** 3 NEW YEAR'S RECIPE SUGGESTIONS FOR YOU FROM HAVERHILL BEEF **

Herb-Roasted Chateaubriand With Brandied Shallot Sauce

Prep Time: 20 Minutes
Cook Time: 45 to 60 Minutes
Ready In: 65 to 80 Minutes
Makes 4 to 6 servings

Ingredients:
One chateaubriand roast (wide end of the tenderloin), about 3 pounds
1 teaspoon Dijon mustard
1 teaspoon minced fresh garlic
1 teaspoon dried thyme
1 tablespoon dried parsley
1 teaspoon coarse salt
1 teaspoon freshly ground black pepper
2 tablespoons olive oil

For the Sauce:
2 tablespoons butter, plus 1 tablespoon
1/4 cup finely chopped shallots
1/2 cup brandy
1/2 teaspoon low-salt beef base, dissolved in 1 cup hot water
1/2 teaspoon dried thyme
1 tablespoon chopped fresh parsley
Salt and pepper to taste

Directions:
1. To prepare the roast, remove all of the silver skin with a small sharp knife. If needed, tie the roast with butcher's twine to make it an even size. (Your butcher can do all of that for you.) The meat should be at room temperature before cooking.

2. Preheat oven to 400° F. Rub the mustard all over the meat. In a small bowl, combine the garlic, thyme, parsley, salt and pepper. Rub or pat the mixture all over the meat. Heat a 12-inch ovenproof skillet over high heat. Add the olive oil, then the meat. Sear until browned, about 2 minutes per side. Place in the oven and roast until desired doneness, about 35 minutes for medium-rare, or an internal temperature of 125°. Remove roast from pan and let set about 10 minutes before carving.

3. Meanwhile, prepare the sauce. Pour off the fat from the skillet. Place over medium-high heat. Add the 2 tablespoons of butter. Add the shallots and sauté until softened, about 2 minutes. Add the brandy, bring to a boil, stirring to loosen all the browned bits in the bottom of the pan, and reduce slightly. Add the water with the beef base and the thyme. Boil until reduced by half. Reduce heat to medium-low. Add the extra 1 tablespoon of butter and cook, whisking constantly, just until the butter is incorporated. Stir in the fresh parsley. Taste for seasoning. Remove the twine from the roast and slice as desired, but not too thick. Place on individual serving plates and top with some of the sauce. Serve immediately.

Chicken Breast With Champagne And Mushroom

Prep Time: 5 Minutes
Cook Time: 25 Minutes
Ready in: 30 Minutes
Makes 3 to 4 Servings

Ingredients:
1 Tablespoon butter
1 Tablespoon olive oil
2 boneless chicken breasts
2 cloves garlic, mashed
1 small onion, julienned
1 cup fresh mushrooms, sliced
1/4 cup Champagne - Brut
1/2 cup chicken broth
1 teaspoon dry mustard
1 teaspoon fresh thyme, chopped 1 teaspoon fresh Italian parsley, chopped
Salt and pepper to taste

Directions:
1. In a large sauté pan, heat butter and olive oil over medium high heat. Brown chicken breasts on both sides, about 5 minutes per side. Remove and keep warm.

2. In the same pan, sauté garlic and onions until brown. Add the mushrooms and sauté for 5 minutes or until brown.

3. Add remaining ingredients and simmer for 10 minutes or until liquid reduces by half. Pour over chicken breasts. Serve with lightly buttered fettuccine noodles.

Lamb Shanks Bistro-Style

Prep Time: 1 Hour
Cook Time: 2 and 1/2 Hours to 3 Hours
Ready in: 3 and 1/2 Hours to 4 Hours
Makes 4 servings

Ingredients:
12 ounces dried beans, such as navy or great northern
4 lamb shanks
3 tablespoons olive oil
1 large onion, finely chopped
1 to 2 carrots, finely chopped
3 stalks celery, finely chopped
4 large garlic cloves, minced
1 bay leaf
1/2 teaspoon dried thyme
1 tablespoon dried rosemary
2 tablespoons chopped fresh parsley, or 1 tablespoon dried
Pepper to taste
1 can (14.5 ounces) whole tomatoes, chopped
2 tablespoons tomato paste
3/4 cup (6 ounces) lamb or beef stock
3/4 cup light red wine (such as Merlot)

Directions:
1. Place the beans in a medium saucepan and cover with water. Bring to a boil and cook 2 or 3 minutes. Remove from heat; cover and let set for about 1 hour. Drain.

2. Meanwhile, preheat the oven to 325° F. Brown the lamb shanks in the oil over medium-high heat in an oven-proof sauté pan large enough to hold the shanks in one layer. Remove from pan. Sauté the onion, carrot and celery in the same pan over medium heat until lightly browned. Add the garlic and cook for another minute or so. Add the stock, wine and 1-1/2 cups water to the pan; deglaze, getting up all the browned bits. Return the shanks to the pan and add the drained beans. Add the bay leaf, thyme, rosemary, parsley and pepper. Do not add salt at this point. Cover casserole tightly and cook in oven for 1 to 1-1/2 hours or until the beans are tender. Add tomatoes, tomato paste and salt to taste. Cover and cook an additional 1-1/2 hours.

3. Using a hand blender, puree a little of the beans, vegetables and liquid in the pan (or put several ladles of the mixture into a blender or processor). Stir to combine. Serve one lamb shank and a portion of the beans and sauce to each person. If desired, garnish with freshly chopped parsley.

** 5 NON-ALCOHOLIC NEW YEAR'S EVE DRINK RECIPES FOR YOU FROM HAVERHILL BEEF **

New Year's Quencher

Makes 2 Servings

Ingredients:
3 oz. Concord grape juice
3 oz. Cranberry juice cocktail
6 oz. Ice-cold Perrier

Directions:
1. In a small pitcher combine all ingredients. Pour into two 8-ounce glasses. Serve with a lemon twist over Perrier ice cubes.

Tip: Serve with miniature fruit cake squares or petit fours.

Spiced Sparkling Cider

Makes 4 Servings

Ingredients:
2 slices seeded lemon cut into halves
4 cloves
2 cinnamon sticks
2 cups apple juice
2-4 Tbs. pure maple syrup (according to taste)
11 oz. chilled Perrier

Directions:
1. Pierce each of the four lemon segments with a clove. Break cinnamon sticks in half. In a small pot, add all ingredients except the Perrier; simmer together for 5 to 10 minutes. Chill thoroughly. Pour equal amounts into four glasses, each with a cinnamon stick and lemon segment. Stir Perrier into each glass.

Tip: Serve with cheese board of cheddars and crisp crackers.

Tropical Fruit Smoothie

Makes 2 Servings

Ingredients:
1 mango, peeled and seeded
1 papaya, peeled and seeded
1/2 cup fresh strawberries
1/3 cup orange juice
5 cubes ice

Directions:
1. Place the mango, papaya, strawberries, orange juice, and ice cubes in an electric blender. Process until the ingredients are smooth.

Virgin Pina Colada

Makes 2 Servings

Ingredients:
1 cup ice
1 1/4 cups pineapple juice
1/2 cup milk
1/2 cup heavy cream
2 tablespoons white sugar

Directions:
1. In an electric blender, blend ice, pineapple juice, milk, whipped cream, and sugar. Blend until smooth.

Tropical Cooler Smoothie

Makes 2 Servings

Ingredients:
1 cup orange juice
2 cups pineapple chunks, drained
1 banana, coarsely chopped
1/4 cup skim milk
2 tablespoons honey
1 cup crushed ice

Directions:
1. In a blender combine orange juice, pineapple chunks, milk, honey and crushed ice. Blend until smooth.

New Year's Parties Kids Can Love, Too! . . .

There's no such thing as too young or too old when it comes to who can enjoy a good party -- and the same goes for a New Year's party. Although it may be tempting to conveniently overlook the kids when making your New Year's Eve plans, a New Year's party can be really fun for everyone! If you're craving a little adults-only time, keep in mind that many children will not be able to stay up until the clock strikes midnight, so the final few hours of the party may be the perfect opportunity. Party-planning experts have come up with the answer to every parent's dream: Party ideas that are as exciting and fun for adults as they are for kids.

Here are a few suggestions:

Pizza Potluck!
Food is always more fun when everybody's involved in making it. A pizza-making extravaganza is a fantastic way to get everyone to participate, mingle and have fun. Invite friends and their family over for the big night and let them know that you'll provide individual pizza crusts if they'll provide their favorite pizza toppings! Make sure that somebody brings sauce and cheese (or you can supply these yourself), but after that, the sky's the limit! This method of assembling pizza is great because your guests can be assured that their favorite toppings will be there, and if they are feeling adventurous they'll pile on toppings brought by others! You'll find the opportunity to try combinations you never even thought of, and most importantly, when everyone makes their own pizza, everyone is happy with their meal!

Well, when you can't go to paradise, why not bring paradise to you?! Send out invites that let your guests know that this New Year's Eve you're planning on vacationing at home with cabana drinks and coconut shell bikinis. Dress the kids up in tropical attire and serve them non-alcoholic tropical punch drinks and tropical foods.

Champagne 101 . . .

Champagne, like wine, is difficult to shop for. Unless your hobby is wine tasting, it is possible that you do not have the foggiest which champagne it is that you like best. For New Year's Eve -- a night that is almost built around the drinking of champagne -- you should take special care deciding which bottle to usher in the New Year with.
Vintage vs. Non-Vintage Champagne
All champagnes are made from grapes grown in France's northernmost region, the Champagne region. There is a classification system in place to determine which villages yield the highest quality grapes (there are only 17 villages who have earned the highest rank!). Each year the grapes are tested, and when a year yields an especially high quality grape, a batch of Vintage Champagne will be made with the high-quality grapes forming up the bulk of the cuvee (the base of the champagne). Vintage champagnes must be aged 3 years before they are released. The other major type of champagne you will see on the shelves is Non-Vintage Champagne. Non-Vintage Champagnes are made with a cuvee which is a blend of two or more year's grapes.

Champagnes from Dry to Sweet
In addition to classifying champagne as vintage or non-vintage, 6 classifications are used to refer directly to the champagne's sweetness:

~~ Brut: dry, less than 1.5% sugar
~~ Extra Sec: extra dry, 1.2 to 2% sugar
~~ Sec: medium sweet, 1.7 to 3.5% sugar
~~ Demi-Sec: sweet, 3.3 to 5% sugar (dessert champagne)
~~ Doux: very sweet, over 5% sugar (dessert champagne)

Other Wines Have Bubbles, Too
In addition to champagne, you can opt to get a sparkling wine. Sparkling wines are created by the same technique that the French use to make champagne. The major difference between sparkling wines and champagnes are the grapes used. Grapes used to make sparkling wine are not grown in the Champagne region; instead they are grown all over the world -- California, Eastern Washington, Spain, Britain and Italy, just to name a few. Sparkling wines are as delicious as many champagnes (although the French may not agree) and offer a somewhat less expensive and more widely available alternative to French Champagne.

Get More Out of Your Bubbly!
Whether it's champagne or sparkling wine that you uncork on New Year's, always remember to chill the bottle in the coldest part of your refrigerator. Serve it in clear, totally dry glasses with tall sides that come to a point on the inside (at the bottom). To open your champagne bottle with flair, follow these simple steps: Pat the bottle dry, grasp the cork with a dry cloth, and twist the bottle, not the cork. You should feel the cork easing itself loose. When you feel it start to go, get ready for the POP!

Whatever route you choose to take with your party, don't forget to keep caffeinated drinks on hand. When all is said and done, not everyone is accustomed to staying up until midnight. So keep that coffeepot percolating and the tea steeping to keep everyone's spirits high until midnight strikes!
