SOUTHWESTERN-STYLE
BONE IN RIB STEAKS |

WITHOUT Refrigeration Time
Makes 2 steaks
Ingredients:
2 Bone In Rib Steaks
(Cowboy Steaks)
8 cloves garlic
6 tablespoons chipotle chile powder
6 tablespoons kosher salt
6 tablespoons olive oil
1/4 teaspoon rosemary
1 tablespoon cracked black pepper
Directions:
1. In a small bowl, mix
together the garlic, chile powder, salt, olive oil, rosemary
and cracked black pepper. Mix until it forms a thick paste.
2. Rub the paste mixture over
the entire surface of each steak.
3. Wrap the steaks in plastic
wrap and refrigerate for several hours.
4. Preheat grill to high heat.
5. Place the steaks on the grill
grids and grill each steak over as high a heat as you can for
2 minutes.
6. Flip each steak and continue grilling for 2 more minutes.
7. Move each steak to a cooler
part of the grill or reduce heat to medium. Continue grilling
until done. About 4 minutes per side for medium doneness.
8. Remove the steaks from grill
when done and serve.

GRILLED
ZESTY
FANCY CHICKEN LEGS |
Prep Time: 20 Minutes
Cook Time: about 30 Minutes
Ready in: about 50 Minutes
Makes 10 chicken legs
Ingredients:
10 Fancy Chicken Legs
1/2 teaspoon rosemary
1/2 cup mayonnaise
1/2 cup fresh basil leaves
1/3 cup fresh sage leaves
1/3 cup fresh mint leaves
1/4 cup fresh parsley leaves
3 cloves garlic, crushed
1 tablespoon Tobasco sauce (Optional)
1/2 teaspoon salt
1/4 teaspoon cracked black pepper
Directions:
1. Preheat grill to medium
heat.
2. In a blender, make a herb
mixture by combining the sage, mint, parsley, basil, garlic,
hot sauce and mayonnaise. Blend until smooth.
3. Rub herb mixture over the
chicken legs getting the mixture under the skin. Sprinkle with
salt and cracked black pepper.
4. Place the chicken legs on
the grill grids and grill each chicken leg for about 20 to 25
minutes. Brush periodically with remaining herb mixture.
5. Remove the chicken legs from
the grill when done and serve.

CILANTRO
T BONE STEAKS |

Marinating
Time: about 8 Hours
Cook Time: about 10 Minutes
Ready in: about 30 Minutes
WITHOUT Marinating Time
Makes 2 steaks
Ingredients:
2 Bone T Bone Steaks
1/4 cup fresh cilantro leaves, chopped
grated zest of 1/2 lemon
2 tablespoons balsamic vinegar
1/8 teaspoon theme
2 tablespoons olive oil
2 roasted garlic cloves
1 tablespoon Dijon mustard
1 teaspoon kosher salt
1/2 teaspoon cracked black pepper
Directions:
1. In a small bowl, mix
together the roasted garlic, mustard, cilantro, lemon zest, balsamic
vinegar, thyme and olive oil. Mix until it forms a thick paste.
2. Place the steaks in a shallow
baking dish and pour mixture over the steaks. Make sure the steaks
are evenly coated.
3. Cover the shallow baking dish
(with the steaks inside) and place in the refrigerator for 8
hours.
4. Remove the steaks from the
baking dish and retain marinade. Sprinkle steaks with salt and
pepper.
5. Meanwhile, preheat grill to
medium heat.
6. Place the steaks on the grill
grids and grill each for about 5 minutes per side or until cooked
to desired doneness. Half way through grilling, brush each steak
retained marinade.
7. Remove the steaks from grill
when done and serve.

MARINATED LEMON-ORANGE
PORK CHOPS |

Marinating
Time: Overnight
Cook Time: about 12 to
16 Minutes
Ready in: about 32 Minutes
WITHOUT Marinating Time
Makes 4 pork chops
Ingredients:
4 pork boneless chops
cut about 1 1/2 inches thick
1/2 cup fresh parsley, chopped
2 cloves garlic, minced
2 tablespoons olive oil
1 tablespoon fresh rosemary, chopped
1/2 teaspoon thyme
1 tablespoon grated orange peel
1 tablespoon grated lemon peel
1 teaspoon sugar
1/2 teaspoon dry oregano
1/2 teaspoon cracked black pepper
1/2 teaspoon salt
Directions:
1. In a small bowl, mix
together the parsley, garlic, oil, rosemary, thyme orange and
lemon peel, sugar, oregano, salt and cracked black pepper.
2. Place each chop in a shallow
baking dish and spread the mixture over each chop, cover and
refrigerate overnight.
4. Preheat grill to medium heat.
5. After marinating, remove as
much of the marinade from the pork chops as you can and Grill
the each pork chop for 6 to 8 minutes on each side.
6. Remove the pork chops from
the grill when done and serve.
