LEMON AND HERB CHICKEN DRUMSTICKS

Makes 3 to 4 servings
2 pounds skinless chicken
1/4 cup olive oil
1 tablespoon lemon juice
1 teaspoon lemon pepper seasoning
1 1/2 tablespoons chopped fresh marjoram
1 small shallot, minced
1. With small sharp knife,
cut 3 to 4 vertical slashes in each drumstick.
2. In large bowl, combine oil,
marjoram, shallot, lemon juice and lemon pepper.
3. Add chicken drumsticks and
turn to coat with marinade, rubbing seasonings into slashes.
4. Cover and refrigerate at least
1 hour or overnight.
5. Preheat grill to medium heat.
6. Remove chicken drumsticks
from marinade and grill for 15 to 20 minutes until cooked through,
