** 6 RECIPES FOR YOU FROM HAVERHILL BEEF **

Broiled Santa Fe Steaks (not for the grill)

Prep Time: 10 Minutes
Cook Time: 11 Minutes
Makes 4 servings

Ingredients:

4 (6 ounce) boneless New York strip steaks
1/2 cup chunky salsa
1/2 cup black beans, drained and rinsed
2 tablespoons diced red onion
2 tablespoons chopped fresh cilantro
1 tablespoon lime juice
1 1/2 teaspoons chili powder, divided
2 teaspoons chopped fresh oregano

Directions:
1. Mix salsa, beans, onion, cilantro, lime juice and 1/2 teaspoon of the chili powder. Cover and refrigerate while preparing beef.

2. Set oven control to broil.

3. Sprinkle both sides of beef with remaining 1 teaspoon chili powder and the oregano; gently press into beef. Place beef on rack in broiler pan. Broil with tops 4 to 6 inches from heat 6 minutes; turn. Broil 2 to 5 minutes longer for medium doneness. Serve with salsa.

Steak With Parmesan-Grilled Vegetables

Prep Time: 10 Minutes
Cook Time: 20 Minutes
Makes 4 servings

Ingredients:
2 well-trimmed beef T Bone or Porterhouse steaks, cut 1 inch thick (approx. 2 pounds)
1/4 cup grated Parmesan cheese
2 tablespoons olive oil
2 tablespoons red wine vinegar
2 medium red or yellow bell peppers, each cut lengthwise into quarters
1 large red onion, cut crosswise into 1/2-inch slices

Salt Seasoning:
1 tablespoon crushed garlic
2 teaspoons dried basil leaves
1 teaspoon pepper

Directions:
1. In small bowl, combine seasoning ingredients; mix well. Remove 4 teaspoons seasoning: press into both sides of beef steaks. Add cheese, oil and vinegar to remaining seasoning, mixing well: set aside.

2. Place steaks in center of grid over medium heat: arrange vegetables around steaks.

3. Grill steaks, uncovered, 14 to 16 minutes for medium rare to medium doneness, turning occasionally.

Grill peppers 12 to 15 minutes and onion 15 to 20 minutes or until tender, turning both once. Brush vegetables with reserved cheese mixture during last 10 minutes of grilling.

4. Season steaks with salt, as desired. Trim fat from steaks; remove bones. Carve steaks crosswise into thick slices; serve with vegetables.

Zesty Grilled Corn

Prep Time: 10 Minutes
Cook Time: 20 Minutes
Makes 6 servings

Ingredients:
1/3 cup butter
2 tablespoons prepared mustard
1 teaspoon Worcestershire sauce
1/4 teaspoon lemon pepper
2 teaspoons prepared horseradish
6 ears fresh corn

Directions:
1. Preheat grill for medium heat.

2. In a small saucepan, melt butter or margarine. Stir in mustard, horseradish, Worcestershire sauce, and lemon pepper seasoning.

3. Place each ear of corn on a 13x12 inch piece of HEAVY DUTY aluminum foil. Drizzle with butter mixture. Wrap loosely, leaving space for the expansion of steam, and seal.

4. Grill over medium coals for 15 to 20 minutes, or until corn is tender. Small ears will take less time, and larger ears may take more. Carefully unwrap foil, and serve.

Grilled Zucchini

Prep Time: 20 Minutes
Cook Time: 20 Minutes
Makes 4 servings

Ingredients:
2 large zucchini
1/2 cup butter
salt and pepper to taste

Directions:
1. Preheat grill to medium high heat.

2. Clean outer skin of zucchini, and slice lengthwise into quarters. Place a pat of butter or margarine on each zucchini quarter, and season with salt and pepper to taste. Wrap all four quarters in one piece of aluminum foil.

3. Place foil wrapped zucchini on heated grill, and cook for 10 to 15 minutes on each side.

Grilled Orange Pound Cake and Strawberries

Prep Time: 20 Minutes
Cook Time: 45 to 50 Minutes
Makes 6 to 8 servings

Ingredients
1 2/3 cups granulated sugar
1 cup butter, softened
5 eggs
2 cups all-purpose flour
1/2 teaspoon salt
1/4 cup orange-flavored liqueur
1/4 cup milk
24 large strawberries, stems removed
Powdered sugar

Directions
1. Grease and flour two 8 X 3-3/4 X 2-1/2 foil loaf pans. In a large bowl with mixer at low speed, beat sugar and butter until blended. Increase speed and add eggs one at a time until light and fluffy. Add flour and salt; beat until well blended, scraping bowl occasionally. Add liqueur and milk and beat until batter is smooth and well blended. Pour batter evenly into two pans.

2. Place pans in center of cooking grate. Cook 45 to 50 minutes or until wooden pick inserted near the center comes out clean. Cool 10 minutes; remove from pans. Cool completely before serving; cut each loaf into 8 equal slices.

3. Thread 3 strawberries on 6- to 8-inch skewers. Dredge in powdered sugar. Lightly coat cooking grate with oil. Place skewers on center of cooking grate. Grill 4 minutes or until thoroughly heated, turning once halfway through grilling.

5. Slice 3 strawberries in half and serve on each two slices of pound cake.

Note: If using wooden skewers, soak in water thirty minutes before using so ends won't burn during grilling time.

Dampers

Prep Time: 10 Minutes
Cook Time: 15 Minutes
Makes 18 dampers. (Serving size = 2 dampers.)

Ingredients
3 cups self-rising flour
1 1/4 cups milk
Jam or marmalade, optional

Directions
1. In a large bowl or food processor bowl combine flour and milk. Mix to make a stiff dough, kneading and adding more flour if necessary. Form dough into 2-tablespoon balls. On a lightly floured surface, roll balls into 2 1/2-inch "sausage" shapes.

2. Lightly oil skewers; push single skewers lengthwise through the shaped dough.

3. Lightly oil cooking grates. Place skewers with dough in center of cooking grate. Grill 10 to 15 minutes, turning occasionally. Serve warm and with jam or marmalade, if desired.

** GRILLING TIP FROM HAVERHILL BEEF AND DUCANE GAS GRILLS **

QUESTION: You're mentioned Grilling Tips for cooking on a gas grill in previous editions of your newsletter, do you have any "tips" for direct cooking on a charcoal grill?

ANSWER: For direct cooking on a charcoal grill, make sure there is enough charcoal to extend in a single layer 1 to 2 inches beyond the area of the food on the grill. Pour briquettes into the grill to determine the quantity, then stack into a pyramid for lighting. For indirect cooking, food is placed over a drip pan and the briquettes are banked either to one or both sides of the pan.

NOTE: Carbon monoxide and carbon dioxide are given off during combustion, so never barbecue indoors as these odorless, toxic fumes may accumulate and cause death.
