa ingredients in small saucepan. Place pan on
grid near edge of grill to heat until warm.
8. About 5 minutes before steaks are done, remove 2 tablespoons
salsa from saucepan and brush on both sides of steaks.
9. To serve, place 1 pepper ring on each steak; fill rings
with warm salsa.

Boneless Pork Roast With Cranberry Glaze
Prep Time: 10 Minutes
Cook Time: 45 Minutes to 60 Minutes
Ready In: 55 to 70 Minutes
Makes 6 to 8 servings
Ingredients:
4 pound boneless pork roast
2 teaspoons cornstarch
1/8 teaspoon cinnamon
1/8 teaspoon salt
4 tablespoons orange juice
1 can (16 oz.) whole cranberry sauce
Directions:
1. Heat oven to 350 degrees F.
2. Combine cornstarch, cinnamon, salt in small saucepan. Stir
in orange juice and cranberry sauce. Cook and stir over medium
heat until thickened. Set aside.
3. Place pork roast in shallow pan and spoon over about 1/2
cup cranberry sauce.
4. Roast in a 350 degree F. oven for 45 minutes to an hour,
basting occasionally with additional sauce, until meat thermometer
reads 155-160 degrees F.
5. Let rest 10 minutes before carving
6. Serve with additional cranberry sauce.

Chicken Divan
Prep Time: 10 Minutes
Cook Time: 10 to 15 Minutes
Ready in: 20 to 25 Minutes
Makes 3 to 4 servings
Ingredients:
1 1/2 pounds skinless and boneless chicken breasts; cut into
bite-sized pieces
2 tablespoons olive oil
non-stick cooking spray
3 cups fresh broccoli
1 can (10 3/4 ounces) cream of mushroom soup
1 can (10 3/4 ounces) cream of celery soup
1 cup milk
2 tablespoons Parmesan cheese
Directions:
1. Heat olive oil in large nonstick skillet.
2. Add skinless and boneless chicken breasts and cook until
pieces are golden brown all over.
3. Meanwhile, steam broccoli until tender-crisp, about 4 minutes.
4. Place cooked chicken in serving dish.
5. Whisk soups and milk together in hot skillet until heated
through.
6. Stir in steamed broccoli. Pour over chicken.
7. Sprinkle cheese over top and serve or if desired, broil
for about 5 minutes to brown cheese.

** GRILL MAINTENANCE TIPS FROM DUCANE GAS GRILLS **
Maintenance of your Ducane Gas Grill . . . .
QUESTION: How do I clean my grill?
ANSWER: You can extend the life of your grill by following the
simple maintenance procedures described in your Owner's Manual.
It is recommended that you clean your grill every 90 days, but
it is absolutely necessary that you perform this maintenance
at least once a year. Maintenance includes cleaning the following:
Top Casting, SEAR-GRID®, Briquettes, LA-VA-GRATE®, Burners,
Burner box, Burner Orifice, Cooking Shelf and Console/Cabinet.
QUESTION: How do I clean my SEAR-GRIDS®?
ANSWER: Immediately after grilling - leave the grill on high
for 15-20 minutes and turn off. When the grill has cooled down,
use a long handled stiff bristle brush and brush down the top
of the SEAR-GRIDS®. Wipe the surface clean with a damp cloth.
Before you grill again, Preheat the grill for 15-20 minutes,
with the hood down, and brush down again.
QUESTION: Someone told me to check my grill for spiders? Is this
necessary?
ANSWER: Yes, we don't like them either, but spiders are attracted
to the additives in both natural and LP (propane) gas. A nesting
spider is capable of spinning a web overnight that could cause
partial or complete blocked gas flow. We recommend the 90-day
maintenance program on your grill and the burners should be checked
at that time.

** WINERY REVIEW FROM HAVERHILL BEEF **
Sonoma Creek Winery . . . .
Sonoma Creek Winery is located in the western reaches of the
Los Carneros appellation which spans the southern portions of
Sonoma and Napa Valleys. Bordered by Sonoma Mountain to the west
and the Mayacamas Mountains on the north, Carneros is the land
between the foothills and the saltwater marshes of San Francisco.
The marine influence of the Bay and the Pacific Ocean creates
a long, cool growing season.
1999 SONOMA COUNTY CHARDONNAY
- Vinification:
The grapes were hand picked from a variety of vineyards in Sonoma
County. They were then pressed and then barrel fermented. The
wines were sur-lie aged and sitrred weekly. 100% of the wine
went through malolactic fermentation.
- Tasting Notes:
This chardonnay offers pear, apple and tropical fruit aromas
on the nose. The wine in the mouth has a rich, round, palate
with flavors of pineapple, pear, citrus and oak. The finish is
fresh and crisp.
- Awards:
Gold Medal - Sonoma County Harvest Fair 2000
1999 SONOMA COUNTY CABERNET SAUVIGNON
- Vinification:
The grapes were hand picked from a variety of vineyards in Sonoma
County. They were then destemmed and fermented in small tanks.
The cap was pumped over with irrigators four times a day until
fermentation was complete. The wines were then placed in a mix
of French and American oak cooperage for eighteen months.
- Tasting Notes:
Fresh sweet Bing and black cherry aromas plus hints of mint and
olive fill the nose of this Cabernet, while in the mouth bright
cranberry and cherry flavors blend with mint and dill nuances
and lead to a refreshing finish
