** 3 RECIPES FOR YOU FROM HAVERHILL
BEEF AND DUCANE GAS GRILLS **
Broiled Pork Chops
Prep Time: 20 Minutes
Cook Time: 15 Minutes
Makes 6 servings
Ingredients:
3/4 cup ketchup
3/4 cup water
2 tablespoons distilled white vinegar
1 tablespoon Worcestershire sauce
2 teaspoons brown sugar
1 teaspoon salt
1/2 teaspoon paprika
1/2 teaspoon chili powder
1/8 teaspoon ground black pepper
6 (3/4 inch) thick pork chops
Directions:
1. In a medium saucepan, combine the ketchup, water, vinegar,
Worcestershire sauce, brown sugar, salt, paprika, chili powder
and pepper. Bring to a boil. Reduce heat to low, and simmer for
5 minutes, stirring occasionally. Set aside half of the sauce.
2. Preheat broiler.
3. Brush both sides of the chops
with sauce. Place chops on broiling pan rack. Broil about 4 inches
from the heat for 4 minutes on each side. Brush with more sauce.
Continue broiling, turning and basting every 3 to 4 minutes,
until juices run clear. Serve with reserved sauce.

Bacon-Glazed Grilled Onions
Prep Time: 1 Hour and 5 minutes
(includes chilling time)
Cook Time: 20 Minutes
Makes 4 servings
Ingredients:
2 large sweet onions, cut in wedges
8 thick hickory-smoked bacon slices, cut in half
2 tablespoons light brown sugar
2 tablespoons balsamic vinegar
1 tablespoon molasses
Directions:
1. Wrap onion wedges with bacon; secure with long wooden picks.
Place in a large shallow dish.
2. Combine sugar, vinegar, and molasses; drizzle over onion wedges.
Cover and chill 1 hour.
3. Remove onion wedges from marinade, reserving marinade.
4. Grill, covered with grill lid, over medium-high heat (350
degrees to 400 degrees) 20 minutes or until onion wedges are
crisp-tender, turning and basting occasionally with reserved
marinade.

Caramel-Sauced Fruit Kabobs
Prep Time: 15 Minutes
Cook Time: 7 Minutes
Makes 4 servings
Ingredients
1 8-ounce container soft-style cream cheese (plain or with pineapple)
1/2 cup caramel ice-cream topping
1/2 cup chopped toasted pecans
1 1/2 tablespoons milk (optional)
2 large bananas
2 cups fresh or canned pineapple chunks
1 large apple, cored and cut into 1 1/2-inch chunks
Directions
1. For caramel sauce, in a small saucepan combine cream cheese
and caramel ice-cream topping. Cook and stir till cream cheese
melts. Stir in pecans. If desired, add milk to make a sauce of
thinner consistency.
2. Meanwhile, bias-slice bananas
into 1 1/2-inch chunks. On 6 skewers alternately thread pineapple
chunks, apple chunks, and banana chunks, threading banana pieces
crosswise so skewers pierce sides, not center, of banana.
3. Place kabobs on the cooking
grill. Grill about 6 minutes or till heated through, turning
once. Brush with caramel sauce and grill 1 minute more. Pass
remaining sauce.

** GRILLING TIP FROM HAVERHILL
BEEF AND DUCANE GAS GRILLS **
QUESTION: Do you have any "basic"
tips that will make my BBQ a great success?
ANSWER: We have 3 to start....
(more to come later):
1. Whenever barbecuing, use tongs
to turn the meat. A fork should never be used as it will punch
holes in the meat and allow the natural juices to escape, causing
the meat to lose flavor and become chewy.
2. When grilling meats, it is
usually best to turn the meat only once. When grilling meat to
a medium or greater doneness, use the lid to assist in cooking.
This will decrease the cooking time by applying heat to all sides
of the meat at once.
3. Tomato and/or sugar based
BBQ sauces should be added only at the end of the grilling process,
since these products will burn easily and are seldom considered
an internal meat flavoring.
