** 3 CORNED BEEF RECIPES FOR YOU FROM HAVERHILL BEEF **
Traditional Grey Corned Beef and Cabbage
Prep Time: 20 Minutes
Cook Time: 3 Hours
Ready In: 3 Hours and 20 Minutes
Makes 6 servings
Ingredients:
5 pounds grey corned beef brisket
5 black peppercorns
1/2 teaspoon garlic powder
1 onion, peeled and left whole
1/4 cup chopped fresh parsley
2 bay leaves
1 head cabbage, cored and cut into wedges
4 large carrots, peeled and sliced
6 large potatoes, cut in quarters
1 pinch salt
2 tablespoons butter
Directions:
1. In a 6 quart Dutch oven, Place the beef brisket, black peppercorns,
garlic powder, onion, bay leaves and salt. Fill pan with water
to cover everything plus one inch. Bring to a boil and cook for
20 minutes. Skim off any residue that floats to the top. Reduce
heat to a simmer and cook for 2 to 3 hours, until meat can be
pulled apart with a fork.
2. Once the meat is done, add the cabbage, potatoes and carrots,
pressing them down into the liquid. Simmer for an additional
15 minutes or until the potatoes are tender. Skim off any oil
that comes to the surface. Stir in the butter and parsley. Remove
the pot from the heat.
3. Remove meat from the pot and place onto a serving dish
and let rest for 15 minutes. Also remove vegetables to a bowl
and keep warm.
4. Slice meat on the diagonal against the grain. Serve meat
on a platter and spoon juices over meat and vegetables.
Serving Suggestion: Serve with Horseradish/Mustard Sauce:
1/2 cup sour cream
1 1/2 to 2 teaspoons dry mustard
1 teaspoon (+) horseradish
1/4 teaspoon onion salt

Killian's Irish Red Grey Corned Beef
Prep Time: 20 Minutes
Cook Time: 2 Hours and 30 Minutes
Ready In: 2 hour and 50 Minutes
Makes 6 servings
Ingredients:
5 pounds grey corned beef brisket
1 cup brown sugar
1 1/2 Bottles (18 fluid ounce) bottle Killian's Irish Red Beer
1 onion, peeled and left whole
1/4 cup chopped fresh parsley
2 bay leaves
1 head cabbage, cored and cut into wedges
4 large carrots, peeled and sliced
6 large potatoes, cut in quarters
Directions:
1. Preheat oven to 300 degrees F (150 degrees C). Rinse the grey
corned beef brisket completely and pat dry.
2. Place the grey corned beef brisket on rack in a roasting
pan or Dutch oven. Rub the brown sugar on the grey corned beef
brisket to coat entire beef, including the bottom. Pour the 1
bottle of Killian's Irish Red Beer around, and gently over the
grey corned beef brisket to wet the sugar.
3. Cover, and place in preheated oven. Bake for 2 1/2 hours.
Allow to rest 5 minutes before slicing.
4. During the last hour, put vegetables in the roasting pan.
Pour in with the remaining 1/2 bottle of Killian Irish Red Beer.
5. Slice corned beef across grain and serve.

Apricot Glazed Grey Corned Beef
Prep Time: 20 minutes
Cook Time: 3 Hours
Ready in: 3 Hours and 20 Minutes
Makes 6 servings
Ingredients:
5 pounds grey corned beef brisket
1 cup water
1 cup apricot preserves
4 tablespoons brown sugar
2 tablespoons soy sauce
Directions:
1. Preheat oven to 350 degrees F (175 degrees C).
2. Coat a large pan with non-stick cooking spray. Place corned
beef in dish and add water. Cover tightly with aluminum foil
and bake for 2 hours; drain liquid.
3. In a small bowl combine apricot preserves, brown sugar,
and soy sauce. Spread the apricot mixture evenly over the corned
beef.
4. Bake uncovered at 350 degrees F (175 degrees C) 25 to 30
more minutes, or until the meat is tender; basting occasionally
with pan drippings.
5. Slice corned beef across grain and serve.
Serving Suggestion: Serve the sauce over cooked carrots.

~RED WINES~
1999 CABERNET SAUVIGNON -
Taste Profile:
Expect dark plum and black currant flavors layered with spicy
oak and a slight chocolate finish. This wine pairs especially
well with strongly flavored dishes such as barbecued meats or
grilled lamb.
Winemakers Notes:
In 1999, an ideal combination of warm days and cool nights enabled
the grapes to develop excellent color and flavor on the vine.
To preserve and concentrate these characteristics, malolactic
fermentation was used soon after harvest. The wine was then aged
in oak barrels for added notes of spice and complexity.

1999 MERLOT -
Taste Profile:
Turning Leaf's 1999 Reserve Merlot is distinguished by its black
cherry and raspberry flavors nicely balanced by unique herbal
notes. Medium bodied, the wine has a rich almost juicy texture.
Try pairing with roasted lamb, polenta with meat stew, or penne
all'arrabbiata.
Winemakers Notes:
In 1999, California experienced a mild spring and cool summer-ideal
weather conditions for growing grapes with crisp acidity and
intense flavor. After crush, malolactic fermentation helped us
to retain these qualities to which we also brought subtle depth
and softness by patiently aging the wine in oak.

~WHITE WINES~
2000 CHARDONNAY -
Taste Profile:
Medium bodied with a rich, round finish, our 2000 Chardonnay
displays lush green apple and ripe pear flavors along with rich
buttery notes of oak. Its a wine that pairs particularly
well with lobster, roast turkey or pasta dishes.
Winemakers Notes:
As soon as the 2000 vintage came into the winery, the grapes
were fed into a membrane press, the gentlest way to keep all
that flavor intact. The juice was then slowly allowed to cold
ferment for freshness and a crisp acidity. Oak aging provided
additional layers of flavor and richness.

2000 PINOT GRIGIO -
Taste Profile:
Taste for ripe grapefruit, green lemon and pear in this light
to medium bodied wine with a clean dry finish. Serve "al
fresco" (outdoors) with fresh salsa or grilled fish seasoned
with fresh herbs such as tarragon or cilantro.
Winemakers Notes:
The Tre Venezie region in Italy has grown the Pinot Grigio varietal
for over a century. In fact, its a growing region very
similar in climate to Californias coastal areas. Our 2000
vintage is a perfect example of a Mediterranean classic.
~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~
2000 SAUVIGNON BLANC -
Taste Profile:
This wine mingles lively fruit flavors of ripe melon and tart
grapefruit with a subtle herbaceous quality. Light and crisp
with fresh floral aromas, pair with grilled poultry, lemon or
tarragon marinated pork, smoked trout, or Asian cuisine.
Winemakers Notes:
In order to capture the crisp, varietal fruit flavor that characterized
the 2000 vintage of this varietal, the wine was cold fermented
in stainless steel at temperatures averaging between 50ºF
- 65ºF. Then, sur lies aging was added for a light but elegant
complexity.

2000 WHITE ZINFANDEL -
Taste Profile:
Fragrant floral notes. Fresh strawberry flavors with nuances
of white peach. Light in body. And a finish that never loses
its balance or elegance. Put them all together and you have Turning
Leaf's 2000 Lodi White Zinfandel. Pairs well with traditional
dishes such as pork and seafood or foods seasoned with red pepper
or chili.
Winemakers Notes:
The warm spring days and cool nights with a couple of hot spells
in between meant an early harvest in 2000 and grapes with concentrated
flavor. It also meant using the membrane press, since its gentle
pressure minimizes the loss of color or flavor with such a delicate
varietal.

Killian's Irish Red Beer . . . .
Yes - there really is a George Killian!
George Killian Lett comes from a long line of brew masters.
As part of the fifth generation, he's carrying on the family
tradition that began way back in 1864, in Enniscorthy, Ireland.
Killian's Irish Red Beer is a traditional lager with an authentic
Irish heritage, based on the Killian familys recipe created
more than 135 years ago. Killian's Irish Red Beer has a rich
amber color and a thick, creamy head. It was introduced into
the U.S. in 1981. Killian's Irish Red Beer was the gold medallist
for amber lager at 1998 World Beer Cup.
Killian's Irish Red Beer has 163 calories per 12-ounce serving
and 4.9 percent alcohol by volume. It is now brewed by the Coors
Brewing Company.
