The Vineyards:

The Arbios Cellars Cabernet Sauvignon hails from the highest and northernmost vineyard in Sonoma County’s Alexander Valley. The elevation of the vineyard runs between 2000 to 3000 feet.

On the summit where these vines grow, there is little life with the exception of stunted grass and scrub brush. The fog that enshrouds the valley below rarely reaches these heights. The thin, impoverished soil and scant water threaten the life of the grapes every season. Yet it is this very struggle for life in the intense sunshine and impoverished soil that results in a wine with a bright balance and incredible character and depth.

In any given day there will be a 12-degree temperature difference between the valley floor and this vineyard, allowing the grapes to mature at a slower rate, resulting in darkly colored, highly flavored fruit picked at lower sugar and with lower alcohol. In direct contrast to the intense heat, the days’ cooler temperatures lead to a wine that has more of the preferred green olive flavors without excessive jammy characteristics.

 
Winemaker's Notes:
Complex and powerful, with fine balance to the layered currant, black cherry and sage nuances. Toasty oak, green olive and ripe, integrated tannins accent the full body and long finish.

Our Brewers' interpretation of a traditional German Schwarzbier
 
When one sees a beer with a darker complexion these days, more often than not it's a Porter or Stout. However looks can be deceiving. There exists a style older than both and generally less well known; the Schwarzbier, which literally translated is “Black Beer.” Unlike its dark cousins which both hail from Britain and are highly hopped ales, Schwarzbier comes from Germany, is lightly hopped and is fermented using a bottom fermenting lager yeast. Samuel Adams® Black Lager is brewed in the tradition of the latter. A medium bodied beer brewed using several different roasts of malt to give the end product a smooth body and a depth of malt character that has to be tasted to be believed.

HONEY GLAZED PORK TENDERLOIN

Prep Time: 5 Minutes
Cook Time:
about 20 to 25 Minutes
Ready In:
about 35 Minutes with standing time
Makes 2 to 4 servings

Ingredients:
1 lb. pork tenderloin
1/2 cup honey
1/4 cup soy sauce
2 tbsp brown sugar
1 teaspoon basil
1 teaspoon thyme
1 teaspoon olive oil

Directions:
1. Pre-heat oven to 400 degrees F.

2. In a small mixing bowl, combine the honey, soy sauce, basil, thyme, olive oil, and sugar; mix thoroughly.

3. Coat the pork tenderloin with mixture above. Discard any unused mixture.

4. Place the pork tenderloin in a shallow baking pan and roast in oven for 20 to 25 minutes.

5. Remove from oven and let stand for 5 minutes.

6. Slice and serve.

GARLIC-ONION PORK ROAST

Prep Time: 5 Minutes
Cook Time:
about 60 Minutes
Ready In:
about 70 Minutes including standing time.
Makes 4 servings

Ingredients:
2 lb. boneless pork roast
1 teaspoon prepared horseradish
1 teaspoon minced garlic
1 teaspoon teaspoon minced onions
1 teaspoon basil
1 teaspoon thyme

Directions:
1. Preheat oven to 350ºF.

3. In a small bowl, combine the minced garlic, minced onions, thyme, and basil. Set aside..

2. Place pork roast in a shallow baking pan. Rub horseradish over the surface of meat.

3. Sprinkle the seasoning mixture over the pork roast.

4. Place pork roast in a uncovered oven-proof cooking dish.

5. Place in oven and cook for about 1 hour, or until a meat thermometer registers 160ºF.

6. Let stand 5 minutes before serving.

ITALIAN SEASONED BROILED CHICKEN BREASTS

Prep Time: 5 Minutes
Cook Time:
about 20 Minutes
Ready In:
about 25 Minutes
Makes 2 to 4 servings

Ingredients:
2 lbs. boneless skinless chicken breasts
Basting Mixture:
1/3 cup lemon juice
3 tablespoons olive oil
2 tablespoons chopped fresh parsley
1 teaspoon Italian seasoning
1 teaspoon basil
1 teaspoon oregano
2 cloves garlic, finely chopped
1/4 teaspoon salt
1/4 teaspoon ground pepper

Directions:
1. Pre-heat broiler.

2. In medium bowl, mix together the lemon juice, oil, parsley, Italian seasoning, basil, oregano, garlic, salt and pepper until blended well into a basting mixture.

3. Broil the chicken breasts, turning occasionally and basting with basting mixture, 20 minutes or until meat thermometer inserted in center registers 170°F. Note: Do not baste during the last 5 minutes of broiling.

SEASONED BEEF BACK RUMP ROAST

Prep Time: 5 Minutes
Cook Time:
about 1 Hour and 30 Minutes
Ready In:
about 2 Hours With standing time
Makes 3 to 4 servings

Ingredients:
2 lb. back rump roast
1/2 teaspoon salt
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
1/2 teaspoon rosemary
1/2 teaspoon thyme
1/8 teaspoon pepper

Directions:
1. Pre-heat oven to 325°F.

2. Combine the salt, basil, oregano, rosemary and thyme and pepper in a small bowl then press the mixture onto back rump roast.

3. Place the back rump roast on rack in shallow roasting pan. Insert ovenproof meat thermometer so tip is centered in thickest part of beef. Do not add water or cover; then roast for about 1-1/2 hours for medium rare doneness.

5. Remove back rump roast when meat thermometer registers 135°F. Transfer to board; tent with foil. Let stand 15 to 20 minutes. (Temperature will continue to rise about 10°F to reach 145°F for medium rare.)

5. Carve the roast and serve.
