** 3 RECIPES FOR YOU FROM HAVERHILL
BEEF **
Steak Diane
Prep Time: 5 Minutes
Cook Time: 20 Minutes
Ready In: 25 Minutes
Makes 4 servings
Ingredients:
4 boneless beef sirloin strip steaks cut 3/4-inch thick
1 Tbsp. butter
2 Tbsp. finely chopped shallots or onion
2 cloves garlic, crushed
1 cup sliced fresh mushrooms
1/4 cup beef broth
2 Tbsp. brandy
2 tsp. Dijon-style mustard
1 tsp. Worcestershire sauce
2 tsp. finely chopped parsley
Directions:
1. Melt butter in a large non-stick skillet over medium heat.
Add shallots and garlic. Cook 2 minutes.
2. Stir in mushrooms and cook
3-4 more minutes. Remove from skillet and set aside.
3. Increase heat to medium-high.
Add steaks and cook 6-7 minutes for medium-rare (140°F),
turning once. Remove steaks to a warm platter.
4. Decrease heat to medium. Add
broth, brandy, mustard, Worcestershire sauce and reserved mushroom
mixture. Bring to a boil. Stir until liquid is slightly reduced,
about 1 minute.
5. Spoon sauce over steaks and
sprinkle with parsley.
TIP: Serve with cooked fettuccini
tossed with sautéed cherry tomatoes.

Bacon Chicken and Dumplings
Prep Time: 20 Minutes
Cook Time: 30 Minutes
Ready in: 50 Minutes
Makes 6 to 8 Servings
Ingredients:
3 slices bacon
3 large potatoes, peeled and diced
1 onion, diced
4 skinless, boneless chicken breast halves - diced
3 cups chicken broth
1 teaspoon poultry seasoning
salt and pepper to taste
1 (15.25 ounce) can whole kernel corn, drained and rinsed
3 cups half-and-half
1 1/2 cups biscuit mix
1 cup milk
Directions:
1. Place bacon in a large, deep skillet. Cook over medium high
heat until evenly brown. Drain, crumble and set aside; reserve
bacon drippings in skillet.
2. Add potatoes, onion and chicken to bacon drippings and sauté
for 15 minutes, stirring occasionally. Pour in chicken broth;
season with poultry seasoning, salt and pepper. Stir in corn
and simmer all together for 15 minutes.
3. Pour in half-and-half and bring to a boil; add crumbled bacon.
In a medium bowl, combine biscuit mix with milk and mix well
(dough should be thick). Drop tablespoon sizes of dough into
boiling mixture; reduce heat and simmer for 10 minutes uncovered,
then another 10 minutes covered. (Note: Do not stir while simmering,
or dumplings will break apart). Serve hot.

Veal Stew
Prep Time: 10 minutes
Cook Time: 1 Hour and 30 Minutes
Ready in: 1 Hour and 40 Minutes
Makes 4 servings
Ingredients:
4 tablespoons olive oil
1 onion, chopped
2 cloves garlic, minced
2 pounds veal, trimmed and cubed
1 (8 ounce) can tomato sauce
1/2 cup white wine
salt and pepper to taste
Directions:
1. In a large pot, heat oil over medium heat. Add onions and
garlic; cook and stir until onion is tender.
2. Add meat to the pot, and brown evenly.
3. Stir in tomato sauce and white wine. Season with salt and
pepper to taste. Bring to a boil, reduce heat to low, cover and
simmer for 1 1/2 hours, or until tender.

** COOKING TIP FROM HAVERHILL
BEEF **
Meat Thermometers . . .
A meat thermometer takes the
guesswork out of cooking. It measures the internal temperature
of cooked meat to assure that a safe temperature has been reached.
If you don't regularly use a meat thermometer, get in to the
habit of using one. A meat thermometer can be used for all foods,
not just meat.
What Type Should You Buy?
Oven-proof - Is inserted prior to roasting and left in for the
entire time.
Instant-read - Is not oven proof.
Use it toward the end of the recommended cooking time. Insert
it long enough to get a temperature reading, about 10 to 15 seconds,
then remove it.
Make sure the thermometer you
buy is designed for meat. There are other types of thermometers,
for example, candy thermometers.
Where to Place the Meat Thermometer?
Ground Beef - Place in the thickest area of ground beef dishes
such as meatloaf. The thermometer should be inserted sideways
in thin items such as hamburger patties.
Roasts and Steaks - Insert into
the center of the thickest part, away from bone, fat and gristle.
Casseroles - Insert into the
thickest portion.
NOTE: When using a thermometer,
do not touch the cooking pan.

** WINE BASICS FROM HAVERHILL
BEEF'S WINE CELLAR **
Beringer's 1999 Napa Valley Chardonnay
. . .
Butterscotch, honey, nutmeg,
citrus and toasted coconut aromas highlight mouth-coating tropical
fruit, creamy vanilla and balancing citrus flavors.
Vintage Release: March 2001
Winemaking
The fruit for the 1999 Napa Valley Chardonnay came from Beringer's
vineyards in the southern part of Napa Valley, from Yountville
south into Los Carneros. The cool climate of this broad region
allows the fruit to develop layers of aromas and flavors while
retaining a balancing acidity. Our vineyards closer to Yountville
consistently produce fruit with bigger personality, with flavors
that are rich and opulent with a honeyed butter/citrus quality.
Fruit from the vineyards further south have a more subtle, leaner
character with tropical fruit and apple/pear aromas and flavors.
Winemaster Ed Sbragia and Winemaker Laurie Hook kept all of the
individual lots of wine separate through fermentation and aging
to preserve the unique characteristics of each vineyard. Because
Beringer's Napa Valley vineyards consistently produce rich and
full-bodied wines, Ed and Laurie chose to barrel ferment the
juice in the Burgundian tradition in 31 percent new French Nevers
oak barrels to encourage brown spice, sweet vanilla and toasty
oak aromas. The wine completed 100 percent malolactic fermentation,
underscoring its buttery character. A regime of monthly stirring
on the lees (sur lie) softened the structural mouthfeel and highlighted
toasty, nutty flavors. After 9 months barrel aging, Ed and Laurie
blended the best lots to showcase the ripe classic chardonnay
flavors in the 1999 vintage.
Winemaster Comments
Our 1999 Napa Valley Chardonnay has a wonderfully refreshing
and balancing citrus acidity that can be directly attributed
to the long, cool growing season. Average-to-low yields and the
late harvest helped concentrate the complex and layered tropical
fruit, lemon and honeyed flavors, which are complemented by the
creaminess from malolactic fermentation and tastiness of new
oak aging. The wine has such a nice backbone. -Winemaster Ed
