PORK
CHOPS WTH SWISS CHEESE SAUCE

14 Minutes
Ready In: 20 Minutes
Makes 4 servings
Ingredients:
4 boneless center cut
pork chops about 3/4 inch thick
1 cup chicken broth
2 teaspoons olive oil
1 teaspoon Italian seasoning
3 ounces Swiss cheese
2 tablespoons dry white wine
1/2 cup sliced onion
1/2 cup quartered mushrooms
Directions:
1. Heat olive oil in
large non-stick skillet over medium-high heat.
2. Brown pork chops on one side,
about 4 minutes; then turn and cook 4 minutes more.
3. Remove pork chops from skillet,
keep warm.
4. Add chicken broth, seasoning,
onion and mushrooms to skillet.
5. Simmer 4 to 6 minutes gently,
until vegetables are tender and mixture reduced.
6. Stir in cheese to melt, stir
in wine.
7. Serve sauce over pork chops.

BROILED
SANTA FE STEAKS
Prep Time: 10 Minutes
Cook Time: 11 Minutes
Makes 4 servings
Ingredients:
4 Club Sirloin Steaks
1/2 cup chunky salsa
1/2 cup black beans, drained and rinsed
2 tablespoons diced red onion
2 tablespoons chopped fresh cilantro
1 tablespoon lime juice
1 1/2 teaspoons chili powder, divided
2 teaspoons chopped fresh oregano
Directions:
1. Mix salsa, beans,
onion, cilantro, lime juice and 1/2 teaspoon of the chili powder.
Cover and refrigerate while preparing beef.
2. Set oven control to broil.
3. Sprinkle both sides of beef
with remaining 1 teaspoon chili powder and the oregano; gently
press into beef. Place beef on rack in broiler pan. Broil with
tops 4 to 6 inches from heat 6 minutes; turn. Broil 2 to 5 minutes
longer for medium doneness. Serve with salsa.

SKILLET
BONELESS CHICKEN BREASTS
Prep Time: 10 Minutes
Cook Time: 22 to 26 Minutes
Ready in: 36 Minutes
Makes 3 to 4 servings
Ingredients:
2 lbs. boneless skinless
chicken breasts
Salt and cracked black pepper to taste
2 tablespoons butter or margarine
1 lemon, thinly sliced
1 can (15 1/4 ounces) sliced cling peaches in heavy or light
syrup, undrained
2 tablespoons chopped crystallized ginger
Directions:
1. Season chicken breasts
with salt and cracked black pepper.
2. In large, nonstick skillet
over medium heat, heat the butter or margarine.
3. Add chicken breasts and sauté
6 to 8 minutes per side or until golden brown.
4. Top chicken breasts with lemon
slices. Add peaches (with their liquid) and ginger.
5. Cover and simmer over medium
heat 10 minutes or until chicken is glazed with juices and cooked
through, basting the chicken breasts frequently with juices during
cooking.

BONELESS CHICKEN BREASTS

Ingredients:
2 lbs boneless skinless
chicken breasts
1/3 cup olive oil
1/4 cup lemon juice
1 tsp. salt
1/4 tsp. ground pepper
3 cloves garlic, finely chopped
1 tsp. thyme
1 tsp. oregano
1 tsp. rosemary
1 tsp. basil
Directions:
1. Preheat broiler.
2. In a small mixing bowl, combine
the olive oil, salt, peeper, lemon juice, garlic, thyme, oregano,
rosemary, and basil.
3. Place the chicken breasts
on a broiling pan and broil chicken, turning occasionally and
basting with the mixture above mixture for 15 minutes or until
meat thermometer inserted in center registers 170°F. Note:
Do not baste during the last 5 minutes of broiling.
