** 3 RECIPES FOR YOU FROM HAVERHILL
BEEF **
Belgium Beef Stew
submitted by Cliff Nicholson* - Club Marinade Member
Prep Time: 30 to 40 Minutes
Cook Time: 2 Hours
Makes 4 to 6 Servings
Ingredients
Equal Parts stew beef and Vidalia
onions
1 lb. of stew beef or sirloin tips cut into 1/2 inch cubes
1 lb. of Vidalia onions sliced thin
1 16 oz. can of beer (Bud)
2 tablespoons of Kikkoman soy sauce
1 tablespoon of A1 Steak Sauce
2 tablespoons of Lea & Perrins Worcestershire Sauce
Salt
Pepper
1/3 cup Flour
Vegetable oil
Plastic bag
1 lb. Egg noodles
Directions
1. In a 8 quart sauce pan sauté onion slices in vegetable
oil until they are
golden. Drain out excess oil.
2. Put flour, pepper, salt and
beef in plastic bag and shake well - dusting/coating beef.
3. In a separate frying pan braise
beef over high heat.
4. Add browned beef to cooked
onions.
5. Turn heat to high under mixture
and add full can of beer.
6. Lower heat after mixture foams
(alcohol is evaporated) and add soy, steak, and Worcestershire
sauce.
7. Cover pan and simmer for 2
hours.
8. Serve on egg noodles or alone
in a bowl

Beef Wellington
Prep Time: 30 Minutes
Cook Time: 30 Minutes
Makes 6 Servings
Ingredients
2 1/2 pounds beef tenderloin
2 tablespoons butter, softened
2 tablespoons butter
1 onion, chopped
1/2 cup sliced fresh mushrooms
2 ounces liver pate
2 tablespoons butter, softened
salt and pepper to taste
1 (17.5 ounce) package frozen puff pastry, thawed
1 egg yolk, beaten
1 (10.5 ounce) can beef broth
2 tablespoons red wine
Directions
1. Preheat oven to 425 degrees F (220 degrees C). Place beef
in a small baking dish, and spread with 2 tablespoons softened
butter. Bake for 10 to 15 minutes, or until browned. Remove from
pan, and allow to cool completely. Reserve pan juices.
2. Melt 2 tablespoons butter
in a skillet over medium heat. Sauté onion and mushrooms
in butter for 5 minutes. Remove from heat, and let cool.
3. Mix together pate and 2 tablespoons
softened butter, and season with salt and pepper. Spread pate
over beef. Top with onion and mushroom mixture.
4. Roll out the puff pastry dough,
and place beef in the center. Fold up, and seal all the edges,
making sure the seams are not too thick. Place beef in a 9x13
inch baking dish, cut a few slits in the top of the dough, and
brush with egg yolk.
5. Bake at 450 degrees F (230
degrees C) for 10 minutes, then reduce heat to 425 degrees F
(220 degrees C) for 10 to 15 more minutes, or until pastry is
a rich, golden brown. Set aside, and keep warm.
6. Place all reserved juices
in a small saucepan over high heat. Stir in beef stock and red
wine; boil for 10 to 15 minutes, or until slightly reduced. Strain,
and serve with beef.

Pork Roast with Thyme
Prep Time: 20 Minutes
Cook Time: 3 Hours
Makes 6 to 8 servings
Ingredients:
5 pounds pork roast, trimmed
3 cloves garlic, sliced
1 teaspoon salt
1/2 tablespoon ground black pepper
3 bay leaves
1/2 cup cider vinegar
1 teaspoon dried thyme
Directions:
1. Preheat oven to 325 degrees F (165 degrees C).
2. With a small knife, pierce
top of roast. Force garlic slices into the cuts. Sprinkle the
roast with salt and pepper. Place bay leaves in the bottom of
the roasting pan, and set roast on top of bay leaves, fat side
up. Mix vinegar and thyme in a small bowl, and pour over the
top of the roast.
3. Bake in the preheated oven
3 hours, or until an internal temperature of 160 degrees F (70
degrees C) is reached. Using a baster or spoon, baste the drippings
over the roast frequently while it is cooking. Let the roast
rest for 10 minutes when done before slicing.

** COOKING TIP FROM HAVERHILL
BEEF **
QUESTION: When I fry my pork
chops, the breading always comes off. How can I prevent this?
ANSWER: Be sure to prepare and
cook the pork chops with care. The standard process for breading
pork chops is as follows: Take the pork chop and dip into flour.
Shake off any excess, dip it into the egg mixture and turn it
to coat evenly. Then, take the pork chop and dredge it in breadcrumbs,
press the breadcrumbs evenly over the surface and set it aside.
At every stage of this process, all excess ingredients should
be shaken off.
It is also important to make
sure that the pan is properly heated before sautéing any
breaded item. You should first heat the pan over medium-high
heat, then add the oil to the pan. Carefully tilt the pan to
coat with oil, allow the oil to heat for 30 seconds or so, and
then carefully slide in the breaded chops. Shake the pan slightly
after adding the chops. After one side of a chop has browned,
turn the chop and cook the opposite side. At this point, the
heat may be reduced slightly. The chops are done when they reach
an internal temperature of 160 degrees F (70 degrees C); if they
become too brown before the inside is done, simply reduce the
heat a little more.
