GRAY CORNED BEEF AND CABBAGE VII

5 pounds gray corned
1 small bay leaf
2 turnips, cut in chunks
10 carrots, trimmed, scraped, and left whole
4 small whole onions, peeled and sliced
10 medium potatoes, peeled
1 large head of cabbage, cut in wedges
1. Place the gray corned
beef brisket in a deep stock pot or kettle; cover with water.
2. Add the bay leaf and peppercorns.
Bring to a boil; skim off foam.
3. Reduce the heat, cover, and
simmer for 3 hours.
