** 3 RECIPES FOR YOU FROM HAVERHILL
BEEF **
Beef Pot Pie
Prep Time: 1 Hour
Cook Time: 1 Hour
Ready In: 2 Hours
Makes 4 Servings
Ingredients
1 (17.5 ounce) package frozen puff pastry, thawed
4 tablespoons olive oil
1 cup chopped onion
1 teaspoon minced garlic
1 cup dried porcini mushrooms
1 cup chopped carrots
1/2 cup chopped celery
1 potato, diced
1 pound beef tenderloin, cubed
1 bay leaf
1 teaspoon dried oregano
1 cup dry Marcela wine
2 tablespoons chopped fresh parsley
1 egg white
Directions
1. Preheat oven to 350 degrees F (175 degrees C).
2. In a large skillet, cook bay
leaf, oregano, onions and mushrooms in olive oil until soft.
Stir in garlic, carrots, celery, potatoes, and meat.
3. Cook and stir for 10 minutes,
or until meat starts to brown. Pour in wine. Bring to a boil,
and reduce heat to simmer. Simmer for 35 to 45 minutes.
4. Place in pie dish, sprinkle
with parsley, and cover with pastry. Brush with egg whites.
5. Bake at 350 degrees F (175
degrees C) for 45 minutes to 1 hour.

Tantalizingly Tangy Meatloaf
Prep Time: 15 Minutes
Cook Time: 30 Minutes
Ready In: 45 Minutes
Makes 4 Servings
Ingredients
1 pound ground beef
1/2 cup dry bread crumbs
1 egg
garlic powder to taste
1 dash Worcestershire sauce
1/3 cup ketchup
1/4 cup packed brown sugar
1/4 cup pineapple preserves
Directions
1. Preheat oven to 350 degrees F (175 degrees C).
2. In a large bowl, combine the ground beef, bread crumbs, egg,
garlic powder and Worcestershire sauce. Mix well, and place into
a 9x5 inch loaf pan.
3. Bake in preheated oven for
30 to 50 minutes.
4. Meanwhile, in a separate medium
bowl, stir together the ketchup, brown sugar and pineapple preserves.
Pour over the meatloaf about 20 minutes before removing from
oven.

Kielbasa and Cabbage
Prep Time: 10 Minutes
Cook Time: 30 Minutes
Ready In: 40 Minutes
Makes 4 servings
Ingredients:
6 slices bacon
1/4 cup water
2 tablespoons white sugar
1 onion, chopped
2 teaspoons minced garlic
1/4 teaspoon crushed red pepper flakes
1/4 teaspoon seasoning salt
3 teaspoons caraway seed
1 large head cabbage, cut into small wedges
1 pound kielbasa
Directions:
1. In a large skillet, fry bacon over medium high heat until
browned, turning once. Remove bacon from pan, reserving drippings,
and place on paper towels.
2. Stir water, sugar, onions, garlic, red pepper flakes, seasoned
salt, and caraway seeds into drippings. Add cabbage, and gently
stir. Cover, and cook over medium heat for 10 to 15 minutes.
3. Add kielbasa to the pan. Cook, covered, for an additional
10 to 15 minutes. Crumble bacon over top, and serve hot.

LET'S TALK TURKEY: A Month Before
Thanksgiving . . . .
Examine your Thanksgiving traditions
a little bit: Are there any dishes you cook or activities that
you do every year purely out of adherence to tradition, and not
because anyone really enjoys them? There's nothing wrong with
laying traditions by the wayside in order to make less work for
you and give you more time with your family. That's what the
holidays are really about, right? Don't feel guilty, either.
If there's a tradition that you skip this year and you decide
you miss it, you can incorporate it back into your holidays next
year.
Plan your menu and make a list
of which things would be good for guests to bring.
Extend invitations (written or
verbal, depending on how formal you like to be).
When your guests ask if they
can bring anything, say yes! Most people will actually feel more
comfortable if you let them contribute a little something to
the meal, and anything you don't have to do means a few more
minutes to help you relax and enjoy the day. Desserts, appetizers,
breads and salads are good bring-along dishes. When someone commits
to bring an item or two, write his or her name next to it and
check the item off the list. Don't let everybody bring pumpkin
pie. Ask them to bring what you really need.
Order your turkey. This is especially
important to do if you plan on using a fresh turkey instead of
a frozen one. This way, you can pick up the turkey the day before
Thanksgiving and feel confident that the right size bird will
actually be there. Count on about 1 1/4 pounds of turkey per
person, but buy a bigger one, or two smaller ones, if you want
to have leftovers for everybody's REAL favorite Thanksgiving
treat: turkey-and-cranberry-sauce sandwiches!
