BEEF OR CHICKEN FAJITAS

Cook Time: 16 Minutes
Makes 4 servings
Ingredients:
1 1/2 lb. sirloin steak
or boned chicken breasts
2 Tbsp. oil
1/2 cup lime juice (2-3 limes)
1/2 tsp. onion salt
1/2 tsp. celery salt
1/4 tsp. garlic powder
1/2 tsp. pepper
1/4 tsp. leaf oregano
1/4 tsp. cumin
flour tortillas
lemon (optional)
Directions:
Pound the sirloin steak
to 1/4" thickness. If chicken breasts are used, flatten
slightly. Mix oil, lime juice and seasonings in zip-top plastic
bag, add meat, close bag, turn bag to coat each side thoroughly.
Refrigerate 8 hours or overnight. Wrap tortillas in foil. Remove
meat from marinade. Cook on a preheated gas grill set on high
to medium high 5 to 8 minutes on each side or to desired wellness.
Slice meat across grain in thin slices. Place on hot sizzling
platter. Squeeze lemon juice over slices. Wrap meat and any of
the following toppings in tortilla: chopped tomatoes, guacamole,
sour cream, picante salsa or taco sauce.

While meat is cooking, heat tortillas on grill warming shelf.

After you have prepared and cooked meat, Lightly brush vegetable
oil, or a flavored oil to one side of the tortilla. Place on
hot Sear Grid, with grill on high for 15-30 seconds. Serve warm.

GRILLED DELMONICO STEAKS
ORIENTAL-STYLE

Marinating Time: 1 Hour
Cook Time: 16 to 18 Minutes
Ready in: 1 Hour and
18 Minutes INCLUDING marinating time
Makes 4 servings
Ingredients:
4 Delmonico Steaks (Rib
Eye) cut about 1 inch thick
Marinade:
1 tablespoon soy sauce
2 cloves garlic, minced
1/2 cup teriyaki steak sauce
1 tablespoon chopped fresh ginger
1/4 teaspoon crushed red pepper
2 tablespoons sesame seeds
Directions:
1. In a small bowl, mix
together the soy sauce, garlic, teriyaki sauce, ginger, red pepper
and sesame seeds. Then place the steaks and the marinade in a
resealable plastic bag; turn steaks to coat. Close bag securely
and marinate in refrigerator 1 hour.
2. Preheat grill to medium heat.
3. Remove the steaks from the marinade; discard marinade; then
place each steak on grill grid and grill, uncovered, about 8
to 9 minutes per side (16 to 18 minutes total) for medium rare
to medium doneness, turning once with tongs.

NEW YORK STRIP - CHICAGO STYLE
Prep Time: 12 Minutes
Cook Time: 8 Minutes
Makes 4 servings
Ingredients:
4 Club Sirloin Steaks,
about 1 inch thick
2 tablespoons virgin olive oil
2 cloves garlic, minced
1/2 teaspoon ground cinnamon
1 teaspoon white sugar
1/4 cup apricot preserves
salt and pepper to taste
4 Club Sirloin Steaks
Directions:
1. In a glass container,
combine olive oil, cinnamon, sugar, and apricot preserves. Mix
well as the preserves tend to stick until warm.
2. Take a small steak knife and make slashes in both sides of
the steaks. Sprinkle both sides with salt and pepper.
3. Spoon the sauce over the meat making sure to work it in on
both sides. Cover with plastic and refrigerate for at least one
hour.
4. Preheat grill for high heat and cook both sides for 2 minutes
to keep the flavor locked within. Finally cook each side for
an additional 7 to 8 minutes, or to preferred doneness.

GRILLED CHICKEN PIZZA
Prep Time: 3 Minutes
Cook Time: about 17 Minutes
Ready in: 20 Minutes
Makes 3 to 4 servings
Ingredients:
1 1/2 pounds boneless
skinless chicken breasts
salt to taste
ground pepper to taste
1/2 cup honey mustard BBQ sauce
12-inch prepared pizza crust
1/3 cup minced fresh cilantro
1 1/2 cups shredded Monterey jack cheese
Directions:
1. Preheat grill to high
heat.
2. Season chicken breasts with
salt and pepper.
3. Grill chicken breast over
Direct Heat for about 7 minutes, turning once. Chicken breast
is done when a meat thermometer inserted into the thickest breast
reaches 170 F.
4. Remove chicken breasts from
grill and cut into strips.
5. Spread BBQ sauce over crust.
Top with chicken strips, cilantro and cheese.
6. Return to grill and heat over
low heat 5 to 10 minutes or until cheese melts and pizza is hot.
