** 3 RECIPES FOR YOU FROM HAVERHILL BEEF **

Maple Glazed Pork Baby Back Ribs

Prep Time: 10 Minutes
Cook Time: 1 Hour 35 Minutes
Ready in: 3 Hours 45 Minutes
Makes 4 servings

Ingredients:
3 pounds pork baby back ribs
3/4 cup maple syrup
2 tablespoons packed brown sugar
2 tablespoons ketchup
1 tablespoon cider vinegar
1 tablespoon Worcestershire sauce
1/2 teaspoon salt
1/2 teaspoon mustard powder

Directions:
1. Place ribs in a large pot, and cover with water. Simmer covered for about 1 hour. Drain when meat is tender, and place in a shallow dish.

2. In a small saucepan, combine maple syrup, brown sugar, ketchup, vinegar, Worcestershire sauce, salt and mustard powder. Bring to a boil. Pour over ribs, and marinate in the refrigerator for about 2 hours.

3. Prepare grill for cooking with indirect heat. Remove ribs from glaze. In a small saucepan, bring marinade to a boil, and cook for several minutes.

4. Transfer ribs to grill. Cook over medium heat for about 20 minutes, or until tender and glazed; baste with marinating liquid, and turn occasionally.

Easy Cheesy Potatoes

Prep Time: 15 Minutes
Cook Time: 20 Minutes
Ready in: 35 Minutes
Makes 6 servings

Ingredients:
6 potatoes, sliced
1 onion, chopped
1/4 cup chopped green bell pepper
salt and pepper to taste
1/4 cup butter
1 cup shredded Cheddar cheese

Directions:
1. Preheat an outdoor grill for medium high heat and lightly oil grate.

2. Take a piece of aluminum foil big enough to hold all the potatoes and vegetables and spray with the vegetable cooking spray. Place the potatoes, onion and green bell pepper in the middle of the foil and season with salt and pepper to taste. Then place small pats of the butter or margarine over the vegetables.

3. Carefully seal all the edges of the foil around the vegetables to form an enclosed packet. (Note: Double wrapping will help to prevent any burning.)

4. Grill over medium high heat for 20 minutes, then flip over and grill for 10 more minutes.

5. Carefully open packet, check for tenderness with a fork. If tender, sprinkle the cheese over the vegetables and allow it to melt. Transfer to a platter and serve with your main entree.

Grilled Chocolate Bananas

Prep Time: 8 Minutes
Cook Time: 10 Minutes
Makes 4 servings

Ingredients:
4 bananas, slightly under-ripe
5 oz. milk chocolate, broken into squares
vanilla ice cream

Directions:
1. With a sharp knife make a cut in the top of each banana from end to end, cutting deep into the banana, but not going through the skin at the bottom. Open out the slit and pop in the square of chocolate, dividing them between the four bananas. Wrap the bananas in foil.

2. Place the bananas on the grid over medium coals for about 10 minutes, or until the chocolate has melted and the bananas are lightly cooked. Open the foil packages, pull back the banana skin and eat the chocolaty flesh with a teaspoon, with vanilla ice cream.

** GRILLING TIP FROM HAVERHILL BEEF **

QUESTION: You've mentioned in previous editions of you online newsletter grilling tips for gas grills, do you have any specific grilling tips for using a charcoal grill??

ANSWER: First and foremost, always use good-quality charcoal briquettes and charcoal lighter fluid. The charcoal briquettes should be fired up and ready for grilling in about 20 minutes.

Groom the Grill: Use a wire grill brush to loosen stuck-on food particles, then spray the grate with oven cleaner and rinse thoroughly, or wash with hot soapy water. When you're ready to grill, rub the grid with vegetable oil or spray with non-stick cooking spray to prevent food from sticking.

Stock up on Charcoal: You want to be ready when the grilling mood strikes so be sure to have enough charcoal on hand. Store briquettes in a cool, dry area. When charcoal absorbs moisture, it can be harder to light.

Have the Proper Tools: Tongs, especially long-handled ones, and a spatula are essential to help you turn food over without piercing, so you don't lose any delicious juices. And flame retardant mitts are nice to have. You might also want a vegetable grilling basket or a fish grilling basket. The vegetable basket keeps smaller foods from falling into the grill. The fish basket makes it easier to turn delicate fish filets.

Three-Step Grilling:

1. Arrange charcoal briquettes in a pyramid at the bottom of the grill.
2. Add approximately 2 1/2 ounces of lighter fluid to briquettes and carefully light with a match.
3. When coals are ready for cooking, spread in a single layer or bank them, set grilling grid in place and put on the food.
