CHEDDAR
CHICKEN

Makes 8 servings
Ingredients:
1 cup crushed cornflakes
cereal
3/4 cup grated Parmesan cheese
1/4 cup shredded Cheddar cheese
1/2 cup butter, melted
8 skinless, boneless chicken breast halves
Directions:
1. Preheat oven to 350
degrees F (175 degrees C).
2. In a medium bowl, mix the
cornflake crumbs, Parmesan cheese and Cheddar cheese.
3. Dip the chicken breasts in
the melted butter, and roll them in the cornflake crumb mixture.
Place chicken in a lightly greased 9x13 inch baking dish.
4. Bake in the preheated oven
for 30 to 40 minutes, until chicken is no longer pink and juices
run clear.

BROILED
PORK CHOPS TOPPED WITH PINEAPPLE
Prep Time: 5 Minutes
Cook Time: about 10 Minutes
Ready in: about 1 Hour
and 15 Minutes WITH marinating time
Makes 4 servings
Ingredients:
4 bone-in pork chops
about 3/4 inch thick
1/3 cup brown sugar
3 tablespoons reduced sodium soy sauce
1/4 teaspoon garlic powder
1/2 cup pineapple juice
4 pineapple rings
Directions:
1. In a mixing bowl,
combine the brown sugar, soy sauce, garlic powder and pineapple
juice; mix thoroughly.
2. Place the pineapple mixture
above in a resealable plastic bag and add the pork chops.
3. Marinate for about 1 hour
in the refrigerator.
4. Pre-heat the broiler.
5. Remove pork chops from marinade
and place on a broil pan. NOTE: Discard the marinade.
6. Broil the pork chops for 5
minutes on 1 side then turn the chops over and place one pineapple
ring on top of each pork chop. Broil for 5 more minutes and then
serve.

CREAMY
BAKED CHICKEN

5 Minutes
Makes 6 servings
Ingredients:
2 tablespoons olive oil
6 skinless, boneless chicken breast halves
1/2 cup teriyaki basting sauce
1/2 cup Ranch-style salad dressing
1 cup shredded Cheddar cheese
3 green onions, chopped
1/2 (3 ounce) can bacon bits
1 tablespoon chopped fresh parsley, for garnish
Directions:
1. Preheat oven to 350
degrees F (175 degrees C).
2. In a large skillet, heat oil over medium-high heat. Add chicken
breasts, and sauté 4 to 5 minutes each side, until lightly
browned.
3. Place browned chicken breasts in a 9x13 inch baking dish.
Brush with teriyaki sauce, then spoon on salad dressing. Sprinkle
with cheese, green onions and bacon bits.
4. Bake for 25 to 35 minutes,
or until chicken is no longer pink and juices run clear. Garnish
with parsley and serve.

"ALL
AMERICAN" SALISBURY STEAK
Prep Time: 10 Minutes
Cook Time: 20 Minutes
Ready in: 30 Minutes
Makes 4 servings
Ingredients:
1 lb. lean ground beef
1/3 cup finely chopped onion
1/4 cup saltine cracker crumbs
1 egg white, slightly beaten
2 Tbsp. milk
1 Tbsp. prepared horseradish
1/4 tsp. salt
1/8 tsp. pepper
1 jar (12 ounces) brown beef gravy
4 ounces mushrooms, sliced
2 Tbsp. water
Directions:
1. In medium bowl, combine
ground beef, onion, cracker crumbs, egg white, milk, horseradish,
salt and pepper. Mix lightly but thoroughly. Shape into 4 oval
1/2 inch thick patties.
2. Heat large nonstick skillet over medium heat until hot. Place
beef patties in skillet. Cook 7 to 8 minutes, turning once or
until centers are no longer pink and juices run clear. Center
of beef patty should register 160ºF on an instant read meat
thermometer. Remove from skillet and keep warm.
Mushroom Gravy:
3. In same skillet, combine gravy, mushrooms, and water. Cook
over medium heat 3 to 5 minutes or until mushrooms are tender.
4. Serve gravy over Salisbury
steak.
