TURKEY
(THANKSGIVING) LEFTOVER CASSEROLE

Makes 8 Servings
Ingredients:
3 tablespoons butter
2 tablespoons all-purpose flour
1 (5 ounce) can evaporated milk
1 cup cold water
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
1/4 teaspoon onion powder
1 cup cooked, diced turkey meat
1 cup shredded Cheddar cheese
2 cups leftover mashed potatoes
2 tablespoons butter
1 cup finely crushed herb-seasoned dry bread stuffing mix
Directions:
1. Preheat oven to 350
degrees F (175 degrees C).
2. To Make Sauce: Melt 3 tablespoons butter in a saucepan over
low heat. Add flour and stir until mixed. Slowly stir in evaporated
milk and water, then season with salt, pepper and onion powder.
Stir over low heat for 5 minutes; remove from heat.
3. Place turkey in a lightly
greased 9x13 inch baking dish. Pour sauce over turkey, then sprinkle
with Cheddar cheese. Spread mashed potatoes over cheese. Melt
2 tablespoons butter and add to stuffing mix; sprinkle stuffing
over top of casserole.
4. Bake, uncovered, in the preheated
oven for 45 minutes. |
