** 3 RECIPES FOR YOU **

Rosemary-Garlic Top Round Roast

Prep Time: 10 Minutes
Cook Time: 55 Minutes
Ready in: 65 Minutes
Makes 4 servings

Ingredients:
2 lb. top round roast
1 tsp. dried rosemary leaves, crushed
2 cloves garlic, minced
1/2 tsp. salt
1/4 tsp. pepper
1 Tbsp. olive oil
2 medium sweet onions, cut into 1-inch thick wedges
2 large sweet potatoes, peeled and quartered

Directions:
1. Preheat oven to 425°F.

2. Combine rosemary, garlic, salt and pepper to form a paste. Spread half of the herb paste evenly over surface of top round roast.

3. Add olive oil to remaining herb paste and mix well.

4. Place vegetables in a large bowl. Pour herb-oil mixture over vegetables and stir to coat evenly.

5. Place the top round roast in oven, fat side up, in an open roasting pan. Arrange coated vegetables around roast. Do not add water or cover. Roast for 35 to 40 minutes for rare to medium. Remove the top round roast when meat thermometer registers 135°F for rare or 155°F for medium.

6. Allow the top round roast to stand, tented with aluminum foil, for 10 minutes. Roast will continue to rise in temperature to reach 140°F for rare and 160°F for medium.

7. While the top round roast is standing, increase oven temperature to 475°F. Continue cooking vegetables 10 minutes or until tender and lightly browned.

8. To Serve: Carve roast across the grain into thin slices. Serve with vegetables.

Roasted Lemon Pepper Pork Tenderloin

Prep Time: 10 Minutes
Cook Time: 12 Minutes
Ready in: 22 Minutes
Makes 4 servings

Ingredients:
1 whole pork tenderloin
2 teaspoons lemon pepper
1 tablespoon butter
1 tablespoon olive oil
1 tablespoon lemon juice
1 tablespoon Worcestershire sauce
1 teaspoon Dijon-style mustard
1 tablespoon minced parsley

Directions:
1. Cut pork tenderloin into 8 crosswise pieces

2. Place each piece of pork tenderloin between 2 pieces of plastic wrap. Flatten slightly with heel of hand. Sprinkle surfaces of pork with lemon pepper.

3. Heat butter in heavy nonstick skillet over medium heat; then add pork tenderloin slices and brown evenly, about 3 to 4 minutes on each side.

4. Remove to serving platter, keep warm.

5. Add lemon juice, Worcestershire sauce and mustard to skillet. Cook, stirring with pan juices, until heated through.

6. To Serve: Pour sauce over pork tenderloin slices, sprinkle with parsley and serve.

Broiled Ginger-Lemon Chicken Breasts

Prep Time: 5 Minutes
Cook Time: 30 Minutes
Ready In: 35 Minutes
Makes 3 to 4 servings

Ingredients:
3 lbs. boneless chicken breasts
1/2 cup lemonade juice
3 tablespoons raspberry wine vinegar
2 tablespoons finely chopped fresh ginger

Directions:
1. Preheat broiler.

2. In small bowl, combine lemon juice, vinegar and ginger until blended.

3. Broil chicken, turning occasionally and basting with ginger-lemon mixture, 30 minutes or until meat thermometer inserted in center registers 170ºF. Note: Do not baste during the last 5 minutes of broiling.

QUESTION: WHY USE A FOOD THERMOMETER?
