Ingredients:
2 pounds ground beef
1 onion, chopped
2 teaspoons minced garlic
1 (2 ounce) can black olives, sliced
1 (4 ounce) can diced green chili peppers
1 (10 ounce) can diced tomatoes with green chile peppers
1 (16 ounce) jar taco sauce
2 (16 ounce) cans refried beans
12 (8 inch) flour tortillas
9 ounces shredded Colby cheese
Directions:
1. Preheat oven to 350
degrees F (175 degrees C).
2. In a large skillet over medium
heat, saute the ground beef for 5 minutes. Add the onion and
garlic, and saute for 5 more minutes. Drain any excess fat, if
desired. Mix in the olives, green chile peppers, tomatoes with
green chile peppers, taco sauce and refried beans. Stir mixture
thoroughly, reduce
heat to low, and let simmer for 15 to 20 minutes.
3. Spread a thin layer of the
meat mixture in the bottom of a 4 quart casserole dish. Cover
with a layer of tortillas followed by more meat mixture, then
a layer of cheese. Repeat tortilla, meat, cheese pattern until
all the tortillas are used, topping off with a layer of meat
mixture and cheese.
4. Bake for 20 to 30 minutes
in the preheated oven, or until cheese is slightly brown and
bubbly.

GINGER-ORANGE
PORK STIR FRY |

12 Minutes

Makes 3 to 4 servings
Ingredients:
1 pound pork tenderloin
2 large carrots
2 stalks celery
1 tablespoon grated orange rind
1 cup orange juice
1 tablespoon cornstarch
1 tablespoon soy sauce
1/3 cup corn syrup
1/2 teaspoon ground ginger
2 teaspoons olive oil
Directions:
1. Peel and slice the
carrots and celery. Set aside.
2. Cut pork tenderloin into thin
strips. Set aside.
3. In a medium size mixing bowl,
combine the grated orange rind, orange juice, cornstarch, soy
sauce, corn syrup and ground ginger; then stir thoroughly. Set
aside.
4. In a non-stick skillet heat
one teaspoon of oil over medium heat. Add carrots and celery,
stir frying about 3 minutes. Remove the carrots and celery. Set
aside.
5. Pour the remaining oil into
skillet. Add the pork slices and stir fry for about 3 minutes.
6. Return the carrots and celery
to pan; add in orange and ginger mixture. Cook, stirring constantly,
over medium-high heat, until thickened and the internal temperature
reaches 160 degrees F.

ENGLAND STYLE BEEF STEW |

Makes 6 servings
Ingredients:
4 pounds of extra lean
stew beef
1 tablespoon salt
1 teaspoon pepper
1 teaspoon rosemary
1 teaspoon oregano
1 teaspoon thyme
1 bay leaf
6 cups water
6 small potatoes
2 yellow onions
6 medium-size carrots
Directions:
1. Scrub the potato.
(peel is optional). Set aside.
2. Peel and quarter the onions. Set aside.
3. Par and quarter the carrots. Set aside.
4. Place the extra lean stew beef in large pot or Dutch oven;
then add the salt, pepper, rosemary, oregano, thyme, bay leaf
and water.
5. Cover the pot/Dutch oven and heat on stove top on medium-high
to high until boiling; reduce heat and simmer 1 hours and 30
minutes.
6. Remove meat from broth with a slotted spoon (set aside); then
skim any fat from the top of the broth.
7. Return the meat to the pot/Dutch oven and place the potatoes,
onions and carrots around meat; simmer 1 hour longer or until
meat is fork tender.

Ingredients:
2 whole boneless skinless
chicken breasts
2 tablespoons fresh lemon juice
1 tablespoon olive oil
2 garlic cloves, crushed
1/2-3/4 teaspoon crushed red pepper
1/2-3/4 teaspoon ground black pepper
Salt (optional)
1 lemon, sliced
Directions:
1. In shallow bowl, combine
lemon juice, oil, garlic, peppers and salt.
2. Add chicken to marinade, turning
to coat both sides. Cover and marinate in refrigerator 1 hour
or longer.
3. Preheat broiler.
4. Drain chicken, reserving marinade.
5. Broil 6 to 8 inches from heat source 6 to 8 minutes on each
side until cooked through.
6. Meanwhile, in a small saucepan,
bring marinade to a boil; turn chicken 2 or 3 times during cooking
and brush with boiled marinade.
7. To serve, garnish with lemon slices.
